1 pound lean ground beef
1 yellow or white onion (finely chopped)
2-15 ounce cans kidney beans (rinsed and drained)
15 ounce can black beans (rinsed and drained)
3-14 ounce cans diced tomatoes
16-18 ounce bottle of barbecue sauce
1 teaspoon chili powder (feel free to add more if you like things on the spicier side)
1 tablespoon molasses
1 tablespoon Worcestershire sauce
1 tablespoon cumin
1 tablespoon brown sugar

Steps:

  • In a large pot or Dutch oven, brown the ground meat. Drain.
  • Return the cooked meat to the pot.
  • Add the rest of the ingredients. Stir to combine.
  • Cover, and simmer over medium-low heat, stirring as needed, for about 1-2 hours.

This 30-minute weekenight dinner is a vegetarian chili that tastes like it's been slow simmered for hours. The hint of Chinese five-spice powder is a nice spice surprise. If you serve it over spaghetti, it turns into Cincinnati-style chili. (1 serving of Cincinnati-style chili equals 3/4 cup chili + 2 ounce (dry) cooked whole-wheat spaghetti.)

1 tablespoon vegetable oil
1 small jalapeno, minced (with some seeds)
1 small or 1/2 large red onion, finely diced
2 teaspoons red wine vinegar
1 large clove garlic, minced
1 1/4 cups low-sodium vegetable or chicken broth
1 cup canned crushed roasted tomatoes
1 1/2 tablespoons chili powder
1/4 teaspoon Chinese five-spice powder or ground cinnamon, optional
Two 15-ounce cans beans (such as kidney and black), rinsed and drained
2 tablespoons chopped fresh cilantro
2 cups cooked brown rice
1/2 cup finely shredded extra-sharp Cheddar (2 ounces)

Steps:

  • Heat the oil in a large saucepan over medium-high heat; add the jalapenos, onions and vinegar and cook, stirring, until softened, about 5 minutes. Add the garlic and cook about 30 seconds.
  • Stir in the broth, tomatoes, chili powder and five-spice powder if using, and increase the heat to high. Bring to a full boil and cook for 1 minute. Stir in the beans and return to a full boil. Reduce the heat to medium and simmer until just slightly thickened but still soupy, about 5 minutes. Stir in the cilantro.
  • Fill each bowl with about 1/2 cup of rice. Ladle the chili on top, sprinkle with the Cheddar and serve.

1 medium onion, chopped
3 cloves garlic, minced
1 lb ground beef
1 tbsp olive oil
1 15 oz can chili beans, do not drain
1 15 oz can black beans, drained and rinsed
1 28 oz can crushed tomatoes
1 1/2 tsp salt
1/2 tsp black pepper
2 to 3 tbsp chili powder, depending on how spicy you want it to be
1 tbsp ground cumin
1/8 tsp cayenne pepper, more if you want it spicier
1 tsp dried oregano
sour cream, shredded cheese, chopped cilantro, sliced avocado - optional for garnish

Steps:

  • Heat oil in large skillet over medium high heat.
  • Once hot, add ground beef and start breaking it up with a spoon.
  • After the beef is broken up and is starting to brown, add the onion and garlic.
  • Continue cooking until beef is cooked through and the onion is soft and translucent.
  • Stir in both cans of beans and the crushed tomatoes.
  • Add salt, pepper and the spices, stirring until well combined.
  • Bring mixture to a bubble.
  • Reduce heat to low, cover and simmer for at least 15 minutes to allow flavors to develop.
  • Serve with desired toppings.

2 tablespoons olive oil (or cooking spray)
1 cup chopped onion
2 teaspoons minced garlic
1 small jalapeno, minced (seeds removed, if desired, I've left it out before)
2 cups bell peppers, cubed (red or green)
1 cup celery, chopped
1/2 teaspoon salt
2 teaspoons ground cumin
1 teaspoon dried oregano
3/4 cup chopped carrot
28 ounces can diced tomatoes with juice
1/2 cup barbecue sauce
1/2 cup water
15 1/2 ounces can black beans, with liquid
15 1/2 ounces can red kidney beans, with liquid

Steps:

  • Heat oil in a skillet over medium-high heat. Add onions, garlic, jalepeno, peppers, celery, salt, cumin, and oregano. Cook, stirring often until vegetables soften (8-10 min).
  • Transfer satueed vegetables to a slow cooker, add carrots, tomatoes and liquid, barbecue sauce, water, and beans, and liquid.
  • Cover; set on low; cook 8 to 10 hours.

Now I have 2 favorite chili recipes (after making a few changes of my own). This particular recipe makes a large batch and it freezes GREAT.

10 cups water
1 tablespoon olive or vegetable oil

1 cup hickory barbecue sauce
1 chipotle chili in adobo sauce, finely chopped, plus 1 teaspoon adobo sauce (from 11-ounce can)
2 cups frozen veggie crumbles
1 medium green or red bell pepper, chopped (1 cup)
1/4 cup chopped fresh cilantro

Steps:

  • Heat beans and 10 cups water to boiling in 4-quart Dutch oven; reduce heat. Simmer uncovered 10 minutes; remove from heat. Cover and let stand 1 hour.
  • Heat oil in 10-inch skillet over medium-high heat. Cook onion and garlic in oil about 8 minutes, stirring occasionally, until onion is tender and light golden brown.
  • Drain beans. Place beans in 3 1/2- to 4-quart slow cooker. Add 4 cups water and onion mixture.
  • Cover and cook on low heat setting 10 to 12 hours or until beans are tender. Stir in tomatoes, barbecue sauce, chili, adobo sauce and frozen veggie crumbles. Cover and cook on high heat setting 30 minutes. Serve chili sprinkled with bell pepper and cilantro.

1 cup chopped onion

Steps:

  • For the Cumin-Cilantro Sour Cream:
  • In a small bowl, combine the sour cream, cilantro, and cumin. Refrigerate until ready to serve.
  • For the chili:
  • Set a large deep skillet over medium-high heat. Add the beef, salt, and pepper to taste. Cook, using a wooden spoon to break the meat into pieces as it browns, 4 to 5 minutes. Drain all the liquid from the pan. Add the tomato paste, onion, bell peppers, and garlic, and cook, stirring, until the vegetables have softened, 3 to 4 minutes. Transfer to a slow cooker. Add 1 cup water, the black beans, chickpeas, tomatoes, tomato sauce, cumin, chili powder, paprika, garlic powder, and bay leaves.
  • Cover and cook on high for 5 hours or on low for 8 to 10 hours.
  • Discard the bay leaves. To serve, ladle the chili into 8 serving bowls. Top each with 1 tablespoon of the sour cream mixture, 1 tablespoon of the cheddar, the red onion, and tortilla chips, if desired.

  • Add beer to pan; cook 5 minutes or until liquid is reduced by half. Add tomatoes; crush well with side of a spoon or tongs. Add beef. Stir in stock mixture, remaining 1 can kidney beans, and remaining 1 can small red beans. Cover loosely to allow steam to escape; bake at 325° for 90 minutes.
