I haven't tried this one yet. It's a weigh watchers recipe. The pic makes it look good plus I am trying to find new recipes to use turkey in.

3/4 lb lean ground turkey
1 medium onion, chopped
1 teaspoon chili powder
3 tablespoons all-purpose flour
1 cup skim milk
4 ounces canned jalapeno peppers, drained and chopped
1/2 teaspoon ground cumin
3 large burrito-size wheat flour tortillas
3 cups tomatoes, chopped
10 tablespoons shredded low-fat cheddar cheese

Steps:

  • Preheat oven to 350°F Coat a large skillet with cooking spray. Heat skillet over medium heat. Place turkey, onion and chili powder in skillet and cook until turkey is browned, stirring occasionally to break up meat, about 8 minutes. Remove turkey mixture from skillet and set aside.
  • Place skillet over medium-high heat and add flour. Gradually add milk, stirring with a whisk until blended. Bring to a boil and then reduce heat to medium; simmer until thickened, about 2 minutes.
  • Remove skillet from heat; stir in turkey mixture, jalapenos and cumin.
  • Wrap tortillas in damp paper towels and microwave on HIGH until softened, about 15 seconds. Place 1 tortilla in bottom of a 9-inch pie plate. Spread 1/3 of turkey mixture over tortilla. Spoon 1 cup of tomato on top and sprinkle with 4 tablespoons (1/4 cup) of cheese. Repeat layers with remaining ingredients ending up with 2 tablespoons of cheese.
  • Cover pie plate with aluminum foil and cook until cheese melts and filling is warmed through, about 15 minutes. Let stand, covered, 2 minutes before cutting into 6 wedges.

This is so easy a beginner can make it. I use a round casserole and use more tortillas then the recipe calls for. I cut them in half and just fit them together. I use 6 or 7. Just use your judgement. Enjoy!

1 cup green bell pepper, chopped
1 tablespoon olive oil
1 lb lean ground turkey
2 teaspoons cumin
1 (14 1/2 ounce) can tomatoes with onion and garlic, diced
1/2 cup enchilada sauce
1 (4 ounce) can chopped green chilies
1 cup frozen corn
3/4 cup pitted black olives, sliced
4 (8 inch) corn tortillas or 4 (8 inch) flour tortillas
1 (8 ounce) bag four cheese Mexican blend cheese, shredded
sour cream
shredded lettuce
additional sliced black olives

Steps:

  • Have ready a round 3-qt. glass baking dish(casserole).
  • Heat oil in a large, deep heavy-bottomed skillet over medium heat. Add bell pepper and saute' 3-4 minutes. Add turkey and cook, breaking up chunks with a wooden spoon, 5 minutes or until meat is no longer pink. Sprinkle with cumin; add tomatoes, enchilada sauce and chopped green chiles.
  • Stir until simmering, then simmer 10 minutes to develop flavors. Remove from heat and stir in corn and olives.
  • Heat oven to 350°F.
  • To assemble: Line bottom of baking dish with 2 tortillas. Top with half the filling and about 1/3 the cheese. Top with another tortilla, the remaining filling, half the remaining cheese, then the remaining tortilla.
  • Cover with lid or foil and bake 30 minutes. Uncover, sprinkle with the remaining cheese and bake 10 minutes longer until cheese melts and filling bubbles. Let stand 5-10 minutes before cutting in wedges. Serve with Accompaniments.

1/2 lb ground turkey
2 teaspoons oil
1 (14 ounce) can diced tomatoes and green chilies
1 (1 1/4 ounce) package taco seasoning mix
1/2 cup green onion, sliced
1 (2 1/4 ounce) can olives, sliced
6 corn tortillas
1 1/2 cups cheddar cheese, shredded

Steps:

  • Brown meat in oil, stir in tomatoes and taco seasoning mix.
  • Reduce heat, cover and cook 10 minutes, stirring occasionally. Stir in green onions and olives.
  • Place 1 tortilla in bottom of 2 quart baking dish, cover with about 1/2 cup meat sauce. Top with about 1/4 cup cheese. Repeat, making a 6 layer stack.
  • Pour 1/2 cup water down edge, into baking dish. Cover with foil and baking at 425 for 30 minutes.
  • Cut into 4 wedges, garnish with sour cream if desired.

  • Melt the butter in a medium saucepan over medium heat. Add the flour and stir the two together into a paste. Pour the milk into the saucepan and whisk until the sauce comes to a boil. Once at the boil, let the sauce simmer for 5 minutes until it starts to thicken and coats the back of a spoon. Remove the saucepan from the heat and add the Pepper Jack cheese. Stir until the cheese has melted and the sauce is smooth.
  • Pre-heat a large sauté pan over medium-high heat. Add the olive oil and sauté the onion until it starts to brown – about 8 minutes. Add the peppers and sauté until they start to soften – another 5 minutes. Add the chili powder, cumin, salt and water and sauté for another minute. Stir in the shredded cooked turkey and pinto beans. Heat through for another minute and then remove the pan from the heat.
  • Spread some sauce on the bottom of a round 2-quart casserole dish. Place a tortilla on top of the sauce. Spread a third of the turkey mixture on the tortilla and top with a third of the grated Cheddar cheese. Repeat the layers of tortilla, turkey and cheese two more times. Top with the last tortilla and pour the remaining sauce over the top, allowing it drip down the sides into the casserole dish. Place the casserole onto a baking sheet and transfer it to the oven.
