- In a large saucepan, over medium-high heat, add peaches and rum; cook, stirring often, for 15 minutes or until peaches are tender.
- Pour peach mixture into the container of a blender; process until smooth.
- In a large bowl, mix together flour and next 7 ingredients.
- Add in peach mixture, egg, melted butter, and vanilla; mix well.
- Add almonds if desired and stir to combine.
- Pour batter into a greased and floured 8 1/2 x 4 1/2 inch loaf pan.
- Bake at 350 degrees for 30 minutes; cover with foil to prevent over-browning and bake 15 minutes more or until a pick comes out clean.
- Cool in pan on a wire rack for 15 minutes; remove loaf from pan to wire rack to cool completely.

A well textured, moist not overly sweet loaf. Took a loaf to work and everyone loved it.I've made this recipe several times. I used a good quality of canned peaches and it came out perfect. I copied this recipe from 50 plus sight.

- Cream sugar and shortning. Add eggs and mix thoroughly. Puree peaches in a blender, add to creamed mixture with dry ingredients. Mix thoroughly. Add vanilla extract and chopped nuts, stir until blended. Pour into two 9x5 inch well greased and floured loaf pans. Bake 325 degrees 55 to 60 minutes. Let set in pans a few minutes before removing.

HEAVENLY PEACH BREAD
I had fresh peaches that I needed to use so I tried this recipe. It had a different ingredient, Peach Schnapps. It is really good.

- Simmer diced peaches with Schnapps or peach nectar until peaches are tender, about 5 to 8 minutes. Remove from heat, add vanilla, and set aside.
- In a mixing bowl, cream butter and sugar. Add eggs, one at a time, blending well.
- In another bowl, combine flour, baking powder, salt, baking soda, and cinnamon. Add dry ingredients to the creamed mixture, alternating with peach mixture. Mix just until blended.
- Spread batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350° for about 55 to 65 minutes, until a toothpick inserted in center comes out clean.
- Cool on a rack in pan for 10 minutes; remove to cool completely.

- Lightly spray the insides of two smaller loaf pans - I use these 8" x 4" loaf pans with 3/4-pound capacity, which is a slightly smaller version than the regular 8" x 4" loaf pans with a 1-pound capacity. But this slightly smaller size is my favorite - I've been baking with them "forever". Set prepared pans aside.
- In large mixing bowl, stir together flour, baking powder, cinnamon, and salt. In a medium mixing bowl, beat eggs. Stir in sugar, oil, and vanilla.
- Add egg mixture to dry ingredients, stirring until just moistened, taking care to not over mix. Fold in nuts and 2 cups of the peaches. Spoon batter into the prepared pans - and then add remaining 1/4 c. peach pieces to top of batter, pressing them in just a bit. Bake for 55 to 60 minutes, or until a wooden toothpick inserted near the center of each loaf comes out just barely clean. My 3/4-pound capacity pans are slightly smaller than a regular 8" x 4" size with a 1-pound capacity, so you may need to adjust baking time according to your own pan size. Cool in the pans on wire racks for 10 minutes. Then loosen edges with a bread knife and remove loaves from pans. Cool completely on wire racks. Wrap and store overnight for easier slicing.
