I couldn't believe that I could not find directions on here for how to toast pine nuts! This is what I found elsewhere online. It's so simple and so tasty, both to add to other dishes, and to munch on!

1 cup pine nuts
1 baking sheet

Steps:

  • spread pine nuts out in a single layer on a lipped baking sheet.
  • set on bottom rack of oven and broil for about 3-5 minutes.

Linguine with Garlic Sauce image

On a chilly evening, this creamy pasta toss is sure to please. It's rich and flavorful with smoky bacon, fresh spinach and toasted pine nuts.

12 ounces uncooked linguine
1/2 pound sliced bacon, diced
5 cups fresh baby spinach
1/2 cup chopped onion
1/2 teaspoon minced garlic
1-1/4 cups 2% milk
1 package (8 ounces) cream cheese, cubed
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1/2 cup pine nuts, toasted

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings., In the drippings, saute spinach and onion until spinach is wilted and onion is tender. Add garlic; cook 1 minute longer. Add the milk, cream cheese, butter, salt, nutmeg and pepper; stir until smooth. Stir in pine nuts and bacon; heat through. Drain pasta; toss with sauce.

  • Place the nuts in a dry skillet (no oil) over medium heat. Heat, shaking the pan and stirring often with a wooden spoon, until the nuts are fragrant and golden brown, about 3 minutes. Stay at the stove because the nuts can easily burn! Remove immediately from the heat and transfer to a plate to stop the cooking.
  • Preheat the oven to 350 degrees Fahrenheit. Place the nuts on a baking sheet in a single layer. Bake for about 5 minutes until fragrant and golden brown, stirring once. Do not stray far from the oven, since the nuts can go from toasted to burned quickly. Remove immediately and transfer to a plate to stop the cooking.
  • Use immediately. Or, allow to cool completely and store in an airtight container at room temperature for 1 week and refrigerated at least 2 months. (You also can extend the life by freezing nuts.)
