1 tablespoon olive oil
1 tablespoon butter
1 small onion (diced)
3 medium garlic cloves (minced)
1 cup carrots (chopped)
1 cup celery (chopped)
6 cups broth (vegetable or chicken)
2 cups crushed tomatoes (strained tomatoes or tomato sauce also works)
salt and black pepper (to taste)
2 bay leaves
½ teaspoon dried basil
½ teaspoon dried oregano
1 bay leaf (optional)
¾ cup orzo pasta (or pasta of choice)
5 cups spinach
Optional Topping: Freshly grated Parmesan cheese

Steps:

  • In a large heavy-bottomed pot, heat the butter and olive oil over medium-high heat.
  • Add onion, saute for 2 to 3 minutes. Add the garlic, carrots and celery and saute for an additional 4 minutes.
  • Add broth, crushed tomatoes, bay leaves, dried basil, dried oregano and season with salt and pepper. Let the soup come to a boil and add the orzo or pasta of choice. Reduce heat to a simmer and cook until pasta is al dente, stirring occasionally so orzo doesn't stick.
  • Taste to adjust seasoning and add spinach. Once wilted, remove bay leaves and serve soup with freshly grated Parmesan and fresh basil (if available).

2 tablespoons olive oil
1 medium onion, chopped
1-1/4 cups uncooked whole wheat orzo pasta
2 cans (14-1/2 ounces each) whole tomatoes, undrained, coarsely chopped
3 cups reduced-sodium chicken broth
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Crumbled feta cheese and minced fresh basil

Steps:

  • In large saucepan, heat oil over medium heat; saute onion until tender, 3-5 minutes. Add orzo; cook and stir until lightly toasted., Stir in tomatoes, broth and seasonings; bring to a boil. Reduce heat; simmer, covered, until orzo is tender, 15-20 minutes, stirring occasionally. If desired, top with feta and basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

3 tablespoons extra virgin olive oil
1 medium onion, peeled and chopped
2 cloves garlic, peeled and chopped
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
3 cups chicken broth or 3 cups vegetable broth
1 (10 ounce) package frozen spinach, defrosted
1 (28 ounce) can crushed peeled tomatoes
1 (10 ounce) can clams, whole or chopped
8 ounces cooked pasta

Steps:

  • Heat oil in a large soup pot over medium heat.
  • Lower the heat and add onion and garlic.
  • Cover and cook on low, stirring often for 10-15 minutes; or until onion is translucent.
  • Stir in basil, oregano, broth, spinach and tomatoes.
  • Cook through on low 5-10 minutes, or simmered up to 1 hour.
  • Add the clams and cooked pasta, heat for 3 minutes and serve.

1 large onion, chopped
1/4 cup butter, cubed
2 garlic cloves, minced
3 cans (28 ounces each) crushed tomatoes
1 carton (32 ounces) chicken broth
1 cup loosely packed basil leaves, chopped
1 tablespoon sugar
1/2 teaspoon pepper
1-1/4 cups uncooked orzo pasta
1 cup heavy whipping cream
1/2 cup grated Romano cheese

Steps:

  • In a Dutch oven, saute onion in butter for 3 minutes. Add garlic; cook 1-2 minutes longer or until onion is tender. Stir in the tomatoes, broth, basil, sugar and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Meanwhile, cook the orzo according to package directions; drain. Add orzo and cream to soup; heat through (do not boil). Sprinkle servings with cheese.

2 tbsp olive oil
1 onion, chopped
2 celery sticks, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
400g can chopped tomatoes
400g can chickpeas
150g orzo pasta
700ml vegetable stock
2 tbsp basil pesto
crusty bread, to serve

Steps:

  • Heat 1 tbsp olive oil in a large saucepan. Add the onion and celery and fry for 10-15 mins, or until starting to soften, then add the garlic and cook for 1 min more. Stir in all the other ingredients, except for the pesto and remaining oil, and bring to the boil.
  • Reduce the heat and leave to simmer for 6-8 mins, or until the orzo is tender. Season to taste, then ladle into bowls.
  • Stir the remaining oil with the pesto, then drizzle over the soup. Serve with chunks of crusty bread.

1/2 cup carrot, diced fine
2 tablespoons olive oil
4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
1 (28 ounce) can crushed tomatoes
32 ounces vegetable stock
salt
cracked black pepper
1 1/4 cups orzo pasta
1/2 cup reduced fat sour cream
2 tablespoons chopped fresh basil

Steps:

  • Add onions, celery, and carrots and olive oil to large stockpot on medium-high. Cook, stirring, 6-7 minute Add chopped garlic. Cook 2 min, until vegetables are tender.
  • Add all tomatoes; simmer about 10 minute Add stock; return to simmer. Season to taste with salt and pepper.
  • Add pasta. Simmer 8-10 min, stirring often, until pasta is firm but tender. Remove from heat.
  • Add sour cream to soup; fold in basil. Ladle into warmed bowls to serve.

20 cherrystone clams or 20 littleneck clams, scrubbed clean
5 cups chicken stock or 5 cups vegetable stock
1 medium carrot, juliened
1 large ripe tomatoes, peeled seeded and chopped to medium
8 medium mushrooms, sliced
3 green onions, sliced
1 tablespoon parsley
1 tablespoon soy sauce
1/2 orange bell pepper, juliened
16 slices orange rind, no pith,juliened
1/4 teaspoon hot red pepper flakes

Steps:

  • In a large saucepan add together the clams and stock.
  • Cover and bring to a boil.
  • Reduce heat and simmer for 5 minutes-you want the clams open.
  • If any didnt throw them out.
  • Add the carrots, tomato, mushroom, onions, parsley and soy sauce.
  • Return pot to a boil and boil for 3 minutes.
  • Remove from heat and add the orange pepper strips, orange peels and red pepper.
  • Ladle into bowls.

2 slices bacon, chopped
1/2 cup onion, chopped
2 cups water
1 (14 1/2 ounce) can no-salt-added stewed tomatoes, un-drained, cut up
1 (8 ounce) bottle clam juice
1/2 cup orzo pasta, uncooked
1/2 teaspoon dried basil leaves
2 (6 1/2 ounce) cans minced clams, un-drained

Steps:

  • Cook bacon in large nonstick saucepan over medium heat until browned. Remove bacon from saucepan with slotted spoon; drain on paper towels. Set aside.
  • Add onion to bacon drippings; cook and stir over medium heat for 1 to 2 minutes or until tender.
