1 pound ground turkey
1 egg
¼ cup Italian seasoned bread crumbs
1 teaspoon Italian seasoning
½ clove garlic, minced
½ teaspoon ground black pepper, or to taste
¼ teaspoon salt, or to taste
2 cups tomato sauce, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with cooking spray.
  • Mix turkey, egg, bread crumbs, Italian seasoning, garlic, black pepper, and salt in a large bowl; shape into a loaf and put into prepared baking dish.
  • Bake in preheated oven for 40 minutes. Spoon about half the tomato sauce over the loaf and continue baking until the meatloaf is no longer pink in the center, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Rest meatloaf 5 to 10 minutes before slicing to serve.
  • While the meatloaf rests, warm remaining tomato sauce in a small saucepan over medium-low heat; serve with the sliced meatloaf.

My mom gave me this recipe, and everyone agrees it is the best ever, I think it's because of the Italian sausage. It's great the next day too. But we usually don't have many leftovers.

1 ¼ pounds ground beef
4 (4 ounce) links Italian sausage, casings removed
1 egg, beaten
1 small green bell pepper, chopped
1 onion, chopped
½ cup dry hot wheat cereal
½ cup milk
1 dash Worcestershire sauce
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Chop sausage finely. In a large bowl combine beef, sausage, egg beat, bell pepper, onion, cereal, milk, Worcestershire sauce, salt and pepper. Mix together and press into a loaf pan.
  • Bake in the preheated oven for 1 hour, or until cooked through. Drain grease from loaf pan periodically during baking. Let stand 10 minutes before serving.

A household favorite, I created this recipe after giving up flour, cheese and most sugar. It is a turkey meatloaf with an Italian touch.

1 pound mild Italian turkey sausage, casings removed
1 pound ground turkey
2 eggs, beaten
1 ½ cups rolled oats
½ cup chopped onion
½ cup milk
1 tablespoon Worcestershire sauce
1 teaspoon Italian-style seasoning
½ teaspoon garlic powder
½ teaspoon salt
2 cups spaghetti sauce
5 dashes hot pepper sauce
1 tablespoon Worcestershire sauce
½ teaspoon liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground turkey, sausage, eggs, oats, onion and milk. Season with 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder and salt. Mix well and form into a loaf. Place into a 9x13 inch baking dish.
  • In a separate small bowl, mix together the spaghetti sauce, hot sauce, 1 tablespoon Worcestershire sauce and liquid smoke. Smooth over the entire meatloaf.
  • Bake in preheated oven for 50 to 60 minutes.

6 garlic cloves, halved
2 medium carrots, cut into chunks
1 small onion, cut into wedges
1 can (15 ounces) black beans, rinsed and drained
1 cup quick-cooking oats
1/2 cup fat-free milk
1 can (6 ounces) tomato paste, divided
3 teaspoons Italian seasoning, divided
1 teaspoon seasoned salt
1 package (20 ounces) lean ground turkey
1 tablespoon water

Steps:

  • Preheat oven to 350°. Place garlic, carrots and onion in a food processor; pulse until finely chopped. Add beans; process until blended. In a large bowl, combine oats, milk, half of the tomato paste, 1-1/2 teaspoons Italian seasoning, seasoned salt and black bean mixture. Add turkey; mix lightly but thoroughly., Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, 30 minutes., Combine water with the remaining tomato paste and Italian seasoning; spread over meat loaf. Bake 10-15 minutes longer or until a thermometer reads 165°. Let stand 10 minutes before slicing.

This is a recipe that helps explain the Twitter-era term "humblebrag." I made it for the celebrated writer and filmmaker Nora Ephron after a different recipe resulted in a disaster and I had to discard the result with only a few hours before my dinner with -- did I mention? -- Nora Ephron. It derives from a meatball dish once cooked by the chef Mark Ladner at the restaurant Lupa in Manhattan, and published as a recipe in Details magazine in the early years of the century. I scaled it up over the years, increasing some spices here and there, lessening others, until I had what I thought to be a pretty terrific meatloaf. But don't take my word for it. "This is remarkable," Ms. Ephron told me. I'm bragging about it still.

8 cloves garlic, minced
1 tablespoon finely chopped fresh rosemary
1/4 teaspoon red pepper flakes
1 cup fresh bread crumbs of any provenance
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup whole milk
1 pound ground turkey
1 pound sweet Italian pork sausage, casing removed, crumbled
1/4 cup extra-virgin olive oil
4 ounces bacon, chopped
1 medium red onion, finely chopped
1 28-ounce can whole tomatoes, preferably San Marzano, seeds removed
1 cup red wine
1/4 bunch mint

Steps:

  • Preheat the oven to 450 degrees. Combine 2/3 of the garlic, the rosemary, pepper flakes, bread crumbs, salt and pepper. Add the milk and mix. Add the turkey and sausage and mix once more to combine; don't overmix. Transfer onto a board and shape into a fine meatloaf, about 9 inches long and 4 inches wide.
  • Place in a baking pan with high sides (a 9 x12 pan with 2-inch sides works well), drizzle with about 2 tablespoons of olive oil and bake for 25 minutes, turning halfway through to brown evenly. Remove from the oven and reduce the heat to 325 degrees.
  • Meanwhile, in a medium saucepan over medium heat, fry the bacon in the remaining 2 tablespoons of oil until it starts to curl and its fat is rendered. Add the onions and remaining garlic, cooking until the onions are translucent, about 4 minutes. Add the tomatoes and wine and bring to a boil.
  • Pour the sauce over the meatloaf, cover tightly with foil and bake until a meat thermometer inserted at the center reads 150 degrees, 20 to 30 minutes.
  • Transfer the meatloaf to a platter and let stand, tented with foil, for 10 to 20 minutes; its internal temperature will rise to 160 to 165. Cut into thick slices, spoon tomato sauce over the top and scatter with torn mint leaves.

  • In a medium skillet, heat the olive oil until shimmering. Add the onion, garlic and a generous pinch each of salt and pepper and cook over moderate heat, stirring occasionally, until the onion is softened, about 7 minutes. Scrape the onion mixture into a large bowl. Using a rubber spatula, fold in the 1/4 cup of parsley and the basil. Let cool to room temperature, about 20 minutes.
  • Preheat the oven to 375°. Add the ground turkey, turkey sausage, crushed crackers, cheese, mayonnaise, eggs, oregano, crushed red pepper flakes, 2 teaspoons of salt and 1/2 teaspoon of black pepper to the cooled onion mixture. Using your hands, mix gently until combined.
  • Transfer the meat mixture to a parchment paper–lined baking sheet and pat it into a 5-by-11-inch loaf. Bake for about 40 minutes, until the meat loaf is browned and an instant-read thermometer inserted in the center registers 165°. Remove the meat loaf from the oven and spoon the marinara sauce on top.
  • Turn on the broiler and broil the meat loaf until the marinara sauce is browned in spots, 3 to 4 minutes. Let the meat loaf stand for 15 minutes, garnish with chopped parsley and serve.
