SAUSAGE TOMATO PASTA
This sausage tomato pasta recipe is a real family favorite. Serve it in large bowls with plenty of freshly shaved parmesan.

Steps:
- Remove sausage meat from casings and break into small pieces
- De-seed and chop all the tomatoes
- Heat oil in a large saucepan.
- Add the sausage and garlic and cook until the sausage is lightly browned. Break up the sausage pieces with a wooden spoon as you go.
- Add the wine and simmer until most of the wine has evaporated.
- Stir in the tomatoes. Add salt & pepper.
- Reduce the heat to very low and cook, stirring occasionally for 1 hour and 15-30 minutes, until the sauce is nice and thick.
- When the sauce is nearly ready, cook the pasta according to packet instructions.
- Tear the basil leaves into small pieces and stir through the sauce.
- Drain the pasta and stir the sauce through.
- Serve with plenty of Parmesan cheese on top.

CHUNKY SAUSAGE & TOMATO PASTA

Steps:
- Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
- Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
- While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
- Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

PASTA WITH MEAT SAUCE

- Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
- About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.
THICK TOMATO PASTA SAUCE WITH SAUSAGE AND MEAT
Steps:
- Mince the yellow onion. In a 5 quart sauce pan, heat the 2 tablespoons of the Olive oil saute onions and garlic, after tender but not brown add 1 lb of ground beef and 1 lb of ground sausage. After meat is browned, add all remaining ingredients. Simmer for at least two hours on low heat..Stir often. Sauce should be thick. If you prefer a less thickness add more water or wine to sauce at any point during the cooking. Serve over your favorite Pasta, Gnocchi , Tortellini or Ravioli.
SPAGHETTI WITH TOMATO AND SAUSAGE SAUCE

- Preheat oven to 350 degrees F (175 degrees C). Cook sausage for 30 minutes. Cut into bite sized pieces, and set aside.
- In a Dutch oven, saute onion and mushrooms in olive oil until tender. Remove with slotted spoon, and set aside. Stir into Dutch oven: tomato paste, tomato juice, Italian tomatoes, and wine. Stir until smooth. Mix in oregano, basil, parsley, garlic, garlic salt, and sugar. Return sausage and onion and mushroom saute to sauce. Bring to a boil. Reduce heat, and simmer for at least 3 hours. Cover pot if sauce becomes too thick.
- Cook pasta according to package directions. Drain. Serve sauce over pasta.

- Heat oil in heavy large pot over medium-high heat. Add sausages, onion, and garlic. Sauté until onion begins to color, about 10 minutes. Add crushed tomatoes and herbs and bring sauce to boil. As everyone knows by now, most of my recipes come from a "Taste of Home" recipe magazine. This is by far our favorite spaghetti sauce. It is so thick and meaty that sometimes my boys just pour it over a piece of garlic bread and eat it like that!

- Brown ground beef, season to taste with salt and pepper, drain and set aside.
- Cut link sausage up into meatball size pieces, brown, drain, and set aside. I use Thomasville Hot. If making sauce for lasagna, remove sausage from casings and brown with the ground beef.
- Sauté garlic, onion, and bell pepper in olive oil, just until the onions are translucent.
- Add meat, tomato sauce, tomato paste, diced tomatoes, herbs and spices, mushrooms, sugar, and wine. I use fresh mushrooms, and a red burgandy for a deeper earthy flavor. Omit mushrooms if making sauce for lasagna.
- Simmer on medium low for at least one hour, stirring occasionally.
- When ready to serve, mix corn starch with water and add to sauce, along with both cheeses to thicken.
- When cheese is incorporated, and sauce has thickened, serve over your choice of pasta or use as a meat filling for lasagna.
MIMI'S FANTASTIC THICK SPAGHETTI SAUCE
A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

- In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
- Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
- Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
- Add basil, brown sugar, salt, parsley, and black pepper and mix well.
- Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
- Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
- Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.
