FRENCH BEEF STEW



French Beef Stew image

Quick and easy, this is a very hearty stew, in truth, a meal in itself. Serve with warm crusty French Bread, if desired.

Number Of Ingredients 10

1 ½ pounds cubed beef stew meat
¼ cup all-purpose flour
2 tablespoons vegetable oil
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (14 ounce) can beef broth
4 carrots, chopped
2 potatoes, peeled and chopped
¾ teaspoon dried thyme
2 tablespoons Dijon-style prepared mustard
salt and pepper to taste

Steps:

  • Combine meat and flour in a large plastic food storage bag and toss to coat evenly.
  • In a 6 quart saucepan brown meat in hot vegetable oil. Season with salt and pepper, if desired.
  • Add diced tomatoes, beef broth, carrots, potatoes and thyme. Bring to boil; reduce heat to medium-low, cover; and simmer for 1 hour or until beef is tender.
  • Blend in mustard and serve.

1/2 lb flour (about 2 cups)
4 oz margarine
1 teaspoon vinegar
1/4 pint of milk
3 oz brown sugar
3 oz cleaned currants
2 teaspoons cocoa
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon ginger
grated lemon rind

Steps:

  • Grease a cake tin. Rub margarine into the flour in a basin. Add the dry ingredients. Mix well. Add the soda dissolved in vinegar and milk. Beat well. Turn into the tin. Bake in a moderate oven for about two hours.

3 medium potatoes, peeled and cubed
2 pounds beef stew meat
4 medium carrots, sliced
2 medium onions, sliced
3 celery ribs, sliced
2 cups tomato juice
1 cup water
1/3 cup quick-cooking tapioca
1 tablespoon sugar
1 tablespoon salt
1 teaspoon dried basil
1/2 teaspoon pepper

Steps:

  • Place the potatoes in a greased 5-qt. slow cooker. Top with the beef, carrots, onions and celery. In a large bowl, combine the remaining ingredients. Pour over the vegetables. , Cover and cook on low for 9-10 hours or until meat and vegetables are tender.

  • Chop up the vegetables, carrots into small pieces, other veg larger pieces and add to pint of boiling water with stock cube in.
  • As the veg becomes tender mix in 1/2 can corned beef and crumble in the stale bread or biscuits/crackers and simmer for a few more minutes.
  • Eat and enjoy
