For a stick-to-your-ribs main dish that's deliciously different, give this pie a try! The Italian sausage goes so well with mashed potatoes, and both get a new twist served in a crust and cut into wedges. My family is always glad to see me preparing this dish. -Cindy Gage, Blair, Nebraska

1 unbaked pastry shell (9 inches)
1 pound bulk Italian sausage
1 cup cream-style cottage cheese
1 large egg
1-1/2 cups warm mashed potatoes (without added milk and butter)
1/4 cup sour cream
1/2 teaspoon dried oregano
1/2 to 3/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons butter, melted
1 cup shredded cheddar cheese
Cherry tomatoes, quartered
Minced fresh parsley, optional

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 7 minutes. Remove from the oven and remove foil; set aside. Reduce heat to 350°. , In a large skillet, cook sausage until no longer pink; drain well on paper towels. Place cottage cheese and egg in a blender; cover and process until smooth. Transfer to a large bowl; stir in potatoes, sour cream, oregano, salt and pepper., Place sausage in pastry shell; top with potato mixture. Drizzle with butter. Bake for 50-60 minutes or until a thermometer reads 160°. Sprinkle with cheese; let stand until melted. Garnish with tomatoes tossed with minced parsley if desired.

Another wonderful meatless meal that is high in protein and fiber and low in fat. Cannellini beans are often referred to as white kidney beans and are often used in minestrone. This recipe came from "Forks Over Knives: The Cookbook" via the Indianapolis Star.

1 1/2 c coarse cornmeal
3/4 tsp salt, plus more for seasoning
1 medium yellow onion, diced
1 medium carrot, peeled, diced
2 celery stalks, diced
4 clove garlic, peeled, minced
1 tsp minced rosemary
1 tsp minced thyme
2 large yukon gold potatoes, diced
2 c vegetable stock
2 can(s) (15 oz.) cannellini beans, drained and rinsed
freshly ground black pepper

Steps:

  • 1. Bring 5 cups of water to a boil in a large saucepan. Whisk in cornmeal, a little at a time. Cook, stirring often, until this polenta mixture is thick and creamy, about 30 minutes. Season with salt and keep warm.
  • 2. Place onion, carrot and celery in saucepan and saute over medium heat 5 minutes. Add water 1 to 2 tablespoons at a time to keep vegetables from sticking. Stir in garlic, rosemary and thyme; cook for 3 minutes. Add potatoes and vegetable stock and cook about 15 minutes. Add beans, season with salt and pepper and cook for 5 minutes longer.
  • 3. Spoon beans into an 8-inch square baking dish and spread polenta over the top. Bake at 350 degrees for 20 minutes.
  • 4. NOTE: Polenta takes the place of mashed potatoes in this pie.

2 lb russet potatoes
1 Tbsp + 2 tsp kosher salt, divided
1 Tbsp extra virgin olive oil
1 lb lean ground chicken
½ medium onion, grated
3 clove garlic, pressed
1 tsp fresh-cracked black pepper, divided
1 (14.5-oz) can white beans, rinsed and drained
2 cup frozen corn (or vegetable of your choice)
4 Tbsp unsalted butter, divided
2 Tbsp flour
1 cup chicken broth
1 tsp poultry seasoning
2 Tbsp sour cream
2 Tbsp cream cheese
¼ cup milk
8-oz shredded Italian blend cheese
2 Tbsp chopped flat leaf Italian parsley

Steps:

  • Peel and cut potatoes into ½" pieces, place in a saucepan with enough water to cover potatoes and 1 tablespoon kosher salt. Cover and place on high heat and allow to boil. While potatoes are cooking, place a large skillet over medium high heat with olive oil in it. Add chicken and stir. Grate onion and add to pan. Stir to combine. Using a garlic press, mince garlic and add to pan. Add 1 teaspoon salt and ½ teaspoon pepper, stir to combine. Preheat oven to broil. Meanwhile, in a small saucepan over medium heat whisk 2 Tbsp butter and flour and allow to cook for 3 minutes. Add chicken broth and poultry seasoning. Whisk to combine and cook for 2-3 minutes until thickened. Add corn and beans to chicken mixture, pour gravy on top. Stir to combine. Drain potatoes, add 2 Tbsp butter, cream cheese, sour cream, ¼ cup milk, 1 teaspoon kosher salt and ½ teaspoon fresh ground pepper to pan and pour potatoes on top. Mash and combine with potato masher. Add ½ of cheese, stir to combine. Spread mashed potatoes over top of the chicken mixture. Spread evenly to edges of pan. Sprinkle remaining cheese over top. Place pan in oven under broiler until cheese is golden brown and bubbly. 1-3 minutes. Keep a close eye on cheese. Remove from oven, sprinkle with parsley, serve and enjoy.

2 cups marinara sauce

1/2 teaspoon salt
1/4 teaspoon Italian seasoning
1/2 cup 2% milk
1/4 cup butter, melted

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the marinara sauce, salt and pepper; cook and stir for 8-10 minutes or until thickened. Spoon into four 8-oz. ramekins or custard cups; set aside., In a small bowl, combine the flour, cheese, baking powder, salt and Italian seasoning. Stir in milk and butter just until moistened. Spoon dough over meat mixture; place ramekins on a baking sheet., Bake at 450° for 12-15 minutes or until golden brown. Freeze option: Cover and freeze unbaked pies. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 400°. Place pies on a baking sheet; cover edges loosely with foil. Bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 lb boneless beef sirloin, trimmed of fat, cut into 1-inch cubes
1 cup sliced onion (about 1 medium)
2 medium carrots, sliced (1 cup)
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1 1/2 cups sliced fresh mushrooms
1 jar (14 oz) tomato pasta sauce (any variety) (1 1/2 cups)
1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potatoes
Water, milk and butter called for on potato mix pouch
2 tablespoons shredded fresh Parmesan cheese

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole or 11x7-inch glass baking dish with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add beef, onion and carrots to skillet; sprinkle with seasoned salt and pepper. Cook 3 to 5 minutes, stirring frequently, until beef is brown.
  • Stir in mushrooms and pasta sauce. Heat to boiling. Cook over medium heat 5 minutes, stirring occasionally. Spread in casserole.
  • Make potatoes as directed on pouch using water, milk and butter. Spoon into 8 mounds around edge of hot beef mixture. Sprinkle cheese over all.
  • Bake uncovered 25 to 30 minutes or until bubbly and potatoes are light golden brown.

Pate chinois is a French-Canadian specialty and this has a different twist - it uses ground veal and hot italian sausages. It is sooooo good! Got this recipe in a French magazine - will try to translate as best as I can!

8 big potatoes, diced
salt and pepper
1/4 cup olive oil or 1/4 cup butter
1 small onion, diced
3 hot Italian sausages
1 lb ground veal
2 tablespoons canola oil
1 red bell pepper
1 green bell pepper
1 orange bell pepper
garlic
salt and pepper
oregano
1/4 cup Italian breadcrumbs

Steps:

  • Preheat oven 375°F.
  • Cook the potatoes in salted water until they are cooked. Drain them. Mash them with the oil or butter and season them with salt and pepper (or use your favorite mashed potatoes recipe!). Put aside.
  • Take the sausages out of their casing and mix with the ground veal.
  • Heat the oil in a non-stick frying pan. Add the peppers and the onions and cook for about 5 minutes, until softened. Add the garlic and cook for 1 minute. Add salt and pepper and oregano. Put in a bowl.
  • Put back the frying pan on the stove and cook the veal and sausage meat until cooked. Drain the fat out of the pan.
  • Put the meat at the bottom of a rectangular pan sprayed with Pam. Put the bell peppers and onion on top of the meat and, lastly, the mashed potatoes. Sprinkle with the Italian breadcrumbs.
  • Put in oven for 40 minutes.

While not traditional, I really like this version of Shepherd's Pie. Ketchup or HP sauce are excellent condiments for this recipe. You can substitute pretty much any veggie you like for the green pepper - peas and corn are my personal favorites - 1 cup would probably be enough.

1 1/2 lbs ground beef
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon italian seasoning
1/2 teaspoon crushed red pepper flakes
1 (28 ounce) can plum tomatoes
1/3 cup parmesan cheese
1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
4 large potatoes, quartered
1 tablespoon butter
1/2 cup milk
1 pinch nutmeg
1 egg
1 large green pepper
salt & pepper
1 teaspoon sugar

Steps:

  • Brown ground beef in large frying pan, drain grease.
  • Add 1 Tbsp oil to pan, return beef to pan, add onion, garlic, Italian seasoning and dried red pepper flakes.
  • Fry until onion is softened.
  • Stir in drained tomatoes, Worcestershire sauce, 1 tsp each salt and sugar and 1/2 tsp pepper.
  • Break up tomatoes with a fork.
  • Cook over medium heat, stirring often for about 15 minutes, or until most of liquid has evaporated.
  • Meanwhile cook potatoes in boiling water until tender, about 15 minutes.
  • Drain potatoes.
  • Add butter, milk, nutmeg, salt and pepper.
  • Beat potatoes on medium speed of electric mixer until light and fluffy.
  • Then beat in egg.
  • Fold in 1/4 cup Parmesan.
  • Meanwhile seed, core green pepper and cut into 1/4 inch pieces.
  • Stir into cooked meat mixture.
  • Turn into a 9" square baking dish.
  • Spread potato mixture evenly on top of meat mixture.
  • Sprinkle with remaining Parmesan.
  • Bake right away, or cover tightly and refrigerate for up to 2 days before baking.
  • Bake in the center of preheated 350 F oven for 40 to 50 minutes or until potatoes are golden tipped.
  • If casserole has been refrigerated it may require an extra 15 minutes baking time.
  • Let stand for 10 minutes before cutting.

2 (14 1/2 ounce) cans del monte stewed tomatoes, broken up with juice
1 teaspoon fennel seed
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon sugar
1 cup pizza sauce, I used 1 packet Boboli
1 tablespoon dried parsley flakes
2 tablespoons flour
2 teaspoons dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
1 (4 ounce) can sliced mushrooms, drained
1 (14 1/2 ounce) can green beans, drained
6 cups mashed potatoes (homemade or instant)
1/4 cup parmesan cheese
1 egg, beaten

Steps:

  • In deep frying pan, sauté ground beef and onion until done. Drain grease.
  • Add rest of ingredients except last 4 (mashed potatoes, parmesan cheese, egg and paprika.).
  • *Best to fold in the green beans lastly, too, so they don't get all broken up.
  • Mix well, and bring to a boil.
  • Cook and fold/stir for 2-3 minutes.(Be careful not to wreck the green beans.).
  • Pour into lightly greased baking dish, shallow or deep, it doesn't really matter so long as it all fits.
  • Stir beaten egg and parmesan cheese into prepared mashed potatoes. *Make sure potatoes are cool enough, though, so when you mix in the egg you don't end up with scrambled egg pieces, and stir in quickly.
  • Top pie/casserole with mashed potato concoction.
  • You can spread it on, or do dollops, or even pipe it on with a pastry bag and tip to make it pretty.
  • Sprinkle tops of potatoes with a little paprika for color.
  • Bake, uncovered, in 350 oven for for about 40 minutes until bubbly and potatoes are just lightly browned on the tops.
