ENDIVE TRI-COLORE SALAD

Endive Tri-Colore Salad image

Provided by Dave Lieberman

Time 20m

Yield 10 to 12 servings

Number Of Ingredients 7

1 large bunch arugula
2 to 3 large heads Belgian endive
1 large head radicchio
1/2 cup extra-virgin olive oil
1 to 2 lemons, juiced
1/2 teaspoon salt
15 to 20 grinds freshly ground black pepper

Steps:

  • Tear off the large tough stems from the bottom of the arugula. Wash and dry the arugula leaves. Cut the leaves into 1/2-inch shreds. Put the shredded arugula in a large bowl.
  • Pull off 20 or so of the largest, nicest outer leaves from the endive. They are going to be your endive cups. Arrange them around the center of a large platter (or 2 smaller plates), leaving space in the center. Cut the remaining endive crosswise into 1/4-inch shreds, starting at the pointy top and stopping when you get to the bitter core. Put the shredded endive in the bowl with the arugula.
  • Peel any outer wilted leaves from the radicchio and cut the head in half. Cut out the core and then cut the radicchio into 1/4-inch shreds. Add to the bowl with the arugula and the endive. (You can make the endive cups and prepare the greens up to a couple hours in advance. Cover them with damp paper towels and keep them in the refrigerator until you're ready to dress the salad.)
  • To make the dressing: place all the dressing ingredients in a sealable container and shake until totally blended.
  • Just before serving, toss the salad with most of the dressing. Fill the endive cups with salad and splatter with the remaining dressing. Serve immediately.

TRICOLORE SALAD WITH ORANGES

Tricolore Salad with Oranges image

Provided by Ina Garten

Time 25m

Yield 8 servings

Number Of Ingredients 11

1 cup shallots, peeled, thinly sliced in rings, and separated (2 to 4 shallots)
2 tablespoons apple cider vinegar
1 large radicchio, halved, cored, and shredded like slaw (12 ounces)
1 large endive, halved lengthwise, cored, and sliced crosswise 1/2 inch thick (8 ounces)
3 ounces baby arugula
4 navel oranges, peeled and sliced in 1/4-inch-thick half-rounds
2/3 cup pitted Kalamata olives
1/2 cup freshly squeezed lemon juice (2 to 3 lemons)
1/2 teaspoon good Dijon mustard
Kosher salt and freshly ground black pepper
1/2 cup good olive oil

Steps:

  • Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.
  • In a large shallow serving bowl, combine the radicchio, endive, arugula, oranges, and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly (discard the vinegar).
  • In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with one more teaspoon salt, toss well, and taste for seasonings. Serve at room temperature.

TRICOLOR SALAD ALLA SPLENDIDO

Tricolor Salad alla Splendido image

An Italian restaurant standard is kicked up a few notches in this recipe from Mario Carbone, the chef at Carbone restaurant in New York. If you find it hard to track down Italian frisée or various types of radicchio, you can substitute the usual trio of arugula, endive and radicchio. A helping of poached tuna adds richness and a hint of a salade niçiose.

Categories     dinner, lunch, salads and dressings, main course, side dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

8 ounces raw tuna steak
Salt and freshly ground pepper
1 lemon
2 bay leaves
2 cups plus 1/2 cup extra-virgin olive oil
8 ounces various types of radicchio, like Castelfranco, Tardivo, Treviso or Rosa di Gorizia
4 ounces frisée, Italian if possible
1/4 cup large capers (packed in salt, rinsed and soaked a half-hour)
1/3 cup small pitted olives, preferably taggiasca
1/2 cup golden raisins, rehydrated in 1 cup boiling water
2 tablespoons lime juice
1/4 cup chopped parsley
1 bunch chives, minced

Steps:

  • Cut tuna into 4 even portions; season both sides with salt and pepper. With a peeler, cut 4 long strips from skin of lemon; place in a small pot with the bay leaves and tuna. Add about 2 cups oil, or enough to just cover the tuna. Over medium heat, bring oil to about 140 degrees and gently poach for 10 minutes, adjusting or turning off heat to maintain temperature, until tuna is cooked through. Turn off heat and allow tuna to cool in the oil for 10 minutes. Cut into 1/4-inch slices.
  • Wash and dry all greens well. Keep leaves whole and place in a large bowl.
  • Heat remaining 1/2 cup oil in a small saucepan with the capers, olives and raisins. Once they begin to fry lightly and become aromatic, add tuna slices and pour mixture over the greens. Juice the lemon and add 2 tablespoons juice, along with lime juice, parsley and chives. Toss well and season with salt and pepper to taste. Divide among 4 plates and serve immediately.

ENDIVE AND APPLE SALAD

Endive and Apple Salad image

This salad came to The Times from Kathryn Anible, a personal chef in New York, whose solution to adding color to your winter table lies in this fresh, crunchy salad. "I just like it because the endive is not frequently used in salads, and it tends to be a little bitter," she said. "The apple sweetens it up a little bit and makes it more approachable. It has a nice crunchy, fresh texture."
