Number Of Ingredients 9

3 cups old-fashioned rolled oats
1 cup raw pumpkin seeds, hulled
1 cup raw sunflower seeds, hulled
1 cup coconut flakes
1 1/4 cup raw pecans, coarsely chopped
3/4 cup pure maple syrup, preferably Grade A
1/2 cup extra-virgin olive oil
1/2 cup packed light-brown sugar
Coarse salt

Steps:

  • Preheat oven to 300 degrees.
  • Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 45 minutes.
  • Remove granola from oven and season with salt. Let cool completely before serving or storing in an airtight container for up to 1 month.

4 cup(s) regular rolled oats
2 cup(s) walnuts, coarsely chopped
2/3 cup(s) unsweetened dried coconut (fine or medium grated)
2/3 cup(s) raw sesame seeds
1/4 cup(s) raw wheat germs
6 tablespoon(s) vegetable oil
6 tablespoon(s) honey or brown sugar
1 1/2 teaspoon(s) vanilla extract
3/4 teaspoon(s) ground cardamom or cinnamon
1 1/2 cup(s) raisins or dried fruits

Steps:

  • PROCEDURE: 1. Preheat the oven to 350F degrees. Mix oats, nuts, seeds and wheat germ by hand in a large bowl.
  • 2. Warm the oil in a small pan, add honey (or brown sugar) and stir gently until well blended. Add vanilla and cardamom (or cinnamon) and blend.
  • 3. Drizzle over the dry ingredients in the bowl and mix thoroughly by hand.
  • 4. Spread the mixture in a thin layer in one or two baking pans and roast in the preheated oven for 15 minutes, stirring every 5 minutes for even toasting.
  • 5. Remove from the oven and let cool for half hour. Put the granola back in the bowl and stir in the raisins or dried fruit by hand.
  • Store in airtight jars in a cool place or in the refrigerator.

SUPER LOW-FAT GRANOLA CEREAL

8 cups old-fashioned oats
1 cup raisins
1/2 cup chopped dried apricots
1/2 cup dried cranberries
1-1/2 cups packed brown sugar
1/2 cup water
1 teaspoon salt
1 teaspoon maple flavoring
1 teaspoon vanilla extract
2% milk or reduced-fat plain yogurt

Steps:

  • In a large bowl, combine the oats, raisins, apricots and cranberries; set aside. In a small saucepan, combine the brown sugar, water and salt. Cook and stir over medium heat for 3-4 minutes or until brown sugar is dissolved. Remove from the heat; stir in maple flavoring and vanilla. Pour over oat mixture; stir to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 25-30 minutes or until crisp, stirring every 10 minutes. Cool completely on wire racks. Store in an airtight container. Serve with milk or yogurt.

1/2 cup old-fashioned rolled oats
1/2 cup unsweetened coconut flakes
1/2 cup chopped pecans
1/2 teaspoon ground cinnamon
A pinch kosher salt
1/3 cup maple syrup
4 tablespoons unsalted butter
2 tablespoons brown sugar
1/2 cup corn puff cereal, such as Corn Pops
2 cups plain Greek yogurt
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1 cup raspberries
1 cup blueberries
1 cup blackberries

Steps:

  • For the granola: Line a baking sheet with parchment.
  • Toast the rolled oats, coconut, pecans, cinnamon and salt in a large skillet over medium heat until everything is toasted and aromatic, about 2 minutes. Stir in the maple syrup, butter and brown sugar. Bring the mixture to a simmer and let cook for about a minute to thicken slightly. Fold in the corn puff cereal until completely coated. Transfer the mixture to the prepared baking sheet, spreading it out in a single layer to let cool slightly.
  • For the parfait: While the granola is cooling off, stir together the yogurt, maple syrup, vanilla and cinnamon.
  • In 4 glasses or mason jars, layer in a spoonful of granola, a layer of yogurt and a layer of mixed raspberries, blueberries and blackberries, repeating as many times as your vessel will fit and finishing with a layer of yogurt. Top each parfait with a couple of berries. Serve right away or chill until ready to serve.

1 cup rolled oats
1 cup soy flakes
1 cup wheat flakes
1/2 cup packed light-brown sugar
1 cup roughly chopped pecans
Zest of 1 orange
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter
1/4 cup honey

Steps:

  • Heat oven to 350 degrees. Combine oats, flakes, sugar, nuts, zest, nutmeg, and cinnamon in a bowl. Melt butter and honey in a saucepan; add to mixture. Spread in a 7-by-11-inch baking pan; bake until just golden, 10 minutes. Let cool in pan. Mixture will harden. Break into pieces; serve. Store in an airtight container up to 10 days.
