My mother found this recipe about 20 years ago. A great find! This is a great recipe for leftover turkey or chicken. You can even use tuna or salmon. My kids LOVE it, especially paired with leftover mashed potato cakes.

¼ cup water
1 ½ teaspoons baking powder
2 cups shredded cooked turkey
½ cup all-purpose flour
1 egg
1 pinch salt and ground black pepper to taste
1 tablespoon vegetable oil, or as needed

Steps:

  • Stir water and baking powder together in a bowl (mixture should foam). Mix turkey, flour, egg, salt, and black pepper into water and baking powder. Form mixture into bite-size nuggets.
  • Heat vegetable oil in a skillet over medium heat. Fry the nuggets in the hot vegetable oil until golden brown, 5 to 8 minutes per side.

This is something I made for my kids tonight. I was looking for a recipe along these lines and didn't find one, so I made it up! This was easy, and much healthier than the regular "nugget" fare that's out there. They are easy to make and everybody loved them! You could make them nugget shape, but I made them about the shape of small breakfast sausages.

Number Of Ingredients 9

1 lb ground turkey
2 eggs
1 teaspoon Worcestershire sauce
1/4-1/3 cup minced onion
1 tablespoon chopped fresh parsley
1 -2 teaspoon salt
1/4 teaspoon ground black pepper
1 -1 1/2 cup panko breadcrumbs or 1 -1 1/2 cup dry breadcrumbs
1/4 cup vegetable oil (for stove top frying)

Steps:

  • Mix the turkey with one of the eggs, the Worcestershire sauce, onion, parsley, salt, pepper and 3/4 cup of the panko breadcrumbs.
  • Beat the egg in a shallow bowl or dish. Set aside.
  • Put the remainder of the panko in a shallow dish. Set aside.
  • Form the turkey mixture into your desired shape. You don't want them too big or thick; you want them to be cooked inside before the outside gets too brown.
  • Dip the turkey nuggets into the egg, then roll in the panko crumbs.
  • Fry over medium heat in the oil. Use just as much as you think you need, they don't need to swim in it! As they brown turn them, so they get nice and crispy all over.
  • Cool slightly on a paper towel before serving to your kids -- with ketchup!

  • Place egg in a small bowl and beat lightly. In another small bowl, stir together the panko, Parmesan cheese and Italian seasoning. Dip each nugget into egg and then panko mixture, rolling to coat evenly. Place on prepared rack. Lightly coat each nugget with cooking spray. Bake for 20 minutes or until turkey is golden and crispy (165 degrees F).
  • Meanwhile, place Asian cabbage mix in a medium bowl; set aside. In a small bowl, whisk together 1/4 cup of the Greek yogurt, 1 teaspoon of the honey, 1 teaspoon of the mustard and the salt. Combine yogurt mixture with the cabbage. Stir in the sliced almonds and the dried cranberries.
  • Prepare dipping sauce: In a small bowl, combine remaining 1/4 cup Greek yogurt, remaining 1 teaspoon honey and remaining 3/4 teaspoon mustard. Serve turkey nuggets with slaw and dipping sauce.

  • Mix the flour with the spice mix; I use Cavender's mostly. Mix together the eggs, buttermilk and mustard. Mash the Saltines. I do this by putting them in a heavy freezer bag and crushing them with a rolling pin.
  • Dredge about 1/4 of the turkey chunks in the flour, then the egg wash, then put them in the freezer bag with the crushed Saltines and shake well to coat. Before you take them out, press the crushed Saltines into the meat. Set the chunks on a baking sheet, and do the rest of the turkey, 1/4 of it at a time.
  • In an ideal world, you would rest the breaded turkey nuggets in the fridge for 1 hour. Do this if you can, because it will make the coating stick to the turkey better. If you are rushed for time, you can skip this.
