CORN BREAD
I've tried many recipes for corn bread. But my family and friends agree my version is one of the best they've tasted. It turns our moist and delicious every time.

Steps:
- Combine the first five ingredients. Add milk, egg and butter; stir until dry ingredients are moistened. Pour batter into a greased 8-in. square baking pan. Bake at 400° for 20-25 minutes or until golden brown and a toothpick inserted in the center of the bread comes out clean. Serve warm.

Steps:
- Preheat oven to 350° F and lightly grease a 8″x8″ square baking dish or 9 inch round pan.
- Blend dry ingredients together in a large bowl.
- Mix in softened butter. Blend in milk, sour cream and egg. Beat until moist. Pour the batter into prepared pan and place in preheated oven. Bake around 30-35 minutes, until surface starts to crack and edges pull away from pan.
- If you are using heavy glass bakeware, it may take 5 - 10 minutes longer. A toothpick inserted near the center of the bread should test dry when it is done.

MOM'S ISLAND TREASURES
Soft and chewy. Made with milk chocolate chips, coconut, and pecans. They are a favorite at church and at home.

- Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking powder, baking soda and salt; set aside.
- In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg then stir in the vanilla. Gradually mix in the dry ingredients. Mix in the chocolate chips, coconut and pecans. Roll dough into 1 inch balls and place the cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

CAYMAN ISLANDS CORNBREAD
Adapted from the RSVP section of an old issue of Bon Appetit. This recipe was from a resort in the Cayman Islands. This is a sweeter, more cake-like cornbread and has a bit of rum in it.

- Preheat oven to 350°F.
- Grease a 9-inch square baking pan well.
- Combine flour, cornmeal, sugar, baking powder, cinnamon, nutmeg, and salt.
- Whisk together both types of milk, eggs, butter, rum, and vanilla in another bowl.
- Combine both mixtures using a wooden spoon, just enough to dampen all ingredients (it will still be a bit lumpy).
- Pour into prepared pan and bake until golden brown and cake tester comes out clean, about 45 minutes.
- Let cool on rack slightly before cutting into 12 small squares.
ISLAND TREASURE COOKIES
From a Nestle' Toll House cookbook. Walnuts or pecans can be used in place of the Macadamias if desired.

- Preheat oven to 375. In small bowl combine flour, baking powder, baking soda and salt. In large bowl with electric mixer at medium speed, beat butter, sugars and vanilla until creamy. Beat in egg. Gradually blend in flour mixture. Stir in coconut, nuts and chocolate. Drop dough by slightly rounded tablespoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until edges are lightly browned. Let stand 2 minutes. Remove to wire racks to cook completely.
TREASURE ISLAND CHICKEN
A sweet and tangy chicken with sauce left over to use as a gravy. Love to serve this with rice and peas and cover the chicken and rice with the sauce before serving. Got this recipe from Mom.

- Remove skin from chicken breasts and legs. Place chicken in baking dish bone side up. Amount of chicken you can cook depends on the size of your baking dish. 2 QT dish can make just over 3 lbs, which should be enough to serve 6.
- Bake chicken at 350 degrees for 30 minutes.
- After chicken has cooked for about 20 minutes, melt butter in saucepan. Once melted, stir in remaining ingredients. Cook over medium heat and stir sauce until thickened.
- Remove chicken from oven and dish. Drain fat and wipe down dish. Place chicken back in dish bone side down. Cover with sauce and bake at 350 degrees for another 30 minutes.
- Remove chicken from oven and dish. Drain sauce from dish into gravy boat. As stated, love to serve with rice and peas, but that all open to interpretation. Cover chicken and rice with sauce at will before serving. Then get down to enjoying the tasty goodness.
TREASURE ISLAND COOKIES
A nice twist of a chocolate chip cookie with macadamia nuts and shredded coconut. Found in a Toll House cookie booklet published in 1990 (one I've been using for years and finally adding to this site.)

- Preheat oven to 375°F.
- In a small bowl, whisk together flour, baking powder, baking soda and salt; set aside.
