Number Of Ingredients 14

1 pound uncooked heirloom beans (Anasazi, butterscotch calypso, cranberry calypso and chestnut limas)
6 ears fresh sweet corn
1 pound yellow pear and red tear drop tomatoes
3 tablespoons olive oil
3 pounds assorted baby squashes (patty pan, sunburst, zucchini, yellow, etc.)
Sage pesto, (recipe follows)
Salt, to taste
1/2 cup olive oil
1/4 cup garlic, chopped
1 1/2 cups fresh sage, firmly packed
1/2 cup fresh parsley
1 cup pine nuts, dry roasted
1 teaspoon salt
1 lemon, juiced

Steps:

  • Toast pine nuts in dry saute pan. Pick sage leaves and parsley so as to leave little or no stem. Combine all ingredients in food processor or blender, process until a pesto consistency is achieved. May store in refrigerator for up to 2 weeks.
  • 3 SISTER SAUTE: Sort, rinse and cook beans separately in plenty of water, salting at the end. Rinse and trim squashes. Peel husk of corn down, but not off, remove silk and dress corn again with its husk. Dunk in cool water and grill for 5 to 8 minutes, turning. Let cool and slice kernels from cobs. Rinse tomatoes. Heat olive oil in large saute pan, add squash saute for 1 minute, then in succession, keeping pan moving add beans and saute for another 1 minute. Add the corn and saute another minute, and tomatoes and quickly saute, add sage pesto, stir to distribute. Season with salt if necessary. Serve immediately.

TRENETTE WITH POTATOES AND PESTO



Trenette with Potatoes and Pesto image

3 medium sized boiling potatoes, peeled and thinly sliced
1 pound fresh trenette (or linguine fini)
1 recipe pesto (recipe above)

Steps:

  • In 1 quart of boiling salted water place potatoes and cook until one minute shy of being done, about 6 minutes. Add the fresh pasta, return water to a boil and cook for 15 seconds or until pasta and potatoes are cooked through. Drain pasta and potatoes at once. Transfer to a warm platter and toss with pesto. Serve very hot accompanied by a bowl of grated cheese.

4 cups butternut squash, pumpkin or acorn squash baked with salt and pepper, some raw butter and a little cinnamon, cooled
2 cups medium diced yellow onion
4 tablespoons fresh crushed garlic
4 cups fresh corn from the cob
2 1/2 cups cooked yellow eyed beans, pinto beans can be substituted
2 1/2 cups anasazi beans
1 cup roasted, seeded and peeled and medium diced Anaheim chile
2 cups diced scallion
2 cups queso blanco, white cheddar or Monterey jack may be substituted
Olive oil for sauteing

Steps:

  • Preheat oven to 350 degrees. Medium dice half of the squash and puree the other half. In a large saute set over medium high heat, cook the onions until translucent, then add the garlic, corn, cooked beans, and diced squash and mix all ingredients together. Season with salt and pepper. Transfer to an oven proof casserole, stir in the squash puree and bake for about 45 minutes at 350 degrees. Remove from the oven, stir in the Anaheim chile, the scallions and sprinkle the cheese over the top. Return to oven to melt the cheese. Serve hot from the oven.;

TRADITIONAL PESTO

2 cups fresh basil leaves
1/2 cup olive oil
1/2 cup grated parmesan or romano
1/2 cup grated grana Padano
4 garlic cloves, chopped
1/2 cup pine nuts, toasted
1/4 teaspoon salt

Steps:

  • Using a pestle and mortar or a food processor, crush the basil. Add the olive oil, cheeses, garlic, pine nuts, salt, and crush until a paste is formed.
  • Serve with warm pasta, on top of pizza's, or plain with bread.

The Iroquois Indians cultivated and used the Three Sisters (corn, squash and beans) in their diet. This is a recipe passed down by our relatives. You may use regular corn instead of hominy, but hominy is more traditional.

2 cups canned white or yellow hominy, drained
2 cups fresh green beans, trimmed and snapped
2 cups peeled and cubed butternut squash
1 ½ cups diced peeled potatoes
5 cups water
1 ½ tablespoons chicken bouillon granules
2 tablespoons butter, melted
2 tablespoons all-purpose flour
¼ teaspoon pepper

Steps:

  • Place the hominy, green beans, squash, and potatoes into a pot, and pour in water and chicken bouillon. Bring to a boil, then reduce heat to low, and simmer until vegetables are soft, about 10 minutes. Blend flour into the butter, then stir into the soup. Increase heat to medium, and cook for 5 more minutes, or until soup thickens. Season with pepper, and serve.
