Trisha Yearwood's potato casserole from Food Network is extra-savory thanks to cheddar and bacon.

Number Of Ingredients 11

Nonstick cooking spray, for greasing the baking dish
6 large russet potatoes
Pinch salt
8 ounces sliced bacon
1 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup (1/2 stick) unsalted butter
Pinch garlic salt
Pinch freshly ground black pepper
2 cups grated Cheddar

Steps:

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
  • Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
  • Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

5 pounds medium red potatoes, peeled and quartered
1/2 cup milk
1/2 cup unsalted butter
Coarse salt and freshly ground pepper

Steps:

  • Place potatoes in a large pot and cover with cold water. Bring to a boil, and cook until potatoes are easily pierced with a fork, about 30 minutes. Drain potatoes.
  • Warm milk in a small saucepan over medium heat; stir in butter until incorporated.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat potatoes on low speed. Slowly add milk mixture, beating potatoes just until liquid is absorbed. Season mashed potatoes with salt and pepper.

REAL MASHED POTATOES

5 pounds medium red skinned potatoes
Salt
1/2 cup (1 stick) butter, at room temperature
2 tablespoons milk
Pepper

Steps:

  • Peel the potatoes and cut them in 1-inch cubes. Place the potatoes in a pressure cooker with water to cover and a tablespoon of salt and cook over medium heat until tender, for about 5 minutes. You can also cook the potatoes in a saucepan, bring to boil and reduce to simmer until tender, for about 30 minutes.
  • Drain the potatoes and transfer them into the bowl of an electric mixer. Add the butter and milk and whip the potatoes to a smooth texture, about 5 minutes. You shouldn't see any lumps. If you do, keep mixing. Season with salt and pepper and serve immediately.

Trisha doesn't overcomplicate her mashed potatoes. Potatoes, milk, butter, and seasoning. Perfection doesn't have to be complex, and it pretty much never is when it comes to down-home comfort staples like this.

5 pounds red potatoes, peeled and quartered
1/2 cup milk
1/2 cup unsalted butter
salt and black pepper, to taste

Steps:

  • Place the potatoes in a large pan and cover with cold water. Place the pan on medium-high heat and bring to a boil. Cook until the potatoes are fork-tender, about 30 minutes. Drain well and transfer the potatoes to a large mixing bowl. Meanwhile, heat the milk in a small saucepan over medium heat. Add the butter and cook, stirring occasionally, until the butter is melted. Do not let the milk mixture boil. Using an electric mixer, beat the potatoes on the lowest speed. While beating, slowly add the milk mixture. Just beat the potatoes long enough to incorporate the liquid, do not over beat. Season to taste with salt and pepper. Serve hot.

POTATO PANCAKES



Potato Pancakes image

3 1/2 pounds russet potatoes, peeled
1 large sweet onion
1/2 cup all-purpose flour
2 large eggs, lightly beaten
3 tablespoons finely chopped chives
1/4 teaspoon baking powder
Kosher salt and ground black pepper
Canola oil, for frying
Unsalted butter, for frying

Steps:

  • Set a large strainer or colander over a bowl and line it with a clean kitchen towel. Using a box grater, grate the potatoes and onion into the strainer. Using the towel, squeeze as much liquid from the potatoes and onion as possible. Transfer the mixture to another bowl and stir in the flour, eggs, chives, baking powder, salt and pepper.
  • Coat the bottom of an 8-inch nonstick skillet with oil and add a couple of tablespoons of butter. Heat over medium heat until the butter foam subsides. Spoon about 1 3/4 cups of the potato mixture into the pan and press to fill the circumference. Fry over medium heat, flipping once, until the pancake is golden and crisp, 3 to 4 minutes per side. Drain the pancake on a paper towel-lined baking sheet. Repeat with the remaining batter.

CHEESY HASSELBACK POTATOES



Cheesy Hasselback Potatoes image

4 tablespoons unsalted butter
1/4 cup olive oil
6 cloves garlic, minced or finely diced
6 medium Yukon potatoes, scrubbed and dried
Kosher salt and ground black pepper
1/2 cup shredded Parmesan

Steps:

  • Preheat the oven to 450 degrees F and line a baking sheet with foil.
  • In a small saucepot, bring the butter, oil and garlic to a boil over high heat; remove from the heat.
  • Using 2 wooden spoons placed on each side of a potato as a guide, cut the potato into thin slices about 1/8 to 1/4 inch thick, without cutting through the bottom (the spoons will keep you from cutting all the way through the potato). Repeat with the remaining potatoes. Place the potatoes on the prepared baking sheet and brush each potato with some of the butter mixture, trying to get the butter between the slices. Sprinkle each potato with salt and pepper.
  • Bake for 30 minutes, then remove the potatoes from the oven. The potatoes will have started to spread out from cooking and it will be easier to brush each slice with some more of the butter mixture. Put the potatoes back in the oven for an additional 20 minutes.
  • Remove the potatoes from the oven again and sprinkle the Parmesan over the top and into the slices. Return to the oven to melt and brown the cheese, an additional 5 minutes. Serve the potatoes immediately.

MASHED WHITE AND SWEET POTATOES WITH PARSLEY BUTTER



Mashed White and Sweet Potatoes with Parsley Butter image

3 pounds red or white potatoes, peeled and cut into large dice
Kosher salt
2 bay leaves
3/4 cup heavy cream
1/2 cup sour cream
7 tablespoons salted butter
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Freshly cracked black pepper
Two 15-ounce cans sweet potato puree, such as Farmer's Market Organic brand
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Place the potatoes in a large stockpot and cover with water. Generously season the water with salt. Add the bay leaves and place over high heat. Cover, bring to a boil, lower the heat and simmer until the potatoes are tender enough to smash with a fork, 25 to 35 minutes. Drain the potatoes and discard the bay leaves. Return the potatoes to the pot and add the heavy cream, sour cream and 4 tablespoons of the butter. Smash with a potato masher until smooth. Add the thyme, nutmeg and 1/2 teaspoon each salt and pepper. Stir to combine.
  • Place the sweet potato puree in a pot over medium-high heat. Cover and heat until warmed through, about 4 minutes.
  • When ready to serve, mound a third of the white potatoes in the center of a serving bowl. Next, mound a third of the sweet potatoes on top of the white potatoes. Repeat this process, alternating between the vegetables, to make white and orange circles. Swirl together to create a marbled effect showing both colors.
  • In a small pot, melt the remaining 3 tablespoons butter. Combine the butter and parsley. Pour over the potatoes and serve immediately.

SMASHED RED-SKINNED POTATOES WITH HERB OIL



Smashed Red-Skinned Potatoes with Herb Oil image

2 1/2 pounds medium red-skinned potatoes, halved
Kosher salt
1 1/2 cups loosely packed fresh Italian parsley (about 1 bunch)
1/4 cup olive oil
2 tablespoons chopped fresh chives
2 tablespoons fresh oregano leaves
1 small clove garlic
1/2 cup whole milk, warmed
4 tablespoons unsalted butter, melted

Steps:

  • Put the potatoes in a large pot and cover with 2 inches of water; stir in 1 tablespoon of salt. Bring to a boil over medium-high heat, then reduce the heat slightly and simmer until tender, about 12 minutes.
  • While the potatoes are cooking, combine the parsley, olive oil, chives, oregano, garlic and 1/4 teaspoon salt in a blender and puree until almost smooth. If it needs more liquid, add a little water, 1 tablespoon at a time, until the mixture blends easily.
  • Drain the potatoes and return to the pot. Pour in the warm milk and melted butter and coarsely mash with a potato masher. Transfer the mashed potatoes to a serving bowl and top with the herb oil.

POTATOES WITH GARLIC BUTTER AND TOASTED PECANS



Potatoes with Garlic Butter and Toasted Pecans image

2 tablespoons olive oil
24 ounces creamer potatoes
Kosher salt and freshly cracked black pepper
1/2 cup pecans, chopped
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh thyme leaves, plus more for serving

Steps:

  • Preheat the oven to 450 degrees F. Grease a rimmed baking sheet with 1 tablespoon of the olive oil.
  • Add the potatoes to a medium saucepan, cover them with cold water and add 1 tablespoon of salt. Bring the water to a boil, then simmer until the potatoes are tender when pierced with a knife or fork, 15 to 20 minutes. Drain the potatoes and spread onto the prepared baking sheet.
  • Using a heavy metal spatula or the bottom of a heavy glass, press each potato until it smashes. Drizzle with the remaining 1 tablespoon oil. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Bake until browned on top and bottom, 15 to 20 minutes.
  • While the potatoes are baking, add the pecans to a small skillet over medium heat and cook until toasted, 1 to 2 minutes. Add the butter and once melted, add the garlic and sprinkle with 1/2 teaspoon each salt and pepper. Cook until the garlic softens and starts to brown, 2 to 3 minutes, then stir in the thyme. Remove from the heat.
  • Transfer the potatoes to a serving dish. Pour the garlic pecans over and toss lightly until coated. Sprinkle more fresh thyme on top. Serve immediately.

LOADED GARLIC MASHED POTATOES



Loaded Garlic Mashed Potatoes image

8 ounces bacon (about 10 strips)
1 head of garlic
1 tablespoon olive oil
Kosher salt and freshly cracked black pepper
3 pounds Yukon gold potatoes, peeled and cut into 1-inch chunks
1/2 cup heavy cream
4 tablespoons salted butter
1/4 cup sour cream
2 cups grated sharp Cheddar
3 scallions, thinly sliced on the bias

Steps:

  • Preheat the oven to 350 degrees F. Place a cooling rack on top of a baking sheet lined with parchment paper.
  • Spread the bacon over the cooling rack so that none of the slices are touching. Slice the top off the head of garlic so the cloves are exposed. Drizzle the exposed cloves with the olive oil and sprinkle with some salt and pepper, then wrap in aluminum foil to create a packet. Roast both until the bacon is crispy and the garlic is soft, about 30 minutes. Set aside to cool.
  • Put the potatoes in a pot and cover with water. Add a generous pinch of salt. Bring to a simmer and simmer until the potatoes are tender, about 30 minutes.
  • Drain the water from the pot and transfer the potatoes to a stand mixer. Add the cream, butter, sour cream, 6 cloves of the roasted garlic and 1 3/4 cups of the Cheddar to the mixer and whip until combined and smooth. Add additional salt and pepper to taste.
  • Transfer the potatoes to a serving dish and top with the remaining Cheddar. Crumble the bacon over the top and sprinkle with the scallions. Serve immediately.
