TOMATO SALSA - UNCLE BILL'S VERSION



Tomato Salsa - Uncle Bill's Version image

A delightful Tomato Salsa recipe that can be adjusted to be spicier if desired. I have been making this for over 30 years.

Yield 4 pint jars

Number Of Ingredients 13

3 lbs roma tomatoes (other type of tomatoes would be okay as well)
4 garlic cloves, minced
2 medium jalapeno peppers, seeded and chopped small
1 large red onion, finely chopped
1 large green pepper, seeded and chopped into small chunks
1 large sweet red pepper, seeded and chopped into small chunks
1/2 cup finely chopped fresh cilantro
1/2 cup finely chopped fresh basil
1/4 cup finely chopped fresh parsley
1/4 cup wine vinegar
1 tablespoon limes or 1 tablespoon lemon juice
1/2 teaspoon ground cumin
3 tablespoons liquid honey

Steps:

  • In a large pot bring water to a rolling boil.
  • Drop in tomatoes and scald for 2 minutes.
  • Drain and immediately cover with cold water and some ice cubes and let sit for a few minutes.
  • Remove skins and discard.
  • Remove stem core and discard.
  • Cut tomatoes into small chunks.
  • Using a large cooking pot, add chopped tomatoes, Jalapeno peppers, red onion, green pepper, sweet red pepper, cilantro, basil, parsley, wine vinegar, lemon juice, ground cumin and liquid honey.
  • Bring mixture to a boil.
  • On medium-high heat, cook for about 5 minutes stirring frequently.
  • Adjust spices and Jalapeno peppers to taste.
  • Prepare 4- pint size canning jars by washing in soap and water, then rinsing in hot water.
  • Preheat oven to 300 degrees F.
  • Place washed jars upside down on oven rack and heat for 15 minutes.
  • Prepare snap lids by boiling them in water for about 5 minutes.
  • Fill jars with salsa mixture to within 1/4 inch of top of jars (for head space.) Remove any air bubbles by sliding a rubber spatula between glass and salsa; re-adjust head space to 1/4 inch.
  • Wipe jar rims very clean to remove any stickiness.
  • Place snap lids, then screw bands just until finger tight.
  • Prepare a canner and bring water to boil.
  • Place jars in canner rack and immerse in water.
  • Process for 10 minutes.
  • Remove jars from canner and place on a towel, then cover with another towel until cooled.
  • Jars are sealed when lids"pop" and are concave (turned downward).
  • Wipe jars clean and lable.
  • Store jars in a cool, dry place.

A fruity salsa, great with pita chips. One guy I know was gonna pay me to make this for him. I like to let mine sit for at least an hour and give it a stir every so often. However, if you want to eat it right away.

2 mangoes - peeled, seeded, and chopped
1 large tomato, diced
1 small onion, minced
1 small jalapeno pepper, seeded and minced
1 tablespoon minced fresh cilantro
1 lime, juiced
salt and ground black pepper to taste

Steps:

  • Stir the mango, tomato, onion, jalapeno pepper, cilantro, and lime juice together in a bowl; season with salt and pepper.

1/4 cup finely chopped red onion
2 tablespoons lime juice
2 tablespoons rice vinegar

  • Combine all ingredients in a medium bowl.
  • Let stand for 15 minutes; stir before serving; enjoy.

BLACKENED CHICKEN QUESADILLAS & CRANBERRY MANGO SALSA



Blackened Chicken Quesadillas & Cranberry Mango Salsa image

Not just a 'summer' dish, the oranges, reds, and greens in this make for a gorgeous harvest feast as well. The salsa is a wonderful blend of tart, sweet, and spicy and goes well against the cool flavor of the cheese (I often omit the chicken and make vegetarian quesadillas). 1/2 cup creole blackening seasoning
4 boneless skinless chicken breasts
2 tablespoons peanut oil
1 large onion, thinly sliced
3 tablespoons vegetable oil
1 teaspoon chopped fresh basil
2 tablespoons honey
1 cup chicken broth
8 (8 inch) flour tortillas
1 1/2 cups monterey jack pepper cheese
1 cup cranberries
2 tablespoons light brown sugar
1/4 cup granulated sugar
1/4 cup water
1 medium mango
2 kiwi fruits
1/4 cup red onion, diced
2 tablespoons cilantro, chopped
1 1/2 tablespoons fresh lime juice
1 serrano chili, seeded and diced
1 garlic clove, minced
1 1/2 teaspoons honey
salt and pepper

Steps:

  • For the Salsa (yields about 3 cups):.
  • Toss the cranberries with the brown sugar then chop coarsley in a food processor, transfer to a heat resistant bowl and set aside.
  • In a saucepan, combine granulated sugar and water over medium-high heat; bring to a boil while stirring; once boiling, stop stirring and allow to cook for 3 minutes, then immediately pour syrup over cranberries and allow to cool completely.
  • Meanwhile, peel and dice kiwi and mango.
  • Combine mango, kiwi, red onion,cilantro, lime juice, serrano chile, garlic and honey; mix well and add to cranberry mixture.
  • Season with salt and pepper and refrigerate for at least 2 hours to allow flavors to blend.
  • For the Quesadillas:.
  • Place blackening seasoning in a shallow dish.
  • Between two sheets of plastic wrap, flatten chicken breasts with a meat mallet or heavy skillet to a flat even thickness; rub each breast with a few drops of oil and dredge in the blackening seasoning to coat.
  • Heat 1 tbl of peanut oil in a heavy skillet over high heat; add chicken and cook until blackened on both sides and cooked through- set aside to rest.
  • In a separate skillet, heat vegetable oil over medium heat, add onions and saute until just translucent; turn heat to low and cook for 15 minutes until onions are soft but not browned.
  • Stir in basil and honey and cook for 5 more minutes.
  • Add chicken broth and turn up heat high enough for broth to simmer; cook until almost all of the broth has evaporated; remove from heat and set aside.
  • Slice chicken into small pieces and mix with onions.
  • To assemble: Sprinkle 1/4 cup cheese on one tortilla, then spoon on 1/4 of the chicken mixture; sprinkle with 2 tbl more cheese and place another tortilla on top.
  • Lightly brush a skillet with peanut oil and heat over medium high heat; slide the quesadilla into the skillet and heat until cheese begins to melt; brush upper tortilla with peanut oil and flip quesadilla in skillet.
  • When cheese is melted, remove from skillet, cut into quarters and serve with cranberry-mango salsa.
  • Note: quesadillas (top brushed with oil) can also be cooked on a parchment lined sheet pan in a 350 degree oven until cheese melts.

This recipe was found in a magazine and it turned out to be very tasty and easy to make. Wish to share it with you.

Number Of Ingredients 10

1 (12 ounce) package fresh cranberries
1 large granny smith apple, peeled, cored and cut into chunks
1/2 large sweet red pepper, seeded and cut into chunks
1/2 medium red onion, cut into chunks
3/4 cup granulated sugar
1/3 cup apple juice
3 tablespoons chopped fresh cilantro
2 tablespoons chopped pickled jalapeno peppers or 2 tablespoons use 1 medium fresh jalapenos
1 teaspoon grated lime zest
1 (14 ounce) package spinach tortillas

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
  • Add this mixture to the cranberry mixture and mix well to blend.
  • Spoon into jars with a cover and refrigerate.
  • To prepare Tortillas:.
  • Heat oven to 375°F.
  • Using a tree-shaped cookie cutter, cut 6 trees from each tortilla, or cut the tortillas into wedges.
  • Place cut tortilla on an ungreased cookie sheets.
  • Bake in preheated 375 F oven for 8 minutes or until crisp.
  • You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.
  • Store tortilla chips in a plastic bag.
  • Serve cranberry salsa with tortilla chips.
  • Frozen cranberries can also be used to make the salsa.

This is a very tasty mango salsa that is great served over fish. My favorite is any fish blackened with Cajun seasoning and then topped with this salsa. Also great for dipping chips.
