Turkey, Mushroom and Bacon Puff Pastry Pockets image

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper or a silpat mat. 2. In a medium skillet, cook the bacon until crispy. Remove to paper towels to drain, then crumble. Remove all of the bacon fat from the skillet except for 1 tablespoon. 3. Add the mushrooms and onions to the skillet and saute over medium heat until softened. Stir in cream, Dijon and salt/pepper. Cook until reduced slightly and thickened. Set aside to cool a bit. 4. Assemble the pastries. Cut each sheet of Puff Pastry into 4 equal squares. Divide the mushroom mixture between 4 squares. Top with turkey, bacon and Swiss cheese. Roll out each of the remaining Puff Pastry squares so they're a little bit larger (or just use your fingers to press and stretch them). Place the second piece over the top of each with filling. Use a fork to seal the edges to form "pockets." Brush each square with egg wash and use a knife to poke a few slits in the top for steam to escape while baking. Bake for 20 minutes, or until golden brown. Serve immediately.

MINI CREAMY MUSHROOM PIES

25g butter , plus extra for greasing
1 tsp olive oil
1 small onion , finely sliced
1 garlic clove , crushed
350g mixed mushroom , sliced
small handful parsley , finely chopped
100ml single cream
375g pack ready-rolled shortcrust pastry
a little plain flour , for dusting
1 egg , beaten
1 tsp caraway seed

Steps:

  • Heat the butter and oil in a frying pan. Add the onion and fry until soft. Stir in the garlic and mushrooms, season and cook for 5 mins until the mushrooms are soft. Stir in the parsley and cream. Remove from the heat and allow to cool.
  • Heat oven to 200C/180C fan/gas 6. Grease a 6-hole muffin tin with butter, then line each hole with a long thin strip of baking parchment. Roll out the pastry on a lightly floured surface and stamp out 6 x 10 cm circles. Press a circle into each hole to line. Roll out the remaining pastry (you may need to re-roll trimmings) and stamp out 6 x 8cm circles.
  • Divide the mushroom mix between the pies. Brush the pastry edges with a little egg, top each with a pastry lid and carefully press the pastry edges together to seal.
  • Brush with the remaining egg and sprinkle with caraway seeds. Bake for 25-30 mins until golden. Allow to cool in the tin slightly before serving, or cool on a wire rack and keep in airtight containers for up to 1 day. Reheat before serving.

It doesn't get much more comforting than the classic British pie - add streaky bacon and thyme and serve in individually portioned dishes

1 tbsp butter
1 large onion , finely chopped
4 rashers streaky bacon , chopped
140g chestnut mushrooms , sliced
250g turkey mince (thigh is best)
25g plain flour
200ml chicken stock
a few thyme sprigs , leaves picked
½ x 375g sheet ready-rolled puff pastry
1 egg yolk , beaten
wilted spring greens , to serve

Steps:

  • Heat the butter in a large pan. Add the onion and cook for 8-10 mins until softened. Add the bacon and mushrooms, and cook until both are browned. Add the turkey mince, breaking up with a wooden spoon, and cook for another 5 mins until browned.
  • Add the flour, stir for 1 min or so, then pour in the chicken stock and add the thyme. Mix well and cook over a medium heat for 1-2 mins until it boils and thickens slightly. Season to taste and set aside to cool for 10-15 mins.
  • Heat oven to 220C/200C fan/gas 7. Once cooled, divide the turkey mixture between 2 ramekins or mini pie dishes. Unroll the pastry and cut out 2 squares to sit on top. Press the edges down the side of the dishes and glaze with the egg yolk. Bake in the oven for 30 mins until golden and cooked through. Serve with wilted spring greens.

Top these mushroom, bacon, kale and tarragon pies with butter bean smash to make a healthy main meal that's big on flavour but light on calories

3 tbsp rapeseed oil
2 red onions , thinly sliced
500g mushrooms , thickly sliced
70g smoked streaky bacon , sliced into thin strips
2 tbsp plain flour
500ml low-salt vegetable stock
250g kale , roughly sliced
3 tsp wholegrain mustard
2 tbsp reduced-fat crème fraîche
1 tbsp finely chopped tarragon
1 lemon , zested and juiced
2 x 400g cans butter beans , drained and rinsed

Steps:

  • Heat 2 tbsp of the oil in a saucepan or large flameproof casserole dish. Fry the onions for 10 mins until soft, then add the mushrooms and bacon and fry for another 5 mins until golden. Stir in the flour and cook for 2 mins more. Gradually pour in the stock, then bring to the boil and bubble for 2 mins. Add the kale and cook for another 5 mins, then stir in the mustard, crème fraîche, half the tarragon and the lemon juice. Spoon the mushroom mixture into four small baking dishes.
  • Heat the oven to 180C/160C fan/gas 4. Put the butter beans in a food processor with the remaining oil and tarragon and the lemon zest. Blitz until chunky, adding 2-3 tbsp water to loosen if needed.
  • Spoon the butter bean mixture over the filling, smoothing with the back of a spoon. Bake for 20-25 mins until golden. Leave to cool slightly, then serve.
