TROPICAL POPS(ANTIGUA AND BARBUDA)



Tropical Pops(Antigua and Barbuda) image

Fresh pineapple and coconut are some of the main ingredients in Caribbean(and assuredly in authentic Antigua and Barbuda cuisine). Here they get pureed to a smooth and creamy deliciousness! Adapted from a recipe by Vegetarian Times magazine.

Number Of Ingredients 4

2 cups fresh pineapple, cut in chunks
1 banana, sliced
3/4 cup coconut milk
1/4-1/3 cup honey (or maple syrup or other sweetener)

Steps:

  • Puree pineapple, banana, coconut milk and sweetener 1-2 minutes, until it is nice and smooth.
  • Pour into ice pop molds, and freeze at least 4 hours.
  • To unmold, run molds under warm water.
  • Enjoy!

I'm always looking for alternatives to ice cream, this recipe actually takes away my cravings for it! Cooking time reflects freezing time!

Number Of Ingredients 7

1/2 cup boiling water
1 (1/3 ounce) package sugar-free lemon gelatin (4 serving size)
1 (15 1/4 ounce) can crushed pineapple (own juice)
2 medium bananas, cut into chunks
12 ounces paper cups
12 wooden popsicle sticks
aluminum foil

Steps:

  • In a 1 or 2 cup glass measure, stir together boiling water and gelatin until gelatin dissolves.
  • Pour into a blender.
  • Add undrained pineapple and banana.
  • Cover and blend until smooth.
  • Pour approx 1/3 cup of fuit mixture into each of the 12 / 3 oz paper cups.
  • Cover each cup with foil.
  • Using a tip of a knife, make a small hole in the foil over each cup.
  • Insert a wooden stick into cup through hole.
  • Freeze approx 6 hours or until firm.
  • To serve, quickly dip the cups in warm water to slightly soften fruit mixture.
  • Remove foil and loosen sides of pops fom cups.
  • Tear off cups.

2 cups mangoes
20 ounces crushed pineapple
1 medium banana
1/4 cup orange juice concentrate
1/4 teaspoon ginger, ground

Steps:

  • In a blender or food processor, combine mango, undrained pineapple, banana, orange juice concentrate, and ginger.
  • Cover and process or blend until smooth.
  • Divide fruit mixture among 12 to 14 compartments of freezer pop molds. (Or pour into 3-ounce paper or plastic cups.
  • Cover the cups with foil. With a sharp knife, make a slit in the foil of each. Add sticks or plastic spoons for "handles.") Freeze about 3 hours or until firm.
