A traditional Scottish icing. Very easy and quick preparation. Great with Traditional Scottish Sheet Cake.

Number Of Ingredients 6

1/2 cup oleo
4 tablespoons cocoa
6 tablespoons milk
1 lb powdered sugar
1 teaspoon vanilla extract
1 cup coconut (flaked) or 1 cup nuts

Steps:

  • Bring milk, oleo, and cocoa to a rapid boil.
  • Add powdered sugar, vanilla and coconut.
  • Boil until thoroughly mixed.

Posting this as requested by another member. This comes from an old traditional Scottish cookery book.Not sure how like the ones we get in all the local bakers these will be.

Number Of Ingredients 9

4 ounces drippings
1/2 pint water
1 lb flour
1/2 teaspoon salt
12 ounces lean mutton
1 small onion, chopped
salt and pepper
beaten egg
gravy

Steps:

  • Pastry:.
  • Make the pastry by putting dripping and ½ pint of water in a saucepan. Bring to the boil. Sieve flour and salt, make well in the centre and pour in the hot liquid.
  • Mix to a dough with a knife, then knead on a floured board till free of cracks. Cut off a quarter of the pastry and keep it warm. Line six small tins or shape some cases round the base of a glass.
  • Filling:.
  • Cut the mutton into small pieces and mix with the chopped onion. Add the seasoning. Use a little stock to moisten and fill the pies, put on the lids, wetting the edges and sticking them firmly together. Make a hole in the top of each. Brush the pies with a little beaten egg. Bake in a moderate oven for 40 minutes. Serve hot, filling them up with a little hot gravy.

Traditional sheet cake from Glasgow. This cake is very easy to make from scratch. Be sure to top it off with a layer of Scottish icing for a delicious, cultural treat.

2 cups flour
2 cups sugar
1/2 cup oleo
1/4 cup Crisco
4 tablespoons cocoa
1 cup hot water
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla extract

Steps:

  • Sift flour and sugar together, set aside.
  • Bring 1 cup water to a boil.
  • Mix oleo, Crisco, and cocoa together.
  • Stir in flour and sugar mixture.
  • Blend in boiling water.
  • Add buttermilk, soda, eggs, and vanilla.
  • Pour mix into baking sheet and bake at 375 degrees for 30 minutes.
  • Ice with Scottish icing.
