TROPICAL COOKIES

Tropical Cookies image

This was written a long time ago by my Dad, Bill York, then I tucked it away for years, found it among my cook book stuff and made it today - delicious! It deserves to be shared! These cookies don't spread like other cookies - they stay fat like little bombs - and they are the bomb! ;-)

Continue mixing while adding the eggs one at time. Make sure each egg is incorporated before adding the next. Add the vanilla. Scrape down the bowl with a spatula.
  • Combine the flour, soda and salt in another bowl. With a whisk, stir to combine. With the machine on low, slowly add the flour. Mix until just combined, taking care not to over mix. With a spatula fold in the white chocolate, macadamia nuts, and coconut flakes.
  • Bake at 360ºF for 12 minutes. They should be lightly golden on the outside but still look gooey on the inside.

  • In a large saucepan, combine cashew butter, honey, and coconut oil. Melt over medium-low heat until mixture is melted and just starts to boil, making sure to stir constantly to prevent scorching. Stir in vanilla extract, oats, shredded coconut, dried pineapple, and dried mango.
  • Cover saucepan, place on a trivet, and refrigerate for 15-20 minutes, or until mixture has started to cool.
  • Drop by heaping tablespoonful onto prepared baking sheet. (I like to use a cookie scoop for this and press the mixture against the side of the bowl as I scoop it out.)
