I first tried this refreshing beverage - with its tasty combination of citrus juices and mashed banana - at a church reception. It's perfect for serving at birthday parties, wedding showers, anniversary dinners and barbecues. -Hollis Mattson, Brush Prairie, Washington

Ingredients

6 cups water, divided
5 medium ripe bananas
2 cups sugar
2 cans (12 ounces each) frozen orange juice concentrate, thawed
1 can (12 ounces) frozen lemonade concentrate, thawed
1 can (46 ounces) unsweetened pineapple juice
3 bottles (2 liters each) lemon-lime soda

Steps:

In a blender, process 1 cup of water, bananas and sugar until smooth. Pour into a large container; add the concentrates, pineapple juice and remaining water. Cover and freeze. , Remove from freezer 2 hours before serving. Just before serving, stir until slushy. Stir in soda. Serve immediately.

3 cups water
1 1/2 cups sugar
6 medium ripe bananas, diced
2 (11 ounce) cans mandarin oranges
1 (20 ounce) can crushed pineapple, undrained
1 (12 ounce) can frozen orange juice, concengrate thawed
1 (10 ounce) jar maraschino cherries, drained and halved
1/3 cup lemon juice

Steps:

In a saucepan, bring water and sugar to a boil; cook and stir for 5 minutes. Remove from the heat; cool completely. In a 4 quart freezer container, combine the remaining ingredients. Pour sugar water over the fruit. Cover and freeze for at least 8 hours, stirring once or twice. Remove from the freeze 20 minutes before serving.

If you're using fresh pineapple, peel and core the fruit, and then cut into chunks. (Save a few pieces with the peel on for garnish.) Place the pineapple chunks onto a baking sheet and spread into an even layer.
Freeze for 1 hour 30 minutes until the pineapple is frozen. This will take the place of ice in your blended cocktail.
When you're ready, put the frozen pineapple into a blender. Pour in the half-and-half and rum. Cover the blender and puree until smooth and creamy.
Pour into poco glasses and garnish with a pineapple wedge, cherry, and some coconut flakes. Serve immediately.
