BAKER'S ANGEL FLAKE COCONUT MACAROONS



Baker's Angel Flake Coconut Macaroons image

This is from the back of the Angel Flake bag of coconut. Soft, chewy, toothsome, with just a hint of almond flavor. Yummmmm. Let them 'ripen' a few hours before serving to let them soften. The edges can be a bit crispy straight from the oven.

Number Of Ingredients 6

1 (14 ounce) package sweetened coconut (5 1/3 cups)
2/3 cup sugar
6 tablespoons flour
1/4 teaspoon salt
4 egg whites
1 teaspoon almond extract

Steps:

  • Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites (not whipped) and almond extract until well blended. Drop by tablespoonful onto greased and floured cookie sheets.
  • Bake 325F for 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets to wire racks. Cool completely.

I love coconut but also love how the corn flakes make these chewy. I altered a recipe I have by adding the corn flakes and cutting down on the coconut. These are very easy and fast to make.

1 (300 ml) can sweetened condensed milk
1 teaspoon vanilla
2 1/2 cups coconut
2 cups corn flakes

Steps:

  • Combine Condensed Milk and Vanilla.
  • Add Coconut and Corn Flakes.
  • Mix until well combined.
  • Drop by teaspoons on a cookie sheet lined with parchment paper. Or spray a cookie sheet with cooking spray.
  • Bake at 325 for 10 minutes or until golden.

This is in reply to a request for cookies with Corn Flakes. Since I have a recipe book from Kellogg's, I'd like to shar these with you.

Number Of Ingredients 11

4 egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla
1 1/3 cups sugar
1 cup chopped pecans
1 cup shredded coconut
3 cups corn flakes
vegatable cooking spray
1/2 cup crushed peppermint candy, with
pecans, and
coconut

Steps:

  • Beat egg whites until foamy, then beat in cream of tartar and vanilla.
  • Gradually add sugar, beating till stiff and glossy.
  • Fold in pecans, coconut and cereal.
  • Spray baking sheets with vegetable spray and drop by rounded tablespoon measures of batter onto baking sheets.
  • Bake at 325 degF for about 15 minutes or till lightly browned.
  • Remove immdediately from sheet and cool on wire racks.

This is another recipe I used to make every Christmas as a kid, all by myself. Sticky, sweet, messy...I had so much fun making and eating them. Originally from the "Jones Farm Country Kitchen" community cookbook.

Number Of Ingredients 6

2 large eggs, beaten
1 cup granulated sugar
1 cup dried coconut, shredded (I used the sweetened kind in bags)
1 teaspoon vanilla
3 cups corn flakes cereal
candied cherry, halved (optional)

Steps:

  • Mix everything except the cherries together.
  • Drop in small mounds onto parchment lined baking sheets (using 2 spoons to help smoosh the mixture into a mound - be patient here, it will look somewhat too loose, but as it cooks it melts together.
  • Garnish with a cherry half if desired, pretty down gently.
  • Bake about 8-10 minutes, in a preheated 350°F oven.
  • Allow to cool a bit on the baking sheets before carefully removing to racks to cool - but not too long or they will harden up too much.
