3-INGREDIENT BROWNIE BATTER COOKIES
Somehow we found a way to make chocolate chip cookies even better by stuffing them with a super-tasty brownie batter filling!

Steps:
- Heat oven to 350°F. In medium bowl, place brownies and cream cheese; mix well. Roll mixture into 8 balls.
- Line large cookie sheet with cooking parchment paper. Cut cookie dough into 16 slices. Flatten slices; form 2 slices of cookie dough around 1 brownie ball, completely sealing edges of dough and forming into ball. Place on cookie sheet, press down slightly. Repeat for remaining cookies, placing at least 2 inches apart on cookie sheet.
- Bake 15 to 20 minutes or until cookies are golden brown. Cool on cookie sheet 10 minutes; remove to cooling rack. Cool completely, about 30 minutes.

- In a small mixing bowl combine flour and baking powder.
- Beat oil, sugar, and cocoa together in a large mixing bowl. Add eggs to oil and cocoa mixture one egg at a time, beating well after each addition. Stir in vanilla. Mix in flour mixture. Fold in nuts if desired. Chill the dough overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
- Roll dough into walnut-size balls and roll each ball in confectioners' sugar.
- Bake cookies for 12 to 15 minutes.

- Preheat oven to 350 degrees. Place chocolate in a heatproof bowl set over (not in) a saucepan of simmering water. Stir until melted, then let cool.
- In a small bowl, whisk together flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and sugars until lightened in color. Add eggs and vanilla. Beat until combined. With mixer on low, alternately beat in chocolate and flour mixture; mix just until combined (do not overmix).
- Drop dough by heaping tablespoons, about 2 inches apart, onto two parchment-lined baking sheets. Bake until a toothpick inserted in center of a cookie comes out clean, 14 to 16 minutes. Transfer to wire racks to cool.

SUPER FUDGY THREE-WAY TOPPED BROWNIES
Steps:
- Heat oven to 350ºF.
- Place butter and sugar in bowl. Microwave 2 minutes or until mixture just starts to boil; stir until well mixed. Add 1 cup chocolate chips; stir until melted. Add eggs and vanilla; mix well. Add flour, baking powder and salt; mix well. Stir in remaining chocolate chips.

- Combine the first seven ingredients in a large mixing bowl.
- Beat at medium speed for 3 minutes.
- Pour batter into a greased 13"x9"2" baking pan.Bake at 350* for 30 minutes (top of brownies will still appear wet). Cool completely.
- Combine filling ingredients in medium bowl.
- Beat until creamy.
- Spread over cooled brownies.
- Refrigerate until set. For topping, melt chocolate chips and butter over low heat in a small saucepan.

THREE-WAY BROWNIE COOKIES
Steps:
- Spray cookie sheets with nonstick cooking spray or line with parchment paper and spray that. Pour the dry brownie mix into a mixing bowl. Add the flour and cinnamon. Mix thoroughly with a fork. Add the chopped nuts and mix them with the dry ingredients to coat them. In a separate bowl, whisk the oil and the eggs together. Pour the egg mixture into the bowl with the brownie mix. Stir until everything is combined, but DO NOT OVERSTIR. Stir in the chocolate chips and the raisins. Drop the cookies by rounded teaspoonfuls onto the cookie sheet, 12 cookies to a standard-sized sheet. Bake at 350 for 8 - 10 minutes. To test for doneness, lightly touch the top of a cookie. If it feel firm to the touch, they're done. Cool on the cookie sheet for 2 minutes and then remove the cookies to a wire rack to cool completely.
THREE-LAYER BROWNIES
One of the few recipes I make using mixes and cans, this is a fantastic dessert. It tastes amazing, looks great, and is amazingly easy. And it disappears almost as quickly as I put it down. I got the recipe from a neighbor after 6 months of begging (and 2 weeks of cat, dog and rabbit sitting). She almost never gave it out because it was her most requested recipe and everyone always thought she worked for hours. Don't substitute regular or fudge for the dark chocolate brownie mix. It makes a difference in the final flavors. And make it the night before so the texture and flavors have time to set.

- Prepare the dark chocolate brownie mix as directed on the package.
- When they are just done, remove from the oven, sprinkle with the peanut butter chips, cover with a cookie sheet and let sit for 5 minutes; remove cookie sheet and spread melted peanut butter chips over the brownies.
- Let cool until the peanut butter chips are firm enough to not get messed up when you frost them (put them in the refrigerator for a little while if necessary).
- When cool, frost with the cream cheese frosting and let sit at room temperature, uncovered, overnight so the flavors blend and the top of the frosting dries to a bit of a crust.
- Serve at room temperature.
- This is so good!
- *NOTE:These ingredients are to be used to prepare the dark chocolate brownie mix; if your mix calls for different amounts, use the package directions.

- Preheat oven to 375 degrees F (190 degrees C).
- Beat vegetable shortening and sugar with an electric mixer in a large bowl until smooth. Beat in one egg until completely incorporated. Beat in last egg along with vanilla extract and water. - Use a medium cookie scoop to portion out the batter into 2-tablespoon balls. The cookies will spread while baking, so I recommend only placing 8 cookies per baking sheet.
- Bake at 350 degrees for 9-10 minutes. My cookies were perfectly cooked at 10 minutes in a 350 degree oven, but I would recommend starting to check them around the 9-minute mark. They’re done when they’re no longer shiny on top, even though they may still look slightly underbaked overall.
