- Preheat oven to 350 degrees F (175 degrees C).
- Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Stir in 1/2 cup of cheese and heat mixture for another 2 to 3 minutes. Transfer green bean mixture to a casserole dish and sprinkle with French fried onions and remaining cheese.

- Preheat the oven to 350°F. Grease a 9x13-inch or 3-quart shallow baking dish.
- In a large deep pan or skillet melt the butter over medium high heat. Add the mushrooms and sauté them until they have released their liquid, the liquid evaporates, and the mushrooms start to turn golden brown at the edges, about 8 minutes. Add the shallots and sauté for another 3 minutes until the shallots become tender and golden and the mushrooms brown a bit more. Stir in the flour and cook, stirring often for another 2 minutes until the flour is well incorporated.
- Slowly add the milk and broth, stirring, and bring the liquid to a simmer. Add the soy or Worcestershire sauce. Reduce the heat to medium low and continue cooking the mixture at a gentle simmer for about 5 minutes until the sauce has thickened. Stir in the drained green beans, season with salt and pepper, and transfer the mixture to the prepared baking dish.
- Bake for about 20 minutes until the top is golden brown and the casserole is bubbling. Evenly distribute the fried onions on top of the casserole, and bake for another 5 minutes to heat and toast the onions. Serve the casserole hot or warm.

- Bring a large pot of salted water to a boil. In the meantime, prepare an ice water bath by filling a large bowl with cold water and ice. Cook green beans in the boiling water for 3 to 4 minutes, until tender. Drain and immediately submerge in ice water bath to stop the cooking. Drain.
- In a large skillet, melt butter over medium heat. Add onion and cook until translucent, stirring often, about 8 minutes. Stir in mushrooms and cook 7 to 8 minutes. Add the flour and continuously stir for 2 minutes. Whisk in half-and-half, salt, and pepper. Continue to stir until the mixture begins to coat the back of a wooden spoon. Turn off the heat and whisk in parmesan and vinegar. Toss the green beans in the mixture until evenly coated and transfer to prepared baking dish.
- Bake for 20 minutes. Remove from oven and top with fried onions. Bake for an additional 5 minutes and serve.
