West African Peanut Stew image

Peanuts are the star of this hearty plant-based stew that's inspired by the cuisine of West Africa. Featuring superfoods like sweet potatoes, collard greens, and millet, it uses the humble peanut two different ways: peanut butter to thicken the brothy base, and roasted and chopped, to provide a crunchy contrast to the tender vegetables.

2 tablespoons extra-virgin olive oil
1 cup chopped red onion
1 tablespoon minced garlic
1 tablespoon minced ginger (from a 1-inch piece)
1/4 teaspoon red pepper flakes, plus more for serving
Kosher salt and freshly ground pepper
2 tablespoons tomato paste
1 bunch collard greens (12 ounces), stems removed, cut into 2-inch pieces (4 cups)
1 sweet potato, peeled and cut into 1-inch pieces
1/2 cup creamy natural peanut butter
4 cups low-sodium chicken or vegetable broth
Steamed millet, chopped roasted peanuts, cilantro, and lime wedges, for serving

Steps:

  • Heat oil in a large saucepan over medium-high until shimmering. Add onion, garlic, ginger, and pepper flakes; season with salt and pepper. Cook, stirring occasionally, until golden in places, about 5 minutes. Stir in tomato paste; cook 1 minute more.
  • Add collard greens, sweet potato, peanut butter, and broth. Bring to a boil, stirring until peanut butter dissolves into broth. Reduce heat to low, and simmer, stirring occasionally, until sweet potatoes are tender but still hold their shape, 18 to 20 minutes. Serve stew topped with millet, peanuts, cilantro, and lime wedges.

6 ounces lamb stew meat, cut into 1/2-inch pieces
6 ounces pork stew meat, cut into 1/2-inch pieces
2 tablespoons peanut oil
1 large onion, cut into wedges
1 large green pepper, cut into wedges
1 cup chopped tomatoes
4 cups cubed eggplant
2 cups water
1/2 cup fresh or frozen sliced okra
1/2 cup creamy peanut butter
1 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice
Chopped green onions, optional

Steps:

  • In a large skillet, brown meat in oil; set aside. In a food processor, combine the onion, green pepper and tomatoes; cover and process until blended. , In a large saucepan, combine the eggplant, water, okra and onion mixture. Bring to a boil. Reduce heat; cook, uncovered, until vegetables are tender, 7-9 minutes., Stir in the peanut butter, salt, pepper and browned meat. Cook, uncovered, until heated through, about 10 minutes. Serve with rice. If desired, top with chopped green onions.Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

This keeps up to 4 days, chilled in an airtight container.

1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt, divided
¼ teaspoon ground black pepper
3 tablespoons peanut oil, divided
2 cups diced onion
2 cloves garlic, minced
2 tablespoons minced fresh ginger root
1 teaspoon ground coriander
½ teaspoon ground cumin
¼ teaspoon ground turmeric
¼ teaspoon ground cinnamon
4 cups low-sodium chicken broth
1 (14.5 ounce) can no-salt-added diced tomatoes with juices
1 large sweet potato, peeled and cut into 1-inch cubes
½ bunch collard greens, tough ribs removed and leaves chopped
2 red bell peppers, seeded and chopped
⅓ cup natural peanut butter
6 tablespoons chopped peanuts

Steps:

  • Season chicken with 1/2 teaspoon salt and the black pepper. Heat 1 tablespoon oil in a large pot over medium-high heat. Add half the chicken; cook until no longer pink, 2 to 3 minutes, then transfer to a plate. Repeat with 1 tablespoon oil and remaining chicken.
  • Add remaining 1 tablespoon oil to the pot and reduce heat to medium. Add onion; cook until softened, about 3 minutes. Add garlic, ginger, coriander, cumin, turmeric, cinnamon, and remaining 1/2 teaspoon salt; cook, stirring, 30 seconds.
  • Stir in broth, tomatoes, sweet potato, collard greens, and red bell peppers; bring to a boil. Reduce heat to medium-low; simmer, partially covered, until vegetables are tender, about 20 minutes.
  • Return chicken and accumulated juices to the pot. Return to a boil, then stir in peanut butter; simmer until incorporated and chicken is cooked through, 3 to 5 minutes. Garnish with chopped peanuts.

In response to recipe requests - Ground nuts (like peanuts) are an important part of the diet. They are roasted, pounded to a pulp and then made into a sauce which may be used with meat or vegetables. Here is a recipe using peanut butter, which you might like to try.

450 g stewing beef
6 tablespoons smooth peanut butter
2 medium onions (chopped)
450 g ripe tomatoes (chopped) or 400 g tomatoes (chopped)
3 fresh chili peppers
450 g carrots (or a mixture of carrots, turnips and courgettes)
1 pinch mixed herbs
2 1/2 cm piece fresh ginger, grated or 1 teaspoon dry ginger powder
salt and black pepper

Steps:

  • Remove seed from chillies and chop them finely.
  • Mix them with the peanut butter, ginger, herbs, vegetables and tomatoes.
  • Place meat in a saucepan with a tight fitting lid and add the vegetable mixture and some seasoning.
  • Put on the lid and cook very gently for about one and a half hours or until the meat is tender.
  • Don't worry about the lack of liquid because the meat and vegetables will make enough.

3 tablespoons cooking oil
2 lbs boneless skinless chicken, cut in cubes
2 tablespoons flour
1/2 teaspoon ground nutmeg
1 tablespoon chili powder
2 onions, chopped fine
2 cloves garlic, minced
1 (6 ounce) can tomato paste
1/2 cup water
1 dash hot pepper sauce (optional)
1 teaspoon salt
1 cup boiling water
1 cup reduced-fat peanut butter
4 cups assorted chopped vegetables, such as zucchini,mushrooms and peppers

Steps:

  • In a large heavy pot, heat oil.
  • Roll chicken in flour and brown in oil with nutmeg and chili powder.
  • When chicken is browned, add onions and garlic, tomato paste, water, hot sauce (if using) and salt.
  • Stir well.
  • Mix the boiling water with the peanut butter and add to pot.
  • Simmer covered over low heat until tender, about 45-60 minutes.
  • About halfway through cooking, add chopped vegetables.
  • If stew is too watery, mix 2-3 tbsp of corn startch with cold water to make a thickening paste and add to stew.
  • Serve over a bed of rice.

2 tablespoons peanut oil or 2 tablespoons vegetable oil
1/2 teaspoon cayenne
1 teaspoon pressed garlic clove
2 cups chopped cabbage
3 cups cubed sweet potatoes (1-inch cubes)
3 cups tomato juice
1 cup apple juice or 1 cup apricot juice
1 teaspoon salt
1 teaspoon grated peeled fresh gingerroot
1 tablespoon chopped fresh cilantro (optional)
2 chopped tomatoes
1 1/2-2 cups chopped okra
1/2 cup peanut butter

Steps:

  • Saute onions in the oil for about 10 minutes.
  • Stir in the cayenne and garlic and saute for a couple more minutes.
  • Add the cabbage and sweet potatoes and saute, covered, for a few minutes.
  • Mix in the juices, salt, ginger, cilantro and tomatoes.
  • Cover and simmer for about 15 minutes, until the sweet potatoes are tender.
  • Add the okra and simmer for 5 minutes more.
  • Stir in the peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve.
  • Add more juice or water if the stew is too thick.
