This recipe always brings back memories of my mom's homemade sun-dried tomatoes in the summer. I've prepared the burgers with ground beef and ground turkey. Either way, they're fast and taste great! -Sammy Staab, Pensacola, Florida

1 large red onion
1 cup (4 ounces) crumbled feta cheese, divided
2/3 cup chopped oil-packed sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground turkey
6 ciabatta rolls, split

Steps:

  • Cut onion in half. Finely chop one half and thinly slice the remaining half. Combine 1/2 cup feta, sun-dried tomatoes, chopped onion, salt and pepper in a large bowl. Crumble turkey over mixture and mix well. Shape into six patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., Meanwhile, in a small nonstick skillet coated with cooking spray, saute sliced onion until tender. Serve burgers on buns with onion and remaining feta.

Turkey burgers made with the Greek flavors of garlic, oregano, spinach, sun-dried tomatoes and feta cheese are a healthful option for burger lovers everywhere.

1 pound ground turkey
½ cup fresh spinach leaves (, chopped)
⅓ cup sun-dried tomatoes (, chopped)
1/4 cup red onion (, minced)
¼ cup feta cheese (, crumbled)
2 cloves garlic (, pressed or minced)
1 egg (, whisked)
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 soft whole-wheat hamburger buns
Bibb lettuce leaves
Sliced red onion
½ cucumber (, halved with skin and seeds removed)
3/4 cup low-fat plain Greek yogurt
2 cloves garlic (, pressed or minced)
1 tablespoon red wine vinegar
1 tablespoon fresh dill (, minced)
Pinch of kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil and dried oregano and kosher salt and freshly ground black pepper then pour over the turkey and mix with your hands to combine.
  • Divide the burger mixture into 4 portions and mold into patties. Place on a cutting board or plate dividing the patties with parchment paper and refrigerated for 30 minutes up to overnight. You could also individually freeze the patties at this point for up to 3 months.
  • Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
  • Heat a non-stick grill pan over medium heat and spray well with cooking spray.
  • Place the turkey burgers on the grill, cover with an upside down sheet pan or lid and cook for about 5 minutes per side. Be sure to watch the burgers and monitor your heat as the burgers will brown quickly if the heat is too high.
  • Slather buns with tzatziki sauce and garnish with lettuce leaves and red onion. Or serve bunless in the bibb lettuce leaves.

1/2 cup soft bread crumbs
1 teaspoon dried basil

1/4 cup spinach dip
1/4 cup julienned soft sun-dried tomatoes (not packed in oil)

Steps:

  • Combine first six ingredients. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Place burgers on an oiled grill rack or in a greased 15x10x1-in. pan. Grill, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 160°, 4-5 minutes per side. Grill buns, cut side down, over medium heat until toasted. Serve burgers on buns; top with spinach dip, tomatoes and lettuce.

1 jar (7 ounces) oil-packed sun-dried tomatoes
3 medium onions, halved and thinly sliced
3 tablespoons balsamic vinegar
1/2 cup finely chopped red onion
2 tablespoons dried basil
2 teaspoons ground cumin
2 teaspoons ground chipotle pepper
1/2 teaspoon salt
1/4 teaspoon pepper
3 pounds lean ground beef (90% lean)
1 cup crumbled goat cheese
8 hamburger buns, split
Mixed salad greens, optional

Steps:

  • Drain tomatoes, reserving 1/3 cup oil; set aside. In a large skillet, saute sliced onions in 3 Tbsp. reserved oil until softened. Add vinegar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes., Meanwhile, chop sun-dried tomatoes and transfer to a large bowl. Add the red onion, seasonings and remaining 7 tsp. of the reserved oil. Crumble beef over mixture and mix lightly but thoroughly. Shape into 16 thin patties. Place 2 tablespoons goat cheese on the center of 8 patties. Top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat until a thermometer reads 160° and juices run clear, 5-7 minutes on each side., Place buns, cut side down, on grill until toasted, 1-2 minutes. 2 lbs 93% lean ground turkey (Shadybook or Perdue)
1 (10 ounce) box frozen spinach (defrosted and drained)
1 cup sun-dried tomato
1 cup provolone cheese (shredded)
2 teaspoons granulated garlic
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Use a mini chopper to chop the sun dried tomatoes to desired consistancy. I used sun dried tomatoes in oil but drained as much of the oil as possible.
  • Combine turkey meat, spinach, sun dried tomatoes, provolone, garlic powder & bread crumbs. Mix well like making meatballs and create into burger form.
  • I cook on an electric stove at 400 degrees for 20 minutes on one side and then turn for another 10 minutes. Serve on seeded buns and top with Franks Red Hot sauce or eat as is.

Sun-dried Tomato Spinach Turkey Burgers image

These turkey burgers are incredibly flavorful, easy to make, and have some extra veggies thanks to the spinach!

Number Of Ingredients 10

2 Tablespoons olive oil
1 clove garlic, minced
1/2 red onion, finely diced, 1 cup
1 Teaspoon Italian seasoning, see notes
1/2 Teaspoon dried onion granules
1/2 cup finely chopped sun-dried tomatoes, drained from the oil they're packed in
3 cups baby spinach, chopped, 3 ounces
1 Teaspoon sea salt, more or less to your taste
1/2 Teaspoon ground black pepper
1 pound ground turkey

Steps:

  • Preheat a large 10″ cast iron skillet over medium high heat. When the pan is hot but not smoking, add 1 tablespoon of the olive oil to the pan, along with the garlic and red onion. Cook stirring frequently until the onion is mostly translucent, 3-4 minutes.
  • Add the Italian seasoning, onion granules, sun-dried tomatoes, and spinach to the pan. Cook stirring constantly until the spinach just wilts, but is bright green, 2-3 minutes.
  • Remove the spinach mixture from the heat and add it to a medium sized mixing bowl, along with the sea salt, pepper, and ground turkey.
  • Mix together just to combine, then portion out into 6-8 small patties. (I like to shape smaller burgers because ground turkey falls apart easier than other ground meats.)
  • Place the same skillet back on the stove and lower the heat to medium. Add the remaining tablespoon of oil to the pan and fry the patties until they're browned on one side, 5-6 minutes. Turn the patties over and continue to cook until browned on the other side and just done in the middle, 4-5 minutes.
  • Serve immediately with your choice of sides.
