1 package (16 ounces) whole wheat spiral pasta
1 pound extra-lean ground turkey
1 medium sweet orange pepper, finely chopped
1 cup sliced fresh mushrooms
1 small onion, finely chopped
3 garlic cloves, minced
1 can (14-1/2 ounces) Italian stewed tomatoes, undrained
1 jar (14 ounces) spaghetti sauce
1/4 teaspoon pepper
1 can (2-1/4 ounces) sliced ripe olives, drained
2 tablespoons grated Parmesan cheese

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large nonstick skillet, cook the turkey, orange pepper, mushrooms, onion and garlic until turkey is no longer pink; drain. Add the tomatoes, spaghetti sauce and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until slightly thickened, stirring occasionally., Drain pasta; add to skillet. Stir in olives; heat through. Sprinkle with cheese just before serving.

1/2 cup light garden vegetable cream cheese (recommended: Philadelphia)
4 wrap-size flour tortillas
2 cups lettuce mix
1 (8-ounce) package turkey breast slices
1/2 cup shredded carrots

Steps:

  • Spread 2 teaspoons veggie cream cheese over entire surface of each tortilla. (Use green spinach and red sun-dried tomato tortillas to add color). Top cream cheese with 1/4 cup lettuce. Place 2 slices of turkey on 1/2 on each tortilla. Sprinkle 1 tablespoon shredded carrots on top of the turkey slices.
  • Roll the tortillas starting at the edge where you placed the turkey.
  • Use a serrated knife to cut roll into 1-inch slices. Arrange on a plate to serve.

Garlic cheese spread, smoked turkey and spinach fill these soft cracker bread sandwich rolls.

1 soft cracker bread, 15 inches in diameter (from 17-ounce package)
1 package (4 ounces) herb-and-garlic spreadable cheese
8 ounces thinly sliced smoked turkey
1 large tomato, thinly sliced
6 ounces thinly sliced Swiss cheese
18 leaves fresh spinach

Steps:

  • Cover bread evenly with spreadable cheese.
  • Layer turkey, tomato, Swiss cheese and spinach on bread, leaving about 4 inches at one side covered with spreadable cheese only.
  • Beginning at the side layered with turkey, roll up bread. Trim each end with serrated knife to make even; cut bread roll into 1-inch slices.

3/4 lb deli turkey, thin sliced
6 (8 inch) flour tortillas
1 (8 ounce) package cream cheese
6 tablespoons pecans, chopped fine
1 (16 ounce) can whole berry cranberry sauce
1/4 cup celery, chopped
2 green onions, sliced thin

Steps:

  • Place turkey on tortillas to within 1/4 inch of edge.
  • Spread cream cheese over turkey; sprinkle with pecans.
  • Spread each with 2 TBS cranberry sauce.
  • Roll up jelly roll style; wrap tightly in plastic wrap. Refrigerate until firm, about 1 hour.
  • When ready to serve, cut each roll into 6 pieces.
  • In a small bowl combine celery, onions and remaining cranberry sauce. Serve with spirals.

4 turkey breast steaks
4 teaspoons tomato puree
1/2 ounce large fresh basil leaf
1 clove garlic, crushed
1 tablespoon milk
2 tablespoons wholemeal flour
salt and pepper

Steps:

  • Place turkey steaks on a board and flatten with a rolling pin.
  • Spread each steak with tomato puree, then top with a few leaves of basil, a little crushed garlic and salt and pepper.
  • Roll up firmly around the filling and secure with a cocktail pick.
  • Brush with milk and sprinkle with flour to coat lightly.
  • Place the spirals on a foil lined grill pan. Cook under a moderate heat grill for 15-20 minutes, turning them until thoroughly cooked.
  • Serve hot, sliced.
