1 bunch cilantro, chopped
8 green onions, chopped
2 lemons, juice of
2 limes, juice of

Steps:

  • Add all ingredients together in a bowl.
  • Serve with tortilla chips.
  • NOTE: Even better the day after.

With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.
  • Add the black-eyed peas, black beans, corn, cilantro, pickled jalapeno, scallions, tomatoes and bell pepper. Toss to coat in the dressing. Season to taste with additional salt and pepper. Cover and refrigerate at least 1 hour to blend the flavors before serving. Serve with tortilla chips for scooping.

Good as a dip, over lettuce, by it's self or wrapped in a tortilla with cheese for a filling lunch. You can easily turn up the heat. Servings depend on if it's a main course or appetizer.

1 (15 ounce) can black beans, drained and rinsed
2 (5 ounce) cans tuna, drained
1 (2 1/2 ounce) can black olives, drained
1 cup frozen corn, defrosted
1 green bell peppers or 1 red bell pepper, chopped
1 large ripe tomatoes, seeded and chopped
1 carrot, peeled and shredded
3 green onions, chopped including greens (scallions)
1 -2 jalapeno, minced
1/4 cup cilantro, chopped
1 ripe avocado, chopped (add just before serving)
1/4 cup white vinegar
1/4 cup canola oil
1 lemon, juice of (about 3-4 tbsp)
1 teaspoon cumin
1 teaspoon chili powder
2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon Tabasco sauce
3 garlic cloves, minced
1 tablespoon sugar (optional)
lettuce (optional) or flour tortilla wraps (optional)
shredded cheddar cheese (optional)
cream cheese (optional)

Steps:

  • Toss salad ingredients together (except avocado, until just before serving. You can cover avocado with a layer of dressed salad to keep it from browning or just add it as you eat it.).
  • Whisk dressing ingredients together and stir into salad.
  • Optional: You can stir in shredded cheddar cheese and/or cubed cream cheese.
  • Serve as a dip with tortilla chips, over lettuce as a salad, wrapped in a tortilla with cheese or on it's own as a filling lunch.

2 pounds center-cut yellow or blue fin tuna, 3 inches in diameter
1 egg white, beaten until foamy
1/2 cup fresh coarsely ground white pepper
1/2 teaspoon ground coriander seed
3 to 4 tablespoons grape-seed or safflower oil
8 cups mixed greens: combination of bibb, mache, radicchio and chicory, dressed with vinaigrette
Sauce (see recipe)

Steps:

  • Brush egg white on all sides of the tuna with a pastry brush.
  • Mix the ground pepper and coriander and press the tuna into this mixture, using as much of it as necessary to cover each side and the ends.
  • Heat a heavy saute pan and pour about half of the oil into the pan. Bring to the smoking point and carefully place the tuna in the pan. Sear each side until dark brown and crusty, adding more oil if needed to keep the tuna from sticking. Sear the ends as well. Each side should take about one to one and a half minutes. Remove the tuna and let it rest for at least 10 minutes before slicing.
  • Using a very sharp knife, cut the tuna into one-half- to one-third-inch slices, allowing three slices per serving.
  • Arrange the dressed salad greens on each of eight plates at 12 o'clock.
  • In a semicircle, overlap three slices of tuna below the greens, with the top edges of tuna resting on the salad. At the base of each piece of tuna, place a dollop of the sauce.

Had this at a potluck picnic and it was wonderful. I sought out the woman who made it and got the recipe. The secret is to drain it before serving so it isn't swimming in dressing. Serve with tortilla chips. I use cider vinegar but feel free to use white, red, raspberry or any other flavor of your choice. Can sizes are given for the current commonly available sizes in the US. Adjust ingredients for your taste. Times do not include marinate or draining time.

1/2 cup sugar
1/2 cup vinegar (flavor of your choice)

  • Heat and boil 1 minute and then cool completely.
  • In large bowl, combine beans, peas, corn, peppers and onions.
  • Pour vinegar mixture over bean/pepper mixture and mix to thoroughly coat.
  • Cover and marinate overnight.
  • Drain for 2-3 hours before serving.

2 (15 ounce) cans black-eyed peas, rinsed and drained
2 avocados
1 bunch green onion, chopped
1/2 cup fresh cilantro, chopped
4 -5 roma tomatoes, diced
3 tablespoons red wine vinegar
2 teaspoons Tabasco sauce, to taste
1 teaspoon cracked black pepper, to taste
salt, to taste

Steps:

  • Combine all ingredients except the avocado.
  • Allow to sit in the refrigerator for several hours, or overnight.
  • Peel and dice the avocados just before serving.
  • Add avocado to remaining ingredients and stir gently to combine.
  • Serve with tortilla chips.
  • Adjust amounts of any ingredients to your preferred taste.

1 large avocado, cubed

  • Rinse and drain the corn and beans.
  • Put salsa, corn, and 3/4 of each can of beans into a large bowl.
  • Mix thoroughly.
  • Add avocado, parsley and green onions, mix in gently so the avocados don't get mashed.
  • Serve with salty corn chips, scoop shape is best.

  • Stir pinto beans, black-eyed peas, corn, onion, celery, red bell pepper, and cilantro together in a large bowl. Pour cooled oil mixture over bean mixture and toss to coat. This is my favorite fresh veggie chunky salsa/dip ever. In college my roommate's mother gave us this recipe from the Oklahoma newspaper and we haven't stopped making it since.

1 (11 ounce) can white shoepeg corn, drained
1 (15 ounce) can black-eyed peas, drained
2 -3 roma tomatoes
2/3 cup fresh cilantro, chopped
1 -2 avocado
1/3 cup green onion, chopped
1/4 cup olive oil
1/4 teaspoon garlic (minced, chopped, whatever)
1/8 teaspoon black pepper
1/4 cup garlic red wine vinegar
1 teaspoon cumin

Steps:

  • Mix all dressing ingredients together and set aside.
  • Mix all veggies together in a large bowl.
  • Add dressing and mix together well.
  • If you can wait, give the mixture an hour or so for the flavors to really come out. The longer it sits, the better it tastes. But it's delicious to eat straight away too.
  • Note: I rarely use the exact ingredient amounts. It's good to substitute black or red beans for the pinto beans or to use regular corn for shoepeg. I've used red wine vinegar in place of garlic red wine vinegar as well. You can even add hot sauce if you like spicy. I always double the recipe (but not necessarily the dressing) and eat on it for days. It's good in burritos, pitas, or on top salads, anything really. It's a very flexible recipe.

(Use during C. T.) Beans are a great way to add fiber and plant-based protein to your diet. Preparing dried beans is a great way to have some money in your grocery budget. Canned beans cost about 70 cents while dried beans cost around 20 cents per cup. You can find dried beans at your local grocery store and can often find them in bulk bins as well. Buying in bulk saves you money because it allows you to only buy the amount you need and pay by the pound. When cooking dried beans, place them in a pot and cover with water. Soak these beans overnight. After soaking, rinse the beans and then simply follow your recipe. Keep in mind that beans will expand as they soak and 1 cup dry beans will yield about 2.5 cups after soaking. Steps:

  • If you are working with dry beans, soak only the black beans overnight. In a 5-quart saucepan, bring 10 cups water to a boil. Add 1 bag of black beans and return to a boil; let boil 2-3 minutes. Cover tightly and set aside at room temperature for an hour. Drain and rinse beans. Repeat this with the black-eyed peas before preparing the rest of the recipe.
  • Combine black-eyed peans, black beans, corn, green onions, green bell pepper, tomatoes, and cilantro in a medium bowl.
  • Prepare dressing: In a small bowl whisk together the olive oil, vinegar, lime juice, Dijon mustard, and salt and pepper.
  • Pour dressing over bean mixture. Cover and refrigerate until ready to serve.
  • Just before serving, add avocado and gently stir to combine. Scoop into peppers and serve.
