1/2 cup Dutch-process cocoa powder
1 teaspoon ground (instant) espresso powder
1 1/4 cups boiling water
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon table salt
10 tablespoons unsalted butter, at room temperature
1 1/2 cups packed light brown sugar
3 large eggs, at room temperature
1/2 cup whole buttermilk
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter
1 cup good-quality bittersweet chocolate chips
1 tablespoon ground (instant) espresso powder
1 (14-ounce) can sweetened condensed milk
1 tablespoon coffee-flavored liqueur, such as Kahlua
2 cups heavy whipping cream
1 cup (6 ounces) good-quality bittersweet chocolate chips, divided
2/3 cup heavy whipping cream
1/2 cup light corn syrup
1/3 cup packed dark brown sugar
1/4 cup unsweetened Dutch-process cocoa powder
1/4 teaspoon table salt
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
1 1/2 cups chilled heavy cream
2 tablespoons confectioners' sugar
2 tablespoons coffee-flavored liqueur, such as Kahlua
Chocolate-covered espresso beans, for serving

Steps:

  • Preheat oven to 350 degrees F. Coat the bottom and sides of a 9- by 13-inch metal baking dish with cooking spray (I like Baker's Joy) and line with parchment paper. Lightly spray the paper.
  • Combine the chocolate chips, cocoa and espresso powder in a mixing bowl. Pour the boiling water over top and whisk until the chocolate is completely melted. Set aside.
  • In another bowl, add the flour, baking soda, baking powder and salt and whisk to combine. Set aside.
  • In the bowl of a stand mixer fitted with the beater blade, cream together the butter and sugar on medium to medium-high speed until light and fluffy, 4 to 5 minutes. Add the eggs, one at a time, until incorporated. Whisk the buttermilk and vanilla into the reserved chocolate mixture. Reduce speed to low. Add 1/3 of the flour mixture, followed by 1/2 of the chocolate mixture until just combined. Repeat with another third of flour, the remaining chocolate, and final third of flour.
  • Pour the batter into the prepared baking dish and smooth with a rubber or offset spatula. Bake for 28 to 32 minutes, until a toothpick pricked in center comes out clean. Cool the pan on a wire rack for 10 minutes. Run a paring knife along the edges of the cake and gently invert it onto the cooling rack. Discard the parchment paper and allow the cake to cool completely.
  • Melt the butter in a medium saucepan over low to medium-low heat. Add the chocolate chips and espresso powder, and cook until chocolate is completely melted. Pour in the condensed milk and coffee liqueur and whisk until smooth and creamy, about 2 minutes. Set aside to cool.
  • In the bowl of a stand mixer fitted with the whisk attachment (or with an electric mixer) beat the cream until stiff peaks begin to form. Gently fold cooled chocolate mixture into the whipped cream until it is completely incorporated and no streaks remain. Cover and chill for 1 to 2 hours.
  • Combine 1/2 cup chocolate chips, cream, corn syrup, brown sugar, cocoa and salt in a heavy saucepan and bring to a boil, stirring frequently, over medium heat. Reduce heat to low and continue cooking at a gentle boil, stirring occasionally, for 5 minutes. Remove from the heat. Add the remaining 1/2 cup chocolate chips, butter and vanilla and whisk until glossy and smooth. Set aside.
  • For the whipped cream:
  • Just before serving, in the bowl of a stand mixer fitted with the whisk attachment (or with an electric mixer) beat the cream, confectioners' sugar and coffee liqueur until soft peaks just begin to form.
  • This can be assembled in a large trifle dish or individual glass serving dishes. Line up the individual dessert components. Break the devil's food cake into small pieces (it's okay if it crumbles; it will press into a cohesive layer in the trifle dish). Rewarm fudge sauce on low heat to thin, if necessary.
  • Spread a layer of chocolate mousse in the bottom of the dish. Arrange a fairly thick layer of devil's food cake pieces over the mousse. Drizzle fudge sauce over the cake pieces. Repeat layering, ending with mousse. Refrigerate trifle for 2 to 3 hours to set.
  • This dessert is best served at room temperature, so remove from the refrigerator at least an hour or two before serving. Top with fresh whipped cream and chopped chocolate-covered espresso beans. (If making individual trifles, top each trifle with one whole chocolate-covered espresso bean.)

3 pacocas, peanut candy
7 oz sweetened condensed milk, 1/2 can

3 ½ oz semisweet chocolate
8 fl oz heavy cream
5 oz semisweet chocolate
1 cup milk
12 oz graham cracker
peanut butter, crumbed

Steps:

  • In a small pan, pour the sweetened condensed milk, milk, cornstarch, heavy cream, and the paçocas. Dissolve the cornstarch in the milk before putting in the pan. Cook over medium heat and mix well until it becomes creamy. Set aside.
  • Repeat the process with the chocolate pudding. Set aside.
  • In a square tray, put a layer of graham crackers soaked in milk, then a layer of the paçoca pudding, then cover with the graham crackers soaked in milk. Add a layer of the semisweet chocolate pudding. Repeat until the tray is full.
  • Melt the semisweet chocolate with the heavy cream on the microwave for 1 minute or until it melts completely.
  • Spread the ganache over the trifle and refrigerate for 4 hours.
  • Spread crumbled paçocas over the trifle.

1 carton (12 ounces) frozen whipped topping, thawed
1 jar (12-1/4 ounces) caramel ice cream topping
1 package (7-1/2 or 8 ounces) English toffee bits or almond brickle chips

Steps:

  • Prepare and bake cake according to package directions for an 8-in. square baking pan. Cool on a wire rack. Prepare pudding according to package directions., Cut cake into 1-1/2-in. cubes. Place half of the cubes in a 3-qt. trifle bowl or large glass serving bowl; lightly press down to fill in gaps. 1 package (6 ounces) instant chocolate pudding mix
1/2 cup strong coffee
1 carton (12 ounces) frozen whipped topping, thawed
6 Heath candy bars (1.4 ounces each), crushed

Steps:

  • Bake cake according to package directions. Cool. Prepare pudding according to package directions; set aside. , Crumble cake; reserve 1/2 cup. Place half of the remaining cake crumbs in the bottom of a 4-1/2- or 5-qt. trifle dish or decorative glass bowl. , Layer with half of the coffee, half of the pudding, half of the whipped topping and half of the crushed candy bars. Repeat the layers of cake, coffee, pudding and whipped topping. , Combine remaining crushed candy bars with reserved cake crumbs; sprinkle over top. Refrigerate 4-5 hours before serving.

1 (3.9 ounce) package instant chocolate pudding mix
½ cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy

Steps:

  • Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
  • In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.

1 large egg, lightly beaten

1 ¾ cups all purpose flour

5 tablespoons unsalted butter, cold, cut into small pieces
⅔ cup dark chocolate chip
¼ cup cocoa powder

Steps:

  • Preheat the oven to 375°F (190°C) and place rack in center of oven.
  • In a small bowl whisk together heavy cream, egg, and vanilla extract.
  • In a large bowl, whisk together flour, cocoa powder, sugar, baking powder and salt.
  • Using a pastry blender or two knives, cut the butter into the flour mixture until it resembles coarse crumbs. Stir in the chocolate chips. Add the cream mixture and stir just until the dough comes together (add more cream and/or flour as necessary).
  • Transfer the dough to a lightly floured surface and knead a few times. Shape the dough into a 7-inch (18 cm) round and cut into eight wedges. Place them on the baking sheet.
  • Bake for about 20 minutes or until they are firm around the edges but a bit soft in the center. A toothpick inserted into the center of a scone will come out clean. Cool on a wire rack.
  • Mix the glaze ingredients together in a bowl. Drizzle on top of the scones (optional).

2 whole egg yolks

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • Roll out a circle of pie dough and cut in half. Press the dough into two small tart tins, and remove any excess dough. Use a fork to prick the base of the pie dough.
  • Bake in the oven for 20 minutes at 425˚F (220˚C), or until the tart is golden brown. Remove from the oven and cool completely.
  • Add the sugar, cornstarch, and salt in a medium saucepan over medium heat, and whisk to combine.
  • Pour in milk and egg yolks and whisk, until the mixture just barely comes to a boil and becomes thick like pudding, about 6-8 minutes.
  • Stir in the butter and vanilla, and remove the saucepan from the heat.
  • In three separate microwave-safe bowls, melt each of the chocolates by microwaving for intervals of 15 seconds, stirring until smooth.
  • Pour the pudding into each of the separate bowls of melted chocolate. Stir until they are well combined and silky.
  • Spoon many small dollops of each chocolate pudding into the pie crust. Make any design you would like with a toothpick. Chill in the fridge for 2 hours, until set.
  • Garnish with fresh fruit, or mint

  • Assemble the trifles: Transfer the chocolate pudding to a piping bag fitted with a large tip.
  • Add about ½ cup of the pound cake cubes to the bottom of each jar, pressing down to compact. Pipe about ¼ cup of chocolate pudding and ¼ cup of the whipped cream on top. Sprinkle 2-3 tablespoons of crushed chocolate sandwich cookies and 2 tablespoons chocolate caramel candy bars on top. Repeat to make a second layer with the remaining ingredients. Finish with a drizzle of chocolate ganache and garnish with fresh raspberries and a sprig of mint. Serve with chocolate spoons.
