Ingredients

½ (14.1-oz.) package refrigerated piecrusts
1 tablespoon powdered sugar
4 large eggs
1 ½ cups firmly packed light brown sugar
½ cup butter, melted and cooled to room temperature
½ cup granulated sugar
½ cup chopped pecans
2 tablespoons all-purpose flour
2 tablespoons milk
1 ½ teaspoons bourbon (vanilla extract may be substituted)
1 ½ cups pecan halves

Steps:

Preheat oven to 325°F. Fit piecrust into a 10-inch cast-iron skillet; sprinkle piecrust with powdered sugar.
Whisk eggs in a large bowl until foamy; whisk in brown sugar and next 6 ingredients. Pour mixture into piecrust, and top with pecan halves.
Bake at 325°F for 30 minutes; reduce oven temperature to 300°F, and bake 30 more minutes. Turn oven off, and let pie stand in oven, with door closed, 3 hours.

cup sugar
1 1⁄2 cups corn syrup (I use 1/2 dark and 1/2 light)
4 eggs
1⁄4 cup butter
1 1⁄2 teaspoons vanilla
1 1⁄2 cups pecans, coarsely broken
1 unbaked deep dish pie shell

Steps:

In saucepan boil sugar and corn syrup together for 2 to 3 minutes; set aside to cool slightly. In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly. At this point I like to strain the mixture to make sure it's smooth and lump free. Stir in butter, vanilla, and pecans and pour into crust. Bake in a 350°F oven for about 45 to 60 minutes or until set.
