BASIC 3-LAYER CAKE



Basic 3-Layer Cake image

This three-egg and three-layer cake are made with butter, eggs, and other cake ingredients. This is an easy cake to make up from scratch.

1 cup butter (softened)
2 cups sugar
3 large eggs (separated)
1 teaspoon vanilla
1 cup milk
3 cups/13 1/2 ounces all-purpose flour
3/4 teaspoon baking soda (scant)
1 1/4 teaspoons cream of tartar
1/2 teaspoon salt

Steps:

  • Gather the ingredients.
  • Grease and flour three 8-inch cake pans. Alternatively, grease and flour a 9 x 13 x 2-inch baking pan.
  • Preheat the oven to 375 F for layers or 350 F for the rectangular pan.
  • In a mixing bowl with an electric mixer, combine the butter and sugar; beat until light and fluffy.
  • Add the egg yolks and blend well.
  • Measure the milk into a cup and add the vanilla extract; set aside.
  • Combine the dry ingredients in a separate bowl and stir to blend.
  • Add about one-third of the flour mixture to the creamed mixture along with half of the milk and vanilla mixture; blend well. Repeat with another one-third of the flour mixture and the remaining milk and vanilla; blend well. Add the remaining flour mixture and beat until smooth.
  • In a separate bowl with clean beaters, beat the egg whites until stiff; fold into the batter , mixing just until blended.
  • Bake the layers at 375 F for 20 to 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean . Bake the rectangular cake at 350 F for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

2 1/4 cups all-purpose flour (do not sift the flour)
1 1/2 cups granulated sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
4 teaspoons vegetable oil
1/2 cup butter, softened
1 tablespoon vanilla extract
3 large eggs

Steps:

  • Preheat oven to 350°.
  • Cut wax paper to fit the bottom of (3) 9 x 1 1/2-inch round pans. Spray the pans with cooking spray, place the wax paper in the pans and spray the paper.
  • In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well.
  • Measure the 1-1/4 cups of milk in a 2 cup measuring cup then add enough vegetable oil to bring the liquid up to 1-1/3 cups. (I did the math and figured out it is 1-1/4 cups milk + 4 teaspoons vegetable oil).
  • Add the milk/vegetable oil mixture, butter and vanilla to the flour mixture and beat with an electric mixer on medium to medium-high speed for 2 minutes, scraping sides of bowl as needed.
  • Add the eggs and continue beating an additional 2 minutes. Pour batter into prepared pans.
  • Bake at 350° for 20 to 25 minutes or until a wooden pick inserted near center of cake comes out clean, or until cake springs back when touched lightly in the center.
  • Cool cakes on wire racks for 15 minutes; remove from pans and cool completely.
  • Frost as desired.

Rich, moist and delicious. I use this recipe as the basis of almost every cake I make, adjusting flavourings for variety. Examples are: adding lemon or orange zest; replacing some of the flour with cocoa powder for chocolate cake; almond flavouring; adding chopped apple or peaches. Endless possibilities. A real reliable standby.

2 1/2 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 cups sugar
3/4 cup margarine, room temperature
1 teaspoon vanilla
3 large eggs, at room temperature
3/4 cup buttermilk, at room temperature

Steps:

  • Preheat oven to 350°F.
  • Sift flour, baking powder, baking soda and set aside.
  • Cream together the sugar and margarine.
  • Beat in vanilla and eggs, one at a time.
  • Alternately add dry ingredients and buttermilk until well blended.
  • Spread batter evenly into greased and floured cake pans.
  • Bake for 27 to 35 minutes on middle rack, until toothpick inserted in centre comes out clean.
  • Cool 10 minutes in pans before removing to wire rack.
  • Cool completely and frost or fill as desired.
  • Cake can also be baked in a 13 x 9 inch or Bundt pan.
  • For orange marble cake: reserve 1 cup of the batter add to it 2 to 3 squares melted and cooled semi-sweet chocolate, add orange zest to remaining yellow batter and swirl chocolate batter through orange batter for marbled effect.

1/2 cup granulated sugar
1 teaspoon baking powder
1/3 teaspoon salt (add just a pinch)
1/3 cup and 2 . 5 tablespoons milk
1 1/2 teaspoons vegetable oil
8 teaspoons butter, softened (1/3 stick)
1/3 tablespoon vanilla extract
1 large egg

Steps:

  • Preheat oven to 350°.
  • Cut wax paper to fit the bottom of a 9 x 1 1/2-inch round pan. Spray the pan with cooking spray, place the wax paper in the pan and spray the paper.
  • In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well.
  • Combine milk with vegetable oil and stir thoroughly.
