This is a wonderful pineapple dish to be served with ham. It is a favorite at Easter in my family. The egg whites add a touch of lightness to it.

3 eggs, whites and yolks separated
1 ½ cups white sugar
½ cup butter
½ cup milk
1 (15 ounce) can crushed pineapple, drained
3 cups cubed bread

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Beat egg whites until foamy in a large glass or metal mixing bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
  • Beat the egg yolks, sugar, butter, and milk together in a large bowl. Stir in the pineapple and bread. Lightly fold egg whites into the pineapple mixture, then spread the mixture into a large baking dish.
  • Bake in the preheated oven until golden brown, 35 to 45 minutes.

My daughter requested a sweet potato souffle with pineapple on top similar to what her boyfriend's family makes. This is what I came up with. Now it is a holiday tradition in our family.

3 cups peeled, cubed sweet potatoes
½ cup brown sugar
¼ cup margarine, softened
2 eggs
2 teaspoons vanilla extract
¼ cup milk
¼ cup all-purpose flour
¼ cup margarine, melted
1 cup crushed pineapple, drained
½ cup white sugar
1 egg, lightly beaten

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash sweet potatoes in a large bowl. Stir in the brown sugar, 1/4 cup softened margarine, 3 eggs, vanilla extract, and milk. Beat until fluffy. Pour into prepared baking dish. Mix flour, 1/4 cup melted margarine, pineapple, white sugar, and 1 egg together in a bowl. Spoon over the sweet potato mixture.
  • Bake in the preheated oven until golden brown, about 40 minutes.

1 stick real butter sliced
4 c soft bread cubed appx 3/4 of a loaf ( wheat/oatmeal bread is good too)
1 c table sugar (white)
1/2 c light/drk brown sugar (your preference)
3 large eggs
1/2 c evaporated milk ( reserve the rest for your coffee or tea)
1 can(s) 16 oz crushed or chunked pineapple in juice (your preference) i use half and half and use the reserve in a glaze for meat

Steps:

  • 1. Mix all wet ingredients together in a very large bowl
  • 2. gently fold in the bread cubes and pour into an "un greased" 13x9 baking dish
  • 3. bake at 350 for 45-55 minutes until brown and bubbly!

1/4 c butter (melted in the pan)
3 eggs, beaten
1 1/2 c sugar
3-4 slice white bread (cubed) any kind of white bread will work
1/4 c milk
1 (20oz) can(s) crushed pineapple (drained)

Steps:

  • 1. Preheat oven to 350. Melt the butter in an 8x8 pan. I just put the pan in the oven while preheating.
  • 2. Beat 3 eggs in medium bowl.
  • 3. To the eggs, add the sugar, milk, cubed bread, and pineapple. Fold all of these ingredients together and pour into the pan with the melted butter. Sprinkle with cinnamon and 1 Tblsp. of sugar and Bake 45 minutes. Will be very hot and bubbly.
  • 4. Top with a dollop of whipped cream or vanilla ice cream for a tasty treat the kids will love!!

1- 20 oz can of crushed pineapple
1/4 c butter - melted
3 eggs, beaten
1/2 to 3/4 c sugar
1/4 c milk
4 slice bread (white, whole wheat or multigrain) cubed
**TOPPING**
1 tsp cinnamon
2 Tbsp sugar

  • 1. preheat oven to 350 Put butter in either 8x8 glass baking dish or souffle pan and melt butter in the preheating oven. Remove when fully melted.
  • 2. Drain pineapple. Beat 3 eggs Add sugar, milk and drained pineapple Beat again to be sure its well distributed.
  • 3. Fold in cubed bread and be sure all the bread is covered with pineapple mixture. Pour into pan with the butter Sprinkle the top with cinnamon and about 2 tsp of sugar.
