JODIE'S 3C BREAD
I have been making this for many years. I started making them in coffee cans and vegetable cans to give as gifts and to send for gifts they are real handy when needing to ship in the mail or Fed-Ex or by UPS. What is real nice about baking in the cans is when you slice them is that they fit in the toaster perfectly or on a party tray beautifully. I love the 3C bread more so because I am not a big fruit cake person. Sometimes I add spiced rum for that special touch.

Steps:
- Preheat oven to 350* Stir together all dry ingredients. Combine eggs, oil, and milk. Add to dry ingredients, mix well. Stir in carrots, coconut, cherries, and nuts, pour into loaf pan or, coffee cans (2) or you can use vegetable cans (4-6) fill 1/2-3/4 full on cans bake 45-50 min....
- Cool for 10 min insert knife all the way around cans and shake to remove from cans. remove from loaf pan let cool completely wrap and store over night before slicing Makes 1 Loaf

Steps:
- In a large bowl, combine the first six ingredients.
- In a small bowl, combine the eggs, milk and oil.
- Stir into dry ingredients just until moistened.
- Fold in the carrots, coconut, cherries, raisins and pecans.
- Pour into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans.
- Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from pans to wire racks. Cover and store in the refrigerator. Yield: 4 mini loaves.

Steps:
- 1. Stir together flour, sugar, baking powder, baking soda, mace and salt.
- 2. Combine eggs, milk and oil. Stir well. Pour the liquid mixture into the dry ingredients.
- 3. Stir in Carrots, Coconut & chopped cherries
- 4. Pour into 9 X 5 X 3 loaf pan or 21 ounce pie filling cans.
- 5. Bake in 350 oven 1 - 1 1/4 hours
- 6. Cool in pan approx. 10 minutes. Remove from pan, let cool completely. Wrap and store overnight before slicing.

- In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

- The night before you want to bake the bread, stir together the flour, yeast and salt in a large mixing bowl. Add the warm water into the bowl and stir to combine until a loose, shaggy dough forms. Pack the dough into a bit of a ball, then cover the bowl tightly with saran wrap and leave on your counter for overnight (12-18 total hours of rise time), in a warmish place, away from any cool drafts.
- When the bread dough has risen to about double in size, it’s ready to bake. About 2 hours before you’re ready to bake, empty the dough onto a floured surface and use your hands to shape the dough into a smooth ball. Place the dough ball on to a piece of parchment, on top of a clean dish towel. Cover the ball gently with the towel, letting it sit like that until you’re ready to bake.
- 30 minutes before you’re ready to bake the bread, place a Dutch oven or a baking stone in the oven and preheat the oven to 450 F. After 30 minutes has passed, use oven mitts to remove the Dutch oven from the oven and carefully place the dough ball, in the parchment, into the vessel. You can slash a small cut through the top of the bread here, to allow steam to release.
- Place the lid on the Dutch oven then place it back into the oven, to bake for 30 minutes. After 30 minutes, remove the lid, and turn the oven down to 375. Bake for an additional 15 minutes.
