4 halibut fillets (6-8 Oz Each)
1/4 cup tequila
1/2 cup fresh lime juice
2 tablespoons chopped cilantro
2 tablespoons garlic, chopped
salt and pepper
1/2 cup sour cream
1 tablespoon garlic, chopped
1 tablespoon chopped cilantro
1/2 teaspoon black pepper
1 dash tequila

Steps:

  • Marinate the Halibut in tequila, lime, cilantro, and garlic.
  • Sauce preparation: Blend sauce ingredients in blender or food processor.
  • Broil the fish and drizzle with sauce.
  • Serve with rice and seasonal vegetable and a wedge of lime.

TEQUILA AND LIME SWEET POTATOES

I'm posting this per a request of a friend. I have not tried it yet but have every intention of doing so. This is a very unique dish and can also be finished on a gas or charcoal grill. My broiling time is only approximate so keep a close eye on these potatoes under the broiler! The original recipe came from a local promotional cookbook out of Mobile, Alabama.

2 lbs sweet potatoes, peeled
1/4 cup fresh lime juice
2 tablespoons honey
1 tablespoon tequila
2 quarts water

Steps:

  • Cut the potatoes into 3/4" thick slices.
  • In a large saucepan, bring the water to a boil and then add the potatoes -- when they begin to re-boil, allow them to go for 6 minutes, uncovered, (they should be just tender) and then drain them with a colander.
  • Mix the lime juice, honey and tequila together in a small bowl.
  • Set up a large baking sheet on which there is a metal grill-type rack. Lay the potatoes out on the rack and brush them with the lime-honey-tequila sauce.
  • Broil the potatoes until they brown on one side, flip them and when they brown on the second side, they're done.
  • NOTE: A second option is to grill the brushed potatoes on a gas or charcoal grill.

1 slice high-quality white bread, torn into quarters
2 tablespoons whole milk
1 lb ground turkey
salt
pepper
2 tablespoons vegetable oil
2 onions, minced
2 tablespoons chili powder
2 tablespoons tomato paste
3 garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons minced fresh oregano (or 1/2 t. dried)
1/4 teaspoon red pepper flakes
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can pinto beans, drained and rinsed
1/4 cup tequila
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon minced canned chipotle chile in adobo
1 teaspoon grated lime zest
1 tablespoon fresh lime juice

Steps:

  • Mash bread and milk into paste in a large bowl using fork.
  • Mix in ground turkey, 1/4 teaspoon salt, and 1/4 teaspoon pepper using hands.
  • Heat oil in a 12-inch skillet over med-high heat until shimmering.
  • Add onions, chili powder, tomato paste, garlic, cumin, oregano, and red pepper flakes and cook until vegetables are softened and lightly browned, 8-10 minutes.
  • Stir in turkey mixture and cook, breaking up any large pieces with wooden spoon, until no longer pink, about 3 minutes.
  • Stir in tomato sauce, scraping up any browned bits; transfer to slow cooker.
  • Stir diced tomatoes with juice, beans, 3 tablespoons tequila, soy sauce, honey, and chipotles into slow cooker.
  • Cover and cook until turkey is tender, 4-6 hours on LOW.
  • Let chili settle for 5 minutes, then remove fat from surface using large spoon.
  • Break up any remaining large pieces of turkey with spoon.
  • Stir in remaining tablespoon tequila, lime zest, and lime juice.
  • Season with salt, pepper, more tequila and lime juice to taste, if needed; serve.

2 (11 ounce) boxes plantains, Goya ripe sliced
1 lb ground beef, lean
1/4 cup sofrito sauce, ready made
2 tablespoons vegetable oil
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/4 cup tomatoes, chopped
8 ounces green beans
4 ounces tomato sauce
1 tablespoon olive, sliced
1 teaspoon capers (optional)
1 teaspoon salt
1 teaspoon black pepper
1 1/2 cups cheese, shredded, colby jack
2 eggs, slightly beaten with 2 tbsp. water

Steps:

  • In a skillet heat up the oil, add the sofrito, peppers, onion, and tomato, and cook for about 2 minutes or so. Add the meat and cook until done, breaking down the meat as you go. Add tomato sauce, olives with pimentos and the capers, salt and black pepper. Stir and set aside.
  • Heat up the platains in the microwave until hot. Then mash them down slightly using a fork. Pray the bottom and sides of a 9-inch pie plate with oil and layer with slices of plantain (these come already cooked) - one box. Layer half the meat over that, sprinkle with a it of cheese, half the green beans then the other box of plantains and then the rest of the meat, and rest of the green beans. Sprinkle cheese over the last layer. Pour the egg as evenly as you can over the cheese.
  • Cook at 400 degrees for about 20 minutes until egg is cooked and cheese is melted. Serve warm.
  • This is a delicious side dish with rice or a great lunch with a salad. It is also a great 'cover dish' recipe.
  • * Hint - Heat up the amarillos in the same paper tray they come inches Pour one box in the pie dish and use a fork to mash them down and sort of mash them together to form a crust. Because they were heated in the microwave they are easy to mash down. Once you are ready for the next layer, mash the next box one at a time on the tray and layer over the meat. Here you will probably have a few empty spaces, just try to mash them down enough to cover as much of the meat as possible. Since all the ingredients are already warm or hot, all you have to do is bake it just long enough to cook the egg. If you will be serving this later, just cook it as you would, them warm it up covered with foil and them remove foil and broil for a few minutes until egg is crispy.
