CHEESY TURKEY MEATLOAF

A moist turkey meatloaf that's perfectly seasoned, loaded with Colby jack cheese and brushed with BBQ sauce! Serve with potatoes and roasted veggies for an amazing dinner!

Number Of Ingredients 18

1-2 tablespoons olive oil
1/2 cup onion (finely diced)
3 cloves garlic (minced)
1 lb. ground turkey
1/2 -3/4 cup seasoned croutons (crushed (or seasoned bread crumbs))
1 egg
2 tablespoons ketchup
2 tablespoons BBQ sauce (use your fav.)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon ground sage
2 teaspoons parsley (plus more for grnish)
1/4 cup whole milk
3/4 - 1 cup Colby Jack cheese (cut into tiny cubes)
Favorite BBQ sauce (to spread on top (I used Stubb's Sweet Heat BBQ sauce))

Steps:

  • Preheat oven to 350 F.
  • Lightly grease an 8.5-inch loaf pan. Set aside.
  • Add olive oil to a small saucepan over medium heat.
  • Add onions and saute until tender.
  • Add garlic and cook until fragrant.
  • Remove from heat and let cool.
  • In a large bowl add the cooked onion & garlic, ground turkey, crushed croutons, and egg.
  • Mix together ketchup and BBQ sauce and add to the bowl.
  • Add in salt, pepper, smoked paprika, thyme, oregano, sage, and parsley.
  • Add in milk and mix JUST until combined. Do not overwork the meat.
  • Fold in cheese.
  • *optional*Fry up a tinyl test patty if you want to check the seasonings.
  • Spoon the mixture into the prepared pan and smooth out.
  • Brush the top with BBQ sauce and sprinkle with a bit of parlsey.
  • Bake for 30-35 minutes (may need more time depending on the type of pan you use. See note*)
  • Remove from oven and let cool.
  • Slice and serve.

This is the first meatloaf I have ever made that turned out moist and delicious! I saw several other turkey meatloaves but none quite like this.

1 tablespoon olive oil
2 medium celery ribs, finely chopped
1 small onion, finely chopped
1 teaspoon garlic, minced
3/4 teaspoon ground cumin
20 ounces ground turkey breast
1/3 cup fresh breadcrumb
1/3 cup nonfat milk
1/3 cup salsa
1 egg white
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons Dijon mustard
1/4 cup ketchup

Steps:

  • Heat oil in a medium skillet. Add celery and onion and cook until tender, about 10 minutes. Add garlic and cumin and cook for a minute, then set aside to cool slightly.
  • Preheat oven to 350 degrees F.
  • In large bowl, combine turkey, bread crumbs, milk, salsa, egg whites, salt and pepper, and celery and onion mix.
  • Spray a 13" x 9" pan with cooking spray, shape meatloaf into a 9" x 5" loaf and place in the middle of the pan.
  • In small bowl, combine ketchup and mustard. Spread mixture on top of meatloaf.
  • Bake at 350 degrees for about 1 hour, or until the inside is heated to 165 degrees F.
  • Makes 8 main-dish servings.

This recipe was modified from one I found in the Quaker Oats "All-Time Any Time Recipes" book. Its so easy, it hardly classifies as cooking. Note that this works well with ground venison or ground beef, too.

1 1/2 lbs ground turkey
3/4 cup oats (quick cooking or old fashioned, uncooked)
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 egg, slightly beaten
1 cup salsa (any salsa is OK, spicy or mild)
2 -3 tablespoons ketchup

Steps:

  • Heat oven to 350 degrees F.
  • Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
  • Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
  • Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.
  • Bake (uncovered) 1 hour and 15 minutes.
  • Let stand a few minutes before slicing and serving.

1 pound ground beef sirloin
½ cup salsa
½ cup Italian seasoned bread crumbs
½ cup shredded Cheddar cheese
1 egg, lightly beaten
3 cloves garlic, minced
dried parsley to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
  • Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

  • Preheat oven to 350 degrees. Add all the ingredients into a large bowl (minus the ingredients for the glaze). Using a fork or clean hands, mix until everything is fully incorporated.
  • Line a sheet pan with parchment paper and pour meat onto pan. Use your hands to form into a loaf shape, trying to keep it level so it cooks evenly.
  • Bake for 30 minutes, then remove and brush glaze all over. Place back in the oven for another 30 minutes, or until internal temperature reaches 165 degrees. Remove and let cool for 10 minutes before serving. Sprinkle with chopped parsley to garnish.
