Oma's Thunfischsalat - Tuna Salad image

Found this in a website about Austrian food - this is pretty much how my German mom always made it. If you can find sour pickles in a European specialty store, all the better!

2 can(s) tuna, drained (about 5 to 7 ounces each)
1 small onion, minced
2 medium dill pickles, minced
2 hard-boiled eggs, diced
3 Tbsp lemon juice (or juice of 1 lemon)
5 Tbsp mayonnaise (light is ok)

Steps:

  • 1. Mix everything together in a bowl.
  • 2. Spread on hearty rye or multi-grain bread.

I learned this recipe from my German friend, Nina while helping her family prepare food for a wedding in Denklingden, Germany. The proportions of the vegetables can vary, depending on your preference. You must season to taste. This is great when left in the fridge overnight as well.

2 (6 ounce) cans canned tuna
3 tomatoes
3 bell peppers
1 cucumber
0.5 (8 ounce) can canned corn
1/4 cup parsley
3 tablespoons olive oil
3 tablespoons white vinegar
3 tablespoons salt
3 teaspoons pepper

Steps:

  • Thinly slice the tomatoes and the cucumber.
  • Dice the bell peppers (using 3 different colors of peppers looks better).
  • Chop the parsley.
  • Add these, and all other ingredients together in a large bowl and toss repeatedly.
  • Salt and pepper to taste.

1 canned tuna (6 oz)
1 middle-size onion
1/2 bunch parsley
2 tablespoons lemon juice
3 -4 tablespoons vegetable oil
salt
pepper

Steps:

  • Cut the tuna into small pieces.
  • Chop the onion finely, cut the parsley and mix with the tuna.
  • Sift the spices into the lemon juice, pour over the tuna and vegetables and dress with the oil.

3 tablespoons Miracle Whip light
1/2 granny smith apple (chopped)
1/4 red onion, diced
1 tablespoon Italian dressing

Steps:

  • Drain the can of tuna a empty the can into a bowl.
  • Add the mircle whip to the tuna and mash together with a fork.
  • Add the apple and onion to the tuna.
  • Mix in the italian dressing. I just poor it on so the above amount is just an estimation. Just add a little at a time to your taste preferences.
  • Fills two pitas genrously.

1 small red onion, minced
2 tablespoons snipped chives

paprika (to garnish)

Steps:

  • Mix and serve with whole grain rolls and butter, or as a sandwich, if you prefer.

1/3 cup light mayonnaise (or add more to taste)
1 apple, large chopped in small pieces
1/4 cup onion, chopped fine
3 celery ribs, meduim to small chopped fine, without leaves
2 large dill pickles
2 -3 tablespoons pickle juice

Steps:

  • 1. Empty tuna and packing water into a bowl. Break up the tuna until it is in fine shreds.
  • 2. Add the rest of the fruit and vegetables and mix well.
  • 3. Add mayo and pickle juice and you're done!
  • Mixture should be nicely damp, Perfect for sandwiches or crackers!

1 lemon, juice of
1 bunch parsley
1 egg yolk
1 garlic clove
3 -4 tablespoons olive oil

  • Wash and peel fresh mushrooms, slice finely and sprinkle with lemon juice. Beat the yolk with salt, pepper and the rest of lemon juice, and put the garlic clove through the garlic press into the yolk mixture.
  • Gradually add the olive oil.

1 1/2 teaspoons minced fresh ginger
2 (6 ounce) cans water-packed chunk light tuna, drained
1 cup sliced sugar snap pea (may sub snow peas)
2 scallions, sliced
6 cups thinly sliced napa cabbage
4 radishes, sliced (I used red bell pepper instead)
1/4 cup fresh cilantro leaves
1 tablespoon sesame seeds (I used sunflower seeds instead)

Steps:

  • Whisk vinegar (or lemon juice), canola oil, soy sauce, sesame oil, sugar and ginger in a small bowl.
  • Combine 3 tablespoons of the dressing with tuna, peas and scallions in a medium bowl.
