THREE SISTERS CASSEROLE

A hearty and nutritious vegetarian casserole that feeds a crowd. I've also made it non-vegetarian by adding a pound of ground beef with the onions and garlic. I plan on trying it with chicken breast as well. Adapted from Cook it Light Pasta, Rice, and Beans by Jeanne Jones (1994).

1 1/2 teaspoons cumin seeds
2 tablespoons olive oil
2 large onions, finely chopped
2 garlic cloves, minced
2 carrots, scraped and chopped
1 jalapeno pepper, seeded and finely chopped
1 (28 ounce) can tomatoes, undrained
1 1/2 cups frozen corn
3 medium zucchini, diced
8 ounces penne, cooked al dente
1 (16 ounce) can red kidney beans, rinsed and drained
4 ounces sharp cheddar cheese, shredded

Steps:

  • In a large non-stick skillet heat cumin seeds over low heat until aromatic.
  • Add olive oil, onion, and garlic and saute until the onion is soft and translucent.
  • Add the carrots, jalapeno, and tomatoes with juice and heat to boiling.
  • Reduce heat and simmer uncovered for 15 minutes.
  • Add the corn and zucchini and simmer 5 more minutes.
  • Add the cooked pasta and the beans and mix well.
  • At this point you can put the mixture into a 4 quart casserole, add cheese on top, and put in a 350 degree oven for about 5 minutes until the cheese melts. We usually just sprinkle cheese on top while it's still in the skillet. No sense in dirtying another dish :).

1 1/2 cups yellow cornmeal
1 tablespoon chili powder
3/4 teaspoon salt
3 tablespoons olive oil, divided
1 small onion, chopped
1 large red bell peppers or 1 large yellow bell pepper, diced
1 lb kabocha squash, peeled and cubed
15 ounces tomatoes, diced with chiles
1 teaspoon coriander
1 teaspoon ground cumin
1/2 teaspoon salt
15 ounces pinto beans, drained and rinsed
1 cup frozen corn kernels, thawed

Steps:

  • Topping:.
  • Whisk cornmeal, salt and chili powder with 4 1/2 cups water in double boiler. Cook 40 minutes or until thick and stiff stirring 3 to 4 times. Remove from heat.
  • Filling:.
  • Preheat to 375°F Heat 2 tbsp oil in saucepan over med. heat. Add onion and cook about 7 minutes or until softened. Stir often. Add the pepper and cook 5 minutes more.
  • Stir in squash, tomatoes, garlic, coriander, and cumin. Cook 5 minutes, stir occasionally. Stir in 1/2 cup water and salt. Bring to boil. Reduce heat to medium low and simmer, partially covered for 10 to 15 minutes or until squash is tender. Stir in beans and corn and cook 5 minutes or until slightly thickened, stir occasionally.
  • Coat a baking dish with spray. Spread 2 cups polenta over bottom of dish. Spoon mix inches Smooth remaining polenta over the top.
  • Score casserole into 6 squares with knife. Brush top with remaining oil. Bake 30 minutes or until headed through and top is lightly browned.

Matt Mead, the governor of Wyoming, recalls being taken out by his grandfather on the family ranch to shoot his first duck for Thanksgiving at age 9, when he was so small that his grandfather had to brace him from behind to help absorb the kick from the shotgun. Game is found on many Thanksgiving tables in the state, but other traditions predate the hunt. The trinity of corn, beans and squash was central to the agriculture of the Plains Indians in what would later become Wyoming, and some cooks honor that history each Thanksgiving with a dish called Three Sisters stew. The writer Pamela Sinclair's version is a highlight of her 2008 cookbook, "A Taste of Wyoming: Favorite Recipes From the Cowboy State." The stew works nicely as a rich side dish for turkey, and can easily be adapted to vegetarian tastes by omitting the pork and adding a pound of cubed butternut squash instead.

1 pound trimmed pork loin, cut into 1-inch cubes
1 teaspoon ground cumin
Kosher salt, as needed
Black pepper, as needed
2 tablespoons neutral oil, such as canola
1 large yellow onion, diced
3 garlic cloves, minced
4 cups turkey or chicken stock, preferably homemade or low-sodium
1 medium yellow squash, diced
1 (15-ounce) can pinto beans, drained
1 (15-ounce) can black beans, drained
1 (14 1/2-ounce) can chopped tomatoes
2 cups fresh or frozen corn kernels
1 (4-ounce) can roasted green chiles (1/2 cup)
1/2 bunch fresh cilantro, roughly chopped

Steps:

  • Season pork with cumin, salt and pepper. Heat oil in a Dutch oven or large heavy-bottomed saucepan over medium-high heat until it shimmers. Add pork, in batches if necessary, and cook, turning as needed, until lightly browned on all sides, 5 to 6 minutes. Transfer pork to a bowl and set aside.
  • Add onion to pan and sauté, stirring occasionally, until translucent, 5 to 7 minutes. Add garlic and sauté, stirring occasionally, until lightly colored, 2 to 3 minutes. Return pork to pan, along with stock and squash, and bring to a boil. Reduce heat to medium-low and simmer, covered, for about 30 minutes.
  • Add beans, tomatoes, corn and chiles and cook, uncovered, over medium heat until stew has thickened, about 40 minutes. Add cilantro and season to taste with salt and pepper.

"Three Sisters" refers to the Native American practice of growing beans, corn, and squash together. This casserole can also be made ahead and frozen, if desired. I've not yet tried this recipe, so as soon as I do I'll be back to modify the directions for a quicker cooking polenta.

  • Whisk together cornmeal, chili powder, and salt with 4.5 cups water in a large double boiler. Cook 40 minutes, or until polenta is thick and stiff, stirring 3 or 4 times. Remove from heat.
  • Filling:.
  • Preheat oven to 375°F Heat 1 tbs oil in large saucepan over medium heat. Add onions and cook until softened. Add bell pepper and cook 5 minutes more, stirring often.
  • Stir in squash, tomatoes, garlic, coriander, and cumin. Cook 5 minutes stirring occasionally. Add 1/2 cup water and some salt, bring mixture to a boil. Reduce heat and simmer, partially covered, for 10 to 15 minutes or until squash is tender. Stir in beans and corn and cook 2-3 minutes more, until slightly thickened.
  • Coat a 9x11 baking dish with cooking spray. Spread 2 cups of the polenta over the bottom of the dish. Spoon filling over the polenta. Smooth remaining polenta over the top.
  • Score the top of the casserole into 6 squares and brush the top with the remaining tablespoon of olive oil.
  • Bake 30 minutes, or until heated through and the top is lightly browned.

The American Indians in this region call corn, beans, and squash the 'Three Sisters' becasue, when planted together, the nourish eachother and protect eachother from garden pests. I reccomend Acorn or Pattypan squash. The squash in this recipe can, however be sustituted with potatoes. Still delicious!

Number Of Ingredients 5

1 (15 ounce) can black beans, drained
1 1/2 cups corn, shaved (Canned corn, drained or frozen corn will work as well.)
1 medium sized acorn squash
1 (7/8 ounce) packet gravy mix (Flavor of your choice)
1 cup shredded cheese

Steps:

  • Preheat oven to 375, grease a casserole dish with cooking oil (Olive oil is reccomended).
  • Slice squash to 1/4 cm. or desired thickness.
  • Line the bottom of the casserole dish with 1/2 of the squash slices, some overlapping.
  • Prepare gravy as instructed on package.
  • Pour gravy over squash slices.
  • Layer 1/2 of the cheese on top.
  • Layer the beans on top.
  • Layer the corn on top of the beans.
  • Add the remaining half of the squash slices,
  • Add the remaining cheese atop the casserole.
  • Bake 45 minute.
