This is a delicious and simple sandwich that my friend Mary just served for a birthday lunch. We had the sandwiches with my "Recipe #291191" for a complete meal!

1/4 cup soy sauce
1 (20 ounce) can pineapple rings, reserve 3 T liquid
2 tablespoons honey
2 1/2 teaspoons sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger
4 boneless chicken breasts
1/3 cup sliced green onion
1/4 cup light mayonnaise
3 tablespoons chutney
4 hawaiian rolls

Steps:

  • slice chicken breases in half lengthwise. Combine soy, pineapple juice, honey, oil, garlic powder and ginger. Add chicken to mix and marinate at least 30 minutes.
  • Combine chutney, mayo, sliced green onions for dressing.
  • Grill chicken, then pineapple.Serve chicken topped with a pineapple ring on the rolls, and pass the sauce along the side.

This tropical treat makes a delicious lunch or afternoon snack. If you are not cooking for a crowd, just refrigerate any unused pineapple and cheese mixture for another time.

1 (8 ounce) package Neufchatel cheese, softened
¼ cup crushed pineapple, drained
4 bananas, sliced
½ cup shredded coconut
16 slices whole-grain bread

Steps:

  • In a small bowl, mix together softened Neufchatel cheese and pineapple.
  • Spread cheese mixture on one slice of bread, top with slices of banana and a sprinkling of coconut, and top with another slice of bread to make a sandwich. Repeat with remaining ingredients.

1 lb chicken breast halves, skinless and boneless
6 oz lawry's teriyaki 30 minute marinade
2 Tbsp honey
1 pineapple
4 hearty buns

Steps:

  • 1. Cut chicken breasts in slices that are uniform in thickness - about 1/2" thick and to bun size.
  • 2. Pour teriyaki sauce and honey in gallon ziploc bag and mix well. Put chicken pieces in marinade in refrigerator. Flip the bag every 30 minutes and marinate for at least one hour.
  • 3. Slice and core fresh pineapple in to 1/2" slices. You can use canned pineapple slices, but the fresh pineapple is tastier.
  • 4. Grill the chicken on a medium heat until cooked through. Grill the pineapple slices for a couple of minutes on each side. They don't need much, just get them hot. Run your buns under the broiler to slightly toast them.

1 pound boneless skinless chicken breasts, cut into 1-inch strips
2 cups chopped peeled mangoes
1 medium onion, chopped
1 medium sweet red pepper, sliced
1 garlic clove, minced
1 cup unsweetened pineapple juice
1 cup orange juice
1/4 cup reduced-sodium soy sauce
2 tablespoons Thai chili sauce
1/4 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice and thinly sliced green onions

Steps:

  • Place chicken in a 3-qt. slow cooker. Top with mangoes, onion, red pepper and garlic. In a small bowl, combine the pineapple juice, orange juice, soy sauce, chili sauce and pepper; pour over chicken. Cover and cook on low until chicken is tender, 4-5 hours., Remove chicken mixture to a serving platter; keep warm. Transfer cooking juices to a small saucepan. Bring juices to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with chicken mixture, rice and green onions.

  • To Prepare the Chicken: Rinse and pat dry chicken breasts. Coat with Spice Isle Tropical Seasoning & Rub on all sides and place in a gallon sized ziplock bag. Add in the rest of the ingredients, zip shut and place in the refrigerator for at least 3 hours.
  • To Prepare the Tropical Salsa: Add diced fruit, jalapeño, cilantro and lime juice to a bowl. Stir to combine. If you want to make a "pineapple bowl" for your salsa, lay your pineapple on its side and make a cut with a sharp knife from the bottom of the pineapple through the leaves, cutting it into two halves. Make small cuts into the fruit part of the pineapples and around the edge, taking care not to cut all of the way through. Use a spoon to remove the fruit. Depending upon how pig your pineapple is, your salsa may or may not all fit inside.
  • Preparation of the Chicken Continued: When chicken has marinaded for a minimum of 3 hours, remove it from the bag, discarding the marinade. Place on a grill, heated to 375 degrees F. Grill approximately 5 minutes per side, or until chicken reaches an internal temperature of 165 degrees F. Remove and shred chicken. Combine with Spice Isle Tropical Tamarind Gourmet Sauce.
  • Preparing the Sheet Pan Nachos: Preheat oven to 425 degrees F. Cover a large sheet pan with a good quality parchment paper. Lay tortilla chips in a single layer over the parchment. Note: if you are planning to lay your pineapple in the middle, like I have, leave a small space in the middle with no chips. Top chips with chicken and cheese. Bake for 5 minutes, or until cheese is melted. Top with cilantro and jalapeño slices if desired.
