1/3 c dijon mustard
1/3 c olive oil
salt and pepper
1/2 c fresh cilantro chopped
2 Tbsp honey
4 medium tuna steaks
1 lb taro peeled and cut into cubes
1/4 c heavy cream
3 Tbsp butter
salt and pepper

Steps:

  • 1. In a baking dish whisk 1/4 cup of the Dijon mustard with 2 Tbsp of olive oil add some salt and pepper and 1/4 cup cilantro. Add the tuna steaks and and mix well and set them in the fridge to marinate at least 30 minutes.
  • 2. In a saucepan add the taro and cover it with water and salt and bring to boil. Cook about 20 minutes or until taro is tender. Drain. Mash the taro and mix it with butter and heavy cream. Adjust the cream depending on consistency. Season with salt and pepper.
  • 3. In a bowl whisk 1/4 cup olive oil with 2 tbsp. each Dijon mustard and honey. Add the remaining cilantro and season with salt and pepper.
  • 4. Remove the tuna from the marinade and brush the marinade off. Place some oil in a large skillet and sear the tuna until desired doneness.
  • 5. Serve the tuna sliced on top of the mashed taro and drizzled with the honey mustard sauce.

This easy fresh grilled tuna is flavored with a honey mustard marinade. For the best flavor and texture, grill the tuna for only 4 to 5 minutes.

1/3 cup red wine vinegar
1 tablespoon spicy brown mustard
1 tablespoon honey
3 tablespoons extra virgin olive oil
Dash garlic herb seasoning
1 to 1 1/2 pounds fresh tuna steaks

Steps:

  • Combine the first 5 ingredients in a jar or covered container; shake to mix well.
  • Put tuna in a food storage bag; add about 4 tablespoons of the mustard mixture.
  • Seal the bag and let marinate for about 20 minutes.
  • Brush the grill with olive oil and heat.
  • Remove the tuna from the marinade and pour the marinade in a small saucepan.
  • Bring marinade to a full boil; remove from heat and set aside.
  • Grill the tuna over high heat for about 2 to 3 minutes on each side, or until done as desired.

1 teaspoon paprika
1/2 teaspoon ground cumin
1 teaspoon turmeric
1/4 teaspoon ground anise seed
1/2 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1/4 teaspoon red hot pepper flakes
Salt and freshly ground white pepper to taste
4 tuna steaks, about 1 1/2 pounds total weight, about 1 1/2 inches thick
1 tablespoon fresh lemon juice
2 tablespoons olive oil
2 tablespoons melted butter
4 tablespoons coarsely chopped coriander

Steps:

  • In a small mixing bowl, combine paprika, cumin, turmeric, anise, ginger, cinnamon, red pepper flakes, salt and and pepper, and blend well.
  • Place the tuna steaks on a large platter and sprinkle and rub each side with the spice mixture. Sprinkle evenly with the lemon juice and oil. Cover with plastic wrap. Let stand until ready to cook.
  • If broiling, arrange the steaks on a rack and place under a very hot broiler about 4 inches from the heat. Broil 4 minutes with the door partly open. Turn, continue cooking or broiling leaving the door open for about 3 to 4 minutes for pink inside. For rare, cook less. The steaks should be well browned.
  • For pan frying, heat a heavy cast-iron skillet, large enough to hold the steaks in one layer. Do not add fat. When the skillet is quite hot, add the tuna steaks, cook until well browned on one side, about 3 minutes. Turn and cook 3 minutes more on the second side for rare. If desired, cook longer.
  • Place the steaks on warm plates, brush them with the melted butter, sprinkle with coriander. Serve with couscous.

2 tablespoons cider vinegar
2 tablespoons honey

1/3 cup dry red wine or reduced-sodium beef broth
1/3 cup reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot

Steps:

  • In a small bowl, combine the wine, soy sauce, ginger and garlic. Pour into a large resealable plastic bag; add the tuna steaks and bay leaf. Salmon is my favorite "meat" and maybe my favorite food on earth. Since it's also good for you, I try to eat it at least a couple times a week. Grilled with this marinade is one of my favorite ways. If you have more fish and more than 3 people to feed, increase the amount of marinade. The preparation time is basically the marination time.

2 tablespoons honey dijon mustard
2 teaspoons soy sauce (light or lower-sodium soy sauce is OK)
2 tablespoons rice wine vinegar or 2 tablespoons white vinegar
1 tablespoon olive oil
2 -3 salmon or 2 -3 tuna steaks (1-1½ lbs)

Steps:

  • Combine the honey mustard, soy sauce, vinegar and oil in a large ziplock plastic bag.
  • Add the salmon and seal the bag, turning to make sure pieces are coated on all sides.
  • Refrigerate 1-2 hours, turning occasionally.
  • Grill over hot coals 5-7 min.
