TOMATO AND LEEK FRITTATA (SBD PHASE 1)

I've finally gotten a chance to make this so I want to revise my description and add some information. Delish! this is a relatively easy recipe that can be eaten for pretty much any meal of the day. It would make a lovely addition to a brunch buffet as well as a nice light supper with a salad. I've made this recipe using half egg beaters and half real eggs, and I've also substituted 1/3 C grated parmesan or locatelli instead of cheddar... either way it turns out terriffic

2 teaspoons extra virgin olive oil
2 medium leeks, cleaned and thinly sliced (white parts only)
1 tablespoon fresh thyme leave
8 large eggs
1/4 cup nonfat milk
salt and black pepper
1/2 cup white cheddar cheese, shredded
2 small tomatoes, thinly sliced crosswise
1/4 teaspoon dried oregano

Steps:

  • Preheat oven to 350°F Warm oil in 10" ovenproof nonstick skillet over medium heat.
  • Add leeks; cook 8 minutes, until softened, stirring. Reduce heat to medium-low.
  • In a medium bowl, whisk together eggs, fresh thyme leaves, milk, salt, and pepper. Stir in cheese.
  • Pour over leek mixture in skillet.
  • Gently lift up leek mixture to coat bottom of pan.
  • Arrange tomato slices in overlapping pattern on top.
  • Sprinkle dried oregano over all.
  • Cook 8 minutes, until sides are set but mixture is still loose on top.
  • Transfer skillet to oven and cook 10 minutes, until center is cooked through and tomatoes are lightly browned.
  • Remove from oven; run a rubber spatula around edges and underneath to loosen frittata from skillet.
  • Slide onto serving platter. Cut into wedges.

Tomato Frittata With Fresh Marjoram or Thyme image

One of my summer favorites, this frittata makes a perfect and substantial meal served cold or at room temperature.

Number Of Ingredients 8

1 1/4 pounds ripe, locally grown tomatoes
1 or 2 garlic cloves (to taste), minced or puréed
Salt
freshly ground pepper
1 tablespoon fresh marjoram leaves or 2 teaspoons fresh thyme leaves
8 large eggs
2 tablespoons low-fat milk
1 tablespoon extra virgin olive oil

Steps:

  • Divide the tomatoes into two batches. Slice one batch into rounds (about 1/3 inch thick), and seed and chop the other batch. Toss the chopped tomatoes in a bowl with the garlic and salt and pepper to taste.
  • Beat the eggs in a bowl, and stir in salt and pepper to taste, milk and half the marjoram or thyme. Stir in the chopped tomatoes.
  • Heat the olive oil over medium-high heat in a 10-inch heavy nonstick skillet. Hold your hand above it; it should feel hot. Drop a bit of egg into the pan; if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Tilt the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with a wooden or plastic spatula in your other hand, so as to let layers of eggs form during the first few minutes of cooking. Once a few layers of egg have cooked, arrange the tomato slices on top of the frittata, turn the heat down to low and cover the pan. (Use a pizza pan if you don't have a lid that will fit your skillet.) Cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the frittata with the spatula, tilting the pan so that the bottom doesn't burn. The eggs should be just about set; cook a few minutes longer if they're not.
  • Meanwhile, heat the broiler. Uncover the pan and place under the broiler, not too close to the heat, for one to three minutes, watching carefully to make sure the top doesn't burn. (At most, it should brown very slightly and puff under the broiler.) Remove from the heat, shake the pan to make sure the frittata isn't sticking, and allow it to cool for 5 to 15 minutes. Sprinkle on the remaining marjoram or thyme. Loosen the edges with the spatula. Carefully slide from the pan onto a large round platter. Cut into wedges. Serve hot, warm, at room temperature or cold.

Pasta is just one destination for my summer marinara sauce. Stir it into beaten eggs and make this beautiful salmon-colored, intensely savory frittata that tastes terrific cold.

4 eggs
1 tablespoon milk
Salt and freshly ground pepper to taste
1/4 cup marinara sauce
1 tablespoon, tightly packed, freshly grated Parmesan
2 teaspoons extra virgin olive oil

Steps:

  • Beat the eggs in a bowl with the milk and salt and pepper to taste. Beat in the marinara sauce and the Parmesan.
  • Heat the olive oil over medium-high heat in a heavy, 8-inch nonstick omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden.
  • If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

Light, subtle flavor. From "Seasonal Food" by Susannah Blake. Try to find sun-dried tomatoes that are not packed in oil, or dry your own tomatoes.

Number Of Ingredients 7

1 tablespoon olive oil
3 leeks, thinly sliced
5 sun-dried tomatoes, chopped
1 cup fresh parsley, chopped
8 eggs, beaten
salt and pepper
1/4 cup parsley, garnish

Steps:

  • Heat olive oil in 10-inch oven-proof skillet (cast iron or aluminum). Add leeks and cook on medium-low about 10 minutes.
  • Stir in sun-dried tomatoes and 1 cup parsley. Season with salt and pepper.
  • Heat broiler to high. Pour eggs over the vegetables in the skillet. Stir to mix.
  • Cook on low, scraping bottom of pan toward middle as it sets and letting uncooked egg run underneath. Cook in this manner until bottom is firm but top is still moist (about 10 minutes).
  • Place frittata under broiler and cook for about 5 minutes (until frittata is cooked throughout and golden on top).
  • Serve in skillet or carefully flip out of skillet, flipping again so it is right-side up. Garnish with parsley.

2 cups sliced leeks (white parts only)
Coarse salt and ground pepper, for seasoning
1 cup grape tomatoes
6 large eggs
4 large egg whites
1 cup crumbled goat cheese

Steps:

  • Preheat oven to 350 degrees. In a 10-inch, ovenproof nonstick skillet, heat 2 teaspoons olive oil over medium. Add 2 cups leeks; season with coarse salt and ground pepper. Cover; cook 2 minutes.
  • Transfer to a bowl (reserve skillet). In another bowl, beat eggs with egg whites; season with salt and pepper. Brush skillet with 1 teaspoon olive oil. Add eggs; sprinkle with vegetables and goat cheese, pushing down slightly. Cook over medium until edges are set, 3 minutes. Transfer to oven; bake 15 to 20 minutes.
