TOREJAS(CUBAN-VERSION OF FRENCH TOAST)

Torejas(Cuban-Version of French Toast) image

These used to be served as a dessert en Noche Buena(Good Night)when the families would gather together and then go to La Misa del Gallo- Midnight Mass)Before Castro. A lot of the Cubans brought that tradition to Miami, where they could celebrate without the fear of being arrested for practicing Catholicism and eating food that was bought on the black market. This is the way the Cubans of before have adapted this recipe to the convenience of their cooking here in Miami or the USA and then I took some poetic license, as well.

Time 25m

Yield 6-8 slices

Number Of Ingredients 10

1 loaf French baguettes or 1 loaf Italian bread
4 eggs, beaten
2 teaspoons dark rum (or other liqueur) or 2 teaspoons Amaretto (or other liqueur)
6 ounces milk
6 ounces heavy cream
1 teaspoon almond extract or 1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon of freshly grated nutmeg
1/2 cup granulated sugar (or less)
coarsely chopped almonds (or some other nuts to compliment your dish, optional) (optional) or chopped macadamia nuts, to taste (or some other nuts to compliment your dish) (optional)

Steps:

  • Make sure the bread is stale, leave it out on a cookie sheet, to dry the day before.
  • Preheat the oven to 375ºF. Lightly grease baking sheet; set aside.
  • In medium-sized bowl; whisk ingredients to blend and then fold in almonds or other nuts, if using.
  • Dip or soak each slice well in egg/milk mixture. Soak throughly, about 5 minutes. Shake off excess liquid and then lay on cookies sheet.
  • Arrange the slices in a single layer on the prepared cookie sheet and bake for 10-14 minutes, until medium golden brown and crusty on the top.(But still moist and custard-like in the middle).
  • Serve warm with powdered sugar, sugar syrup, fruit syrup or maple syrup(tastes awesome with pineapple preserves with chopped macadamia nuts instead of almonds. Also, banana liqueur with banana slices & nuts).
  • Enjoy, as you watch the scale's numbers increase!

CLASSIC FRENCH TOAST

Classic French Toast image

Here's a recipe for the kind of French toast people line up for outside restaurants on Sunday morning. It's simple: no new ingredients, tools or technology needed. You don't even need stale bread. What you do need is thick-cut white bread, dunked into an egg-milk mixture with extra richness from egg yolks and heavy cream. That gives the French toast a buttery taste and firm but fluffy texture. (Oversoaking is the enemy here; the mixture should fill the bread, not cause it to break.) For an appetizing, lacy brown crust, sprinkle on sugar toward the end of cooking: It will caramelize and turn glossy. Just make sure to keep the heat low after you add the sugar. Otherwise, it could burn quickly over high heat.

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 whole eggs
2 egg yolks
2 cups whole milk, or 1 3/4 cups milk, plus 2 to 4 tablespoons cream
1 teaspoon vanilla extract (optional)
Pinch of salt
Unsalted butter, for cooking
8 slices white bread, such as Pullman, brioche or challah, sliced 1/2- to 3/4-inch thick
Cinnamon sugar or granulated sugar (see note)

Steps:

  • Heat oven to 200 degrees, and place a wire rack on a sheet pan inside.
  • In a shallow bowl, whisk the eggs, additional yolks, milk, vanilla (if using) and salt until foamy and smooth. Set aside. Place a small lump of butter (enough to coat the bottom of the skillet when melted) in a large, heavy nonstick skillet over low heat. It will melt very slowly.
  • When butter is just melted and bubbling, raise heat and bring to a sizzle. Place 2 slices of bread in the bowl with the egg mixture. Turn them a few times in the mixture until evenly saturated, about 5 seconds on each side. Do not soak.
  • Lift a slice out of the egg mixture, gently shake off any excess, and place in the pan. Repeat until the skillet is full, and let the slices cook at a sizzle for about 2 minutes, until just turning golden brown on the bottom.
  • Add another small lump of butter to the pan and flip the slices over, swirling the pan so that the fresh butter coats the bottom. (This will allow the second side to brown.)
  • Continue cooking over low heat until the second side is golden brown. Dust with cinnamon sugar, flip again, and dust the other side. Test for doneness by pressing the center: The dent should slowly spring back. If it remains, the interior is not yet cooked. Continue cooking at low heat, flipping occasionally, until done. Serve immediately, or transfer to the oven to keep warm while cooking remaining bread. Serve as soon as possible. Top with maple syrup, berries, jam, sliced bananas, orange supremes - whatever you'd like.

  • Cut your bread into 3/4-inch thick slices, to yield about 8 large or 12 medium slices of bread. If your bread is stale, move onto the next step. If your bread is fresh and soft, preheat the oven to 300 degrees Fahrenheit. Place the sliced bread onto a large, rimmed baking sheet lined with an oven-safe cooling rack (if you have one) and bake for 8 minutes. If the bread still feels soft and squishy on the bottom sides, flip them and bake for an additional 4 to 8 minutes. We’re aiming for “stale bread” texture, not crispy toast. Set aside to cool.
  • Gently warm the milk in the microwave or in a saucepan on the stovetop, just until it’s warmer than room temperature (otherwise, the melted butter will clump on impact). Set aside.
  • Separate the yolks from three eggs, reserving the whites for another use if desired. In a medium mixing bowl, whisk the egg yolks until well blended. Add the warmed milk, melted butter, maple syrup, vanilla, cinnamon and salt, and whisk until blended. Pour the mixture into a 9 by 13-inch baking dish.
  • If you’re using an electric skillet, preheat it to 350 degrees Fahrenheit now. Place the sliced bread in the egg mixture, working with one side at a time. Once the bottom sides have absorbed egg mixture to a depth of about 1/4-inch, flip each slice and repeat for the other side. Transfer the soaked slices to your prepared baking sheet.
