CHEESY SMOKED SAUSAGE CASSEROLE
My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
- Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

Steps:
- In a mixing bowl, combine the first three ingredients.
- Place in buttered baking dish.
- Place cut sausage on top of noodles and tomato mixture.
- Cut butter or margarine into small pats and dot casserole.
- Bake at 350 for 25-30 minutes or until sausage is browned and casserole is bubbly.

- Place torn bread pieces into a large, greased pan.
- Sprinkle tomatoes over bread and then layer sausage on top.
- Mix eggs, milk, salt, pepper, and onion powder.
- Pour egg mixture on top of bread and meat and then sprinkle cheese on top.
- Cover and refrigerate overnight.
- Bake covered in a preheated 350 degree oven for 30 minutes. Remove cover and bake an additional 30 minutes.

GREEN TOMATO AND SAUSAGE CASSEROLE
This is an adaptation of a couple of different green tomato casserole recipes I clipped from magazines years ago. A variety of different sausage types can be used. Try it with wieners or franks.

Steps:
- Saute onion, green tomato, chilies, carrot and garlic in oil or butter for a few minutes.
- Transfer to a 2 1/2 quart casserole sprayed with no-stick spray or lightly buttered.
- Stir in rice, sausage and parsley.
- Heat broth to boiling and add to casserole.
- Cover tightly and bake at 350 F for about 40-45 minutes or till rice is done and liquid is absorbed.
- Check after about 30 minutes and add a little additional broth or water if it seems to dry.

I love Mac and Cheese with tomatoes. Using Rotel tomatoes adds a touch of heat and the sausage enriches the other ingredients.

Steps:
- Preheat oven to 350°F.
- Grease a 2 quart shallow casserole.
- Heat water for the macaroni.
- Brown sausage in a large skillet, breaking up the sausage with the side of a spoon as it cooks.
- Pour into a colander to drain.
- Add the milk and processed cheese to the skillet, cook and stir over low heat until the cheese is melted.
- Stir in the sausage and tomatoes and remove from the heat.
- Cook the macaroni according to package directions while making the sauce, drain and mix into the sausage, cheese, tomato mixture.
- Spoon into the prepared casserole, top with grated cheese and bake 25-30 minutes.
- Let stand 5-10 minutes before serving.

- Add pesto, puree, herbs, toms and paprika.
- put in casserole dish with a little water.
- Put in oven at 180-200 degrees C and cook for at least 1 hour.
- Uncover for last 1/2 hour to brown some of sausages.
