Atole de Vainilla image

The flavor is similar to horchata with the consistency of a thin cream of wheat. It is warm, smooth, rich, creamy, flavorful, and satisfying to enjoy for breakfast or an after-dinner drink. When my son took a drink he said, "It tastes like Mexico." I couldn't have said it better myself. It has all the aromatic and comforting ingredients of Mexico that is so soothing.

2 1/2 cups water
1 cinnamon stick
4 ounces piloncillo
1/2 cup masa harina
2 cups whole milk
1 vanilla Bean ( split in half lengthwise and seeds scraped)
ground cinnamon (optional)

Steps:

  • In a large saucepan bring water to a boil with the cinnamon stick and piloncillo. Remove from the heat, cover, and let the cinnamon stick steep and sugar dissolve for about 30 minutes.
  • Remove the cinnamon stick, return water to low heat, and slowly add the masa harina, whisking until combined. Add milk and vanilla bean with seeds.
  • Heat over medium heat just until boiling.
  • Reduce heat and simmer, uncovered, whisking occasionally, about 20 minutes.
  • Sprinkle with cinnamon and serve immediately.

3 Ounces Piloncillo
1/2 Cup Water
3 Cups Almond Milk
1/4 Cup Masa Harina
1 Mexican Cinnamon Stick
1 Tablespoon Pure Mexican Vanilla

Steps:

  • In a medium sauce pan, heat the pilconcillo and water over low heat. Cook until the piloncillo has completely melted, stirring occasionally.
  • Whisk the almond milk and masa harina into the melted piloncillo. Whisk until the masa is fully incorporated and there are no lumps. Add the cinnamon stick cook for 20 minutes, stirring often.
  • Add the Mexican Vanilla. Turn off the heat.
  • Serve immediately in mugs.

Atole de vainilla is a traditional masa-based hot beverage, popular during the holidays, and made with milk, piloncillo, vanilla bean and Mexican cinnamon.

Number Of Ingredients 6

3-4 ounces piloncillo
¼ cup water
3 cups 2% milk
½ cup Maseca
1 Mexican vanilla bean, cut in half and both pieces split lengthwise* (see notes below for substitution)
1 Mexican cinnamon stick

Steps:

  • In a saucepan over low heat, combine piloncillo and water and stir occasionally until piloncillo is completely melted.
  • Whisk in milk, Maseca and vanilla bean until Maseca is dissolved and incorporated with the piloncillo mixture.
  • Submerge a Mexican cinnamon stick. Reduce heat to a simmer and continue stirring frequently for 30-35 minutes.
  • Remove from heat and pour through a fine mesh sieve and serve in mugs.

1 cinnamon stick
3 ½ tablespoons white sugar
1 ½ tablespoons pure vanilla extract
⅓ cup water
4 tablespoons cornstarch

Steps:

  • Combine milk and cinnamon stick in a saucepan over medium heat. Bring to a boil, stirring constantly to prevent milk from burning on the bottom. Add sugar and stir for 2 minutes. Add vanilla extract and stir for another 2 minutes.
  • Mix water and cornstarch in a small bowl until no lumps remain. Pour into the boiling milk and stir until thick, about 8 minutes.

½ cup masa (corn flour)
5 cups water
1 tablespoon ground cinnamon
5 tablespoons piloncillo, brown sugar cones
1 tablespoon vanilla extract

Steps:

  • Place the masa, water, cinnamon and piloncillo in a blender. Blend until smooth, about 3 minutes.
  • Pour the contents of the blender into a sauce pan and bring the mixture to boil over medium heat, stirring constantly. When the mixture reaches a boil, turn the heat to low and continue to whisk for 5 minutes.
  • Remove the pan from the heat and stir in the vanilla. Pour into mugs and serve hot.

1/2 cup fresh masa harina flour (corn dough) or 1/2 cup masa corn flour, masa harina,mixed with
1/4 cup hot water, to blend
5 cups water
3 -4 tablespoons piloncillo cones, chopped (or 1/4 cup brown sugar plus 2 teaspoons molasses)
1 cinnamon sticks, finely slivered (canella) or 1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup fresh strawberries or 1 cup pineapple chunk (optional)

Steps:

  • Place the water and the masa into the jar of a blender and blend until smooth.
  • Transfer to a medium sized saucepan.
  • Add vanilla extract and cinnamon into the saucepan.
  • Stir the mixture until it begins to thicken.
  • Add the piloncillo or (or sugar, molasses combination) and continue to stir vigorously until the sugar is dissolved.
  • Remove the mixture from the heat.
  • At this point you could add pureed fruit such as strawberries or pineapple.
  • Stir the fruit into the mixture and return it to the stove and heat over medium heat until the mixture is warmed.
  • Serve hot, in mugs.
