This one is pretty quick and easy using alfredo sauce in a jar. You could always make your own (I usually do) but sometimes it's nice to be able to put dinner on the table fast.

1 (9 ounce) package refrigerated cheese
tortellini
2 cups fresh asparagus, cut in inch long pieces (about 1 lb.)
1 1/2 cups thin julienne strips ham
2 (10 ounce) containers low-fat alfredo sauce
2 tablespoons refrigerated pesto sauce
shredded parmesan cheese

Steps:

  • Cook tortellini in boiling water for 3 minutes. Add asparagus and cook for 2 minutes more. Drain well and add ham, Alfredo sauce and pesto to the pot. Cook over low heat for 2 to 3 minutes or until all ingredients are warmed. Serve with Parmesan cheese.

4 cups reduced-sodium chicken broth
2 garlic cloves, smashed
3 large thyme sprigs
2 (2- by 1-inch) strips lemon zest
1 (16-to 20-ounces) package refrigerated, frozen, or dried cheese tortellini
2 teaspoons cornstarch
2/3 cup heavy cream
1 bunch asparagus (3/4 pound), trimmed and thinly sliced diagonally
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Boil broth with garlic, thyme, zest, and 1/4 teaspoon pepper in a large heavy skillet until reduced to about 1 cup, about 6 minutes. Discard thyme sprigs and zest.
  • Meanwhile, cook tortellini in a pasta pot of boiling salted water (1 1/2 tablespoons salt for 4 quarts water) according to package directions. Drain.
  • Stir cornstarch into cream, then whisk into broth. Bring to a simmer, whisking, then continue to simmer 1 minute. Add asparagus and simmer until crisp-tender, about 2 minutes. Stir in cheese and tortellini and cook, gently stirring, until heated through.

1 (9 ounce) package refrigerated cheese tortellini
2 tablespoons butter
1 teaspoon fresh dill, finely chopped
1 teaspoon fresh rosemary, finely chopped
1 green onion, finely chopped, green parts only
1 large garlic clove, mnced
2 tablespoons creme fraiche
salt and pepper

Steps:

  • Cook tortellini according to package directions.
  • While the tortellini is boiling, heat the butter in a small skillet over medium low heat. When butter is almost fully melted, add the herbs, onion and garlic.
  • Continue to cook, stirring occasionally, for 2 minutes. You don't want it to sizzle, you are just warming them in the butter, so the low heat is important.
  • Put the creme fraiche in a serving bowl large enough to hold the tortellini. Add the warm butter herb mixture and stir to combine - it doesn't have to be stirred to a smooth consistency, the hot pasta will take care of that.
  • Drain the pasta and add to the serving bowl, mixing well to coat pasta. Season with salt and pepper to taste and serve.

1/4 cup plus 2 tablespoons water, divided
1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
1 package (20 ounces) refrigerated cheese tortellini
2 tablespoons all-purpose flour
1 can (10-1/2 ounces) condensed chicken broth, undiluted
1 medium sweet orange or yellow pepper
1 medium zucchini
1 medium yellow summer squash
3 tablespoons butter
3 green onions, chopped
3 garlic cloves, minced
1/2 cup freshly grated Parmesan cheese
1/4 teaspoon pepper
1/8 teaspoon salt
Additional freshly grated Parmesan cheese, optional

Steps:

  • In a large microwave-safe bowl, combine broccoli and 1/4 cup water; microwave, covered, on high for 2-3 minutes or until tender. Cool slightly; drain. Repeat with asparagus and remaining water., Cook tortellini according to package directions; drain. In a small bowl, whisk flour and broth until smooth., Cut orange pepper, zucchini and yellow squash into 1/4-in.-thick strips. In a large skillet, heat butter over medium heat. Add vegetable strips; cook and stir 6-8 minutes or just until crisp-tender. Add green onions and garlic; cook 1 minute longer. Stir broth mixture to combine; stir into vegetables. Bring to a boil. 20 ounces cheese-filled tortellini
1 lb asparagus
1/2 lb crisped crumbled cooked bacon
1 cup julienned ham
1 tablespoon olive oil
1 tablespoon butter
1/2 white onion, minced
4 -5 garlic cloves
1 tablespoon flour
1 cup half-and-half
3/4 cup chicken broth
1 teaspoon dried parsley
salt and pepper

Steps:

  • Heat oil and melt butter over medium high heat.
  • Add the onion and garlic and cook until onions are translucent.
  • Add the flour to make a rue, cook for about 2 minutes.
  • Add the half-and-half, chicken broth, parsley, salt, and pepper. Simmer until sauce thickens to desired consistency.
  • Cook tortellini according to package directions.
  • Cut asparagus into 2 inch pieces and steam.
  • Combine cream sauce, ham, bacon, asparagus, and tortellini. Serve immediately.

This is an amazing, creamy, savory pasta dish. NOT for those on a diet. The virginia sweet ham with the parmesan cheese make a great pair. You can substitute any flavor stuffed tortellini for the cheese that I use. I use the filled Buitoni tortellini in the refridgerated section.

530 g cheese tortellini

Steps:

  • Boil tortellini according to packages.
  • Melt butter in large high sided skillet over medium high heat.
  • Add ham to pan and cook through.
  • Add heavy whipping cream and heat for 7-8 minutes stirring regularly.
  • Sprinkle two dashes of nutmeg and add parmesan cheese and stir inches.
  • Reduce heat to low and cook for another 4-5 minutes.
  • Add drained tortellini to sauce before serving.
