1 kg / 2 lb baby potatoes ((Note 1))
2 tbsp salt ((for water))
1 cup green onions (, sliced)
1/4 cup parsley (, finely chopped)
5 tbsp / 75 ml extra virgin olive oil
1/4 cup / 65 ml lemon juice
1 tbsp lemon zest ((1 large lemon))
1 garlic clove, large, minced
1 tsp Dijon mustard
1.5 tsp sugar
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Dressing: Shake in a jar.

The secret to Ina Garden's zesty Potato Salad recipe from Barefoot Contessa on Food Network? Buttermilk and two mustards: Dijon and whole grain.

3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
  • Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
  • When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

10 pounds red potatoes
2/3 cup sweet pickle relish
1/2 cup yellow mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika, plus additional for sprinkling
12 large hard-boiled eggs, quartered
1/2 red onion, diced
1/2 green bell pepper, diced
3 to 4 cups mayonnaise

Steps:

  • Fill a large stockpot with heavily salted water and the potatoes and bring to a boil. Cook until tender, 20 to 25 minutes. Drain the potatoes and quarter when cool enough to handle.
  • Mix together the relish, mustard, garlic powder, onion powder, smoked paprika, eggs, onion, bell pepper, 3 cups mayo and a pinch of salt and pepper in a large bowl. Add the potatoes and toss until combined. Add additional mayo if the salad looks dry. Sprinkle with smoked paprika. Serve immediately or cover and refrigerate until ready to eat.

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Steps:

7 medium potatoes, cooked in their skin, and then diced up
1/3 cup Italian dressing (your choice as to brand)
3/4 cup sliced green onion, tops too
3 hard-boiled eggs, chopped
1 cup chopped celery
1 (2 ounce) jar chopped pimiento (undrained)
1/2 cup pickle relish, drained
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon prepared mustard
1 teaspoon seasoning salt
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon creole seasoning
paprika

Steps:

  • Boil potatoes until tender.
  • While still warm, dice potatoes.
  • Pour Italian dressing over potatoes.
  • Chill several hours.
  • Add onions, eggs, celery, pimento and pickle relish and toss.
  • Then add mayonnaise, sour cream, mustard and all other seasonings, except Paprika, and fold into potato mixture.
  • Refrigerate.
