Boil frozen cheese tortellini in fat-free broth, add a can of stewed tomatoes and your favourite vegetables ... a quick, easy and delicious homemade soup.

0.25 tsp(s) Minced garlic
29 oz Fat free chicken broth
4 oz Frozen cheese tortellini without sauce
4.5 oz Chopped frozen spinach thawed
14.5 oz Canned stewed tomatoes undrained

Steps:

  • Brown garlic in a large saucepan coated with cooking spray over medium-high heat, about 1 minute.
  • Add broth and tortellini; cover and bring to a boil. Reduce heat and simmer uncovered, about 5 minutes.
  • Add spinach and tomatoes and simmer uncovered, 5 minutes. Yields about 1 cup per serving.

7 cups chicken broth
Salt and pepper
1/2 pound green garlic shoots or ramps, thinly sliced
2 cups diced leeks, white and tender green part
4 scallions, thinly sliced
6 slices toasted baguette, optional
2 tablespoons slivered chives

Steps:

  • In a large saucepan, bring chicken broth to a boil, then reduce to a simmer. Add salt and pepper to taste.
  • Add green garlic shoots and leeks. Simmer 5 minutes. Check seasoning and adjust. (Soup may be made in advance up to this point, then reheated.) Just before serving, stir in scallions.
  • Ladle into soup bowls, add baguette slice if using, and sprinkle generously with chives.

3 cups cheese tortellini (fresh or frozen)
3 1/2 cups vegetable broth or 3 1/2 cups chicken broth
4 garlic cloves, minced
1 teaspoon dried sage or 1 teaspoon rosemary, crumbled
2 cups coarsely chopped cleaned spinach or 2 cups other greens
1 (16 ounce) can white beans or 1 (16 ounce) can navy beans, rinsed and drained
4 sun-dried tomatoes, minced
1/4 cup good quality grated parmesan cheese

Steps:

  • Cook the tortellini according to package directions.
  • Meanwhile, in a large saucepan, bring the broth, garlic, sage and 1 cup water to a boil.
  • Stir in the spinach, beans and tomatoes. Reduce the heat and simmer until the spinach and tomatoes are tender, about 5 minutes.
  • Stir in the tortellini and simmer 1 minute longer.
  • Sprinkle with the cheese and serve.
