- Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. , Bake, uncovered, 30 minutes or until bubbly., Freeze Option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

LAZY ENCHILADAS (SUPER EASY DINNER IDEA!)

- In a large skillet, sauté the onion until soft. Add the ground beef and brown (no need to drain the grease).
- Preheat your oven to 350 degrees, and grease a 9x13 baking dish.
- Break up the chips a bit (while still in the bag), and place everything except for 2 large cups of reserved cheese (for topping later) into your baking dish.
- Use your hands to mix everything together until well combined. Make sure the mixture is evenly distributed on the bottom of the pan, and then top with the remaining cheese.
- Bake for 45-50 minutes. Top with sour cream, diced tomatoes, avocado, jalapeño, chives or anything else you'd like!
LAZY ENCHILADA CASSEROLE

Steps:
- Preheat oven to 350 degrees and spray a 9 x 13 baking dish with non-stick cooking spray. Set aside.
- In a large skillet place ground beef and onion. Break up and brown ground beef until no longer pink and onion is softened. Drain any excess grease.
- Stir in taco seasoning.
- Mix in enchilada sauce and rotel tomatoes, diced tomatoes or salsa. Turn off burner.
- Place 1/2 the (18oz) bag of tortilla chips evenly into prepared baking dish.
- Pour 1/2 of the enchilada/ground beef mixture over chips evenly.
- Sprinkle with 1/2 of the shredded cheddar cheese.
- Place the rest of the tortilla chips over the cheese layer.
- Pour the rest of enchilada/ground beef mixture over chips
- Sprinkle rest of shredded cheese over meat mixture.
- Cover baking dish with foil. (Spray non-stick cooking spray onto foil and place sprayed side of foil over the cheese; this will prevent the foil from pulling the cheese off once removed after it's cooked.)
- Bake in preheated oven for 20 minutes. Remove foil from baking dish and bake an additional 20 minutes until bubbly.
- Garnish with green onions or cilantro.

- Heat oven to 375.
- Grease 2 qt.
- baking dish.
- Brown ground beef in large nonstick skillet over med.
- heat until thoroughly cooked, stirring frequently.
- Drain.
- Add corn, enchilada sauce and green chiles, mix well.
- Spoon 1/4 of beef mixture into baking dish.
- Top with 1/3 of tortilla strips.
- Repeat layers 2 times, ending with beef mixture.
- Cover with foil.
- Bake at 375 for 40 minutes.
- Uncover; sprinkle with cheese.
- Bake an additional 5 minutes or until casserole is bubbly and cheese is melted.

T'S LAZY ENCHILADA CASSEROLE
Steps:
- Boil the chicken breasts in water with a little bit of salt and garlic for flavor until chicken is cooked and tender. Preheat oven to 350°F or 375°F depending on dish used. Let chicken cool for a few minutes and then shred. Once the chicken is shredded place it in a bowl.
- Get 3 quart rectangular dish and spread enchilada sauce on the bottom. Then place four or 5 tortillas on bottom so that it is covered (like making lasagna). After placing layer of tortillas add another layer of enchilada sauce, coating tortillas. Then add chicken to make the first layer. Add second layer of tortillas, then coat with enchilada sauce. After coating add cheese to make a cheese layer. Continue to make layers of cheese and then chicken until desired number of layers. After creating last layer, cover with another layer of tortillas, coat with sauce and add cheese on top (once again similar to lasagna).
- Cook in on oven for 25-30 minutes or until top layer of cheese looks melted and bubbly. Remove let cool for 5 minutes and enjoy! Garnish with sour cream on top if you desire or on the side.
