8 tablespoons pizza sauce
2 cups shredded mozzarella cheese
24 slices pepperoni

Steps:

  • Preheat the oven to 350.
  • Spread the pizza sauce over the tortilla.
  • Sprinkle with cheese and top with pepperoni.
  • Bake 10-12 minutes, or until cheese is melted and bubbling.

1 tablespoon salted butter
1 tablespoon olive oil
Two 10-inch flour tortillas
One 14-ounce jar pizza sauce
3/4 cup shredded provolone
3/4 cup shredded fontina cheese
1 1/4 cups shredded mozzarella
2 tablespoons grated Parmesan
1 teaspoon dried oregano
1/4 red bell pepper, seeded, halved crosswise and cut into very thin strips
1/4 small red onion, sliced into very thin half-moons
15 pepperoni slices
2 tablespoons Kalamata olives, pitted and halved
1/8 cup torn fresh basil leaves

Steps:

  • Preheat the broiler.
  • Heat the butter and oil in a large, oven-safe skillet over medium-high heat. Place one flour tortilla in the skillet. Spread a few tablespoons pizza sauce on the tortilla, leaving a little room around the edges. Sprinkle half of the provolone and half of the fontina over the sauce. Sprinkle a third of the mozzarella next, followed by 1 tablespoon Parmesan and 1/2 teaspoon oregano.
  • Top with the second tortilla and press it down gently. Once the underside is perfectly toasted, carefully flip the quesadilla to the other side.
  • Spread a few more tablespoons pizza sauce on the toasted side of the tortilla, being sure to leave a little bit of the edges exposed so it looks like a pizza. Sprinkle with another third of the mozzarella and the remaining provolone, fontina, Parmesan and oregano.
  • Arrange the red bell pepper and red onion on top of the cheeses like you would on a pizza. Do the same with the pepperoni slices and the olives. Top with the remaining mozzarella.
  • Transfer the pan to the broiler and let cook to melt the cheese on top, about 2 minutes. Carefully transfer the pizzadilla to a cutting board using a large spatula or two smaller spatulas.
  • Warm up the remaining pizza sauce and serve in a bowl for dipping. Cut the pizzadilla into wedges and garnish with the torn basil.

12 6-inch flour tortillas
vegetable oil (for frying)
1 (16 ounce) can refried beans
1/2 cup minced onion
1 (4 ounce) can chopped green chilies
1 1/2 cups grated monterey jack cheese
1 cup chopped red bell pepper
1 1/2 cups grated cheddar cheese
2 cups picante sauce
4 tablespoons sour cream
sliced ripe olives (to garnish)

Steps:

  • Fry tortillas in oil until lightly crisp.
  • Pat dry on paper towels.
  • Heat oven to 375*F.
  • Spread refried beans on 4 tortillas.
  • Place tortillas on 2 ungreased baking sheets.
  • Place a second tortilla on top of each of the tortillas with beans.
  • Evenly divide onions, chilies, Monterey jack cheese and peppers and sprinkle on second tortilla layers.
  • Cover with third tortillas.
  • Sprinkle this layer with cheddar cheese.
  • (Can be prepared ahead up to this point) Pour picante sauce over top of each stack and bake for 15 to 20 minutes until heated through and cheese is melted.
  • Use a spatula to carefully transfer each stack to individual plates.
  • Just before serving, top with a tablespoon of sour cream and garnish with black olives.

3 tablespoons minced fresh cilantro
3/4 cup roasted garlic
Olive Oil
2/3 cup canola oil
4 cups small-diced red onion (about 2 pounds)
3 tablespoons unsalted butter
2 tablespoons sugar
5 tablespoons grated Parmesan
1/4 cup mayonnaise
Kosher salt and freshly ground black pepper

Twelve 8-inch flour tortillas
2 tablespoons balsamic vinegar

Steps:

  • Add the garlic to a skillet over low heat with a little olive oil and cook until the garlic just squishes.
  • Meanwhile, in a large skillet over medium heat, heat the canola oil. Add the onions and cook until lightly browned but not overly dark, about 5 minutes, stirring regularly. Add the butter and sugar and cook until the onions have thoroughly browned, 20 to 25 minutes.
  • Add the roasted garlic, Parmesan, mayonnaise, cilantro and salt and pepper to taste and stir to combine. Remove from the heat, transfer to a medium bowl and set aside to cool. Cover and refrigerate for at least 4 hours.
  • Reserve one-third of the mixture in the refrigerator to use to make the dipping sauce. Evenly spread the remaining mixture on the top of 11 of the tortillas. Stack the tortillas on top of one another and top with the remaining tortilla. Wrap the tortilla stack in plastic wrap and refrigerate for 12 to 24 hours to set up.
  • Preheat a grill to medium. Cut the stack into 16 wedges. Using tongs, grill each wedge on the cut sides until it's warmed and grill marks appear.
  • Mix the reserved onion mixture with the balsamic vinegar to make a dipping sauce; season to taste. Serve the wedges with the dipping sauce.

4 tbsp passata
1 garlic clove , crushed
½ tbsp olive oil
½ tsp dried herbs (mixed herbs, basil or oregano work well)
2 plain tortillas
50g grated mozzarella
6-8 slices pepperoni
6-8 pickled jalapeño slices

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Mix the passata, garlic, olive oil, herbs and season well. Put the tortillas onto one large baking sheet, or two smaller ones. Spread over the tomato sauce leaving a 1cm border around the edges. Scatter with the mozzarella, add the pepperoni and jalapeños. Bake for 6-8 minutes until the edges of the tortillas are crisp and golden, and the cheese has melted and is bubbling.
