SURF AND TURF: STEAK AND SHRIMP RECIPE

Surf And Turf: Steak And Shrimp Recipe image

Make your own surf and turf with garlic butter at home! The classic steak and shrimp recipe is perfect for special occasions or date nights in.

Provided by Maya Krampf

Categories     Main Course

Time 20m

Number Of Ingredients 10

6 tbsp Unsalted butter ((salted, or add salt to taste; softened))
2 cloves Garlic ((minced))
1/2 tsp Fresh parsley ((chopped))
1/2 tbsp Fresh rosemary ((chopped))
1/2 tbsp Fresh thyme
4 6-oz Sirloin steaks ((about 1/2 to 1 inch thick))
1 tbsp Olive oil
1/2 tbsp Sea salt
1/2 tsp Black pepper
12 oz Medium shrimp ((fresh, or frozen and thawed, peeled and deveined))

Steps:

  • In a small bowl, mash together the butter, garlic rosemary, thyme and parsley. Store in the fridge until ready to use.
  • If possible, take the steaks out of the fridge 30 minutes before cooking, to let them come to room temperature.
  • Brush steaks on both sides with olive oil. Season both sides generously with salt and pepper, patting to help the seasonings stick.
  • Heat a cast iron grill pan over medium-high heat for 2-3 minutes, until very hot.
  • Add the steaks and cook for 4-5 minutes, until browned on the bottom. Flip and cook for 2-7 minutes, until done to your liking.* Rare: 120 degrees (49 degrees C), 1-2 minutes* Medium Rare: 130 degrees (54 degrees C), 2-4 minutes* Medium: 140 degrees (60 degrees C), 4-6 minutes* Medium Well: 150 degrees (66 degrees C), 6-8 minutes* Well Done: 160 degrees (71 degrees C), 8-10 minutes
  • Remove the steaks from the pan. Cover to let them rest and keep them warm.
  • Turn off heat. Wait for the pan to stop smoking, then lightly wipe down the pan if it has any pieces left.
  • With the heat off but while the pan is still hot, add 2 tablespoons of garlic butter in smaller chunks. (Reserve the rest of the garlic butter for the steaks later.) Move the butter pieces around as they melt, so that the melted butter coats the pan evenly.
  • Once butter melts, turn on heat to medium. Quickly add the shrimp in a single layer. Cook for 1-3 minutes per side, until opaque and golden.
  • Serve steaks with a pat (1 tablespoon) of garlic butter on top. Serve shrimp alongside the steaks, with garlic butter from the pan poured over them, and a squeeze of lemon, if desired.

SURF AND TURF FOR TWO

Surf and Turf for Two image

Provided by Food Network Kitchen

Time 50m

Yield 2 servings

Number Of Ingredients 14

1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
6 jumbo shrimp, peeled and deveined (tails intact)
2 tablespoons extra-virgin olive oil
Juice of 1/2 lemon
2 teaspoons chopped fresh thyme, plus 2 to 3 sprigs
Freshly ground pepper
6 slices pancetta (about 2 ounces)
1 10-ounce piece beef tenderloin, trimmed
Sea salt
8 asparagus spears
1 tablespoon unsalted butter

Steps:

  • Make the herb oil: Pulse the parsley, chives and olive oil in a mini food processor until smooth. Thin with water, if necessary, and add 1/4 teaspoon each salt and pepper. Transfer to a small bowl, cover and set aside. (This can be done up to 2 hours ahead.)
  • Prepare the surf and turf: Toss the shrimp, olive oil, lemon juice, chopped thyme, and pepper to taste in a bowl. Wrap each shrimp with a piece of pancetta. Preheat the broiler. Arrange the shrimp on a foil-lined broiler pan. Season the beef with sea salt and pepper, press the thyme sprigs into the meat and set aside. Snap off the tough ends of the asparagus. Put the asparagus in a microwave-safe dish with 1/4 cup water and a pinch of sea salt. Heat a medium ovenproof skillet over high heat and add the butter. When the foam subsides, sear the beef until golden brown, about 3 minutes per side. Using tongs, hold the meat and brown the sides. Transfer the skillet to the broiler and cook until a thermometer inserted into the beef registers 125 degrees F for medium rare, about 4 more minutes. Transfer to a cutting board to rest while you cook the shrimp.
  • Broil the shrimp until the pancetta is crisp, about 2 minutes per side. Meanwhile, microwave the asparagus until tender, about 2 minutes. Slice the beef into 4 pieces. Serve with the shrimp, herb oil and asparagus.

Time 45m

Yield 2

Number Of Ingredients 14

1 tablespoon butter, melted
1 tablespoon finely minced onion
1 tablespoon white wine
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon dried parsley

  • Lobster BLTs on Potato Rolls. These upgraded BLTs combine tender, sweet lobster meat with smoky, salty bacon, juicy tomatoes, and pillowy potato buns, lightly toasted in bacon drippings.
  • Seafood-Chorizo Tacos. Fresh chorizo, the highly seasoned Mexican fresh sausage, is the primary flavoring in these rustic and robust shrimp tacos. Get the Recipe.
  • Seared Scallops with Bacon-Braised Chard. "When you learn how to cook scallops with a crisp golden crust, they're just so good," says Top Chef winner Stephanie Izard.
  • Skewered Shrimp and Ham with Apple Jelly. These grilled shrimp and ham hors d'oeuvres from chef Andrew Zimmern are sweet, savory, and spicy all at once — making them the perfect party food.
  • Bacon-Wrapped Tuna Steaks with Frisée and Avocado Salad. Chef Katy Sparks likes to treat tuna steaks like beef. Here, she wraps them in bacon as she would a beef tenderloin, which not only adds a subtle smoky flavor to the fish but also keeps it moist.
  • Jambalaya with Andouille Sausage, Chicken, and Shrimp. Smoky, gently spiced andouille sausage and a spoonful of Creole seasoning give deep flavor and mild heat to this jambalaya, while the trinity of onion, green pepper, and celery provides a classic aromatic base to the dish.
  • Pan-Seared Trout with Serrano Ham and Chile-Garlic Oil. "This dish is almost a cliche in Navarra, but it's absolutely delicious," says chef Alex Raij. "The Spanish ham keeps the fish from drying out, basting it with its inimitable fat."
  • Corn Chowder with Bacon and Sea Scallops. Look for sugar-cured bacon, which is smoky and sweet but mild enough not to overpower the other flavors here.
  • Steak-and-Shrimp Hot Pot. Cooking tender rib eye, fresh mushrooms, and sweet shrimp tableside makes for an interactive celebratory meal. The broth, already seasoned and spiced with fresh aromatics, oils, and sauces, deepens in flavor as you cook vegetables, meats, and, eventually, noodles throughout the night.
  • Sardinian-Style Paella. Fregola, the pearl-size Sardinian pasta that is quite similar to couscous, makes a terrific substitute for rice in this paella-style dish; it soaks up a lot of the cooking liquid from the seafood, tomato, and chorizo stew and still stays nicely chewy.
