1/3 cup red wine vinegar
1 1/2 tablespoons sugar
1 tablespoon Grey Poupon Dijon Mustard
2 teaspoons shallots, minced
1 teaspoon lemon juice
1/2 teaspoon dried thyme
1/4 teaspoon dried parsley
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper (freshly milled)
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
1/16 teaspoon onion powder

Steps:

  • Blend with a mixer on high for about a minute -- it should be creamy and thick in appearance.
  • Refrigerate for an hour or so before using.
  • Note: the onion powder quantity is actually a "dash".

1 (1 lb) box tri-colored pasta
2 cups chopped green peppers
2 cups diced tomatoes
1 1/2 cups chopped red onions
1/2 lb cubed provolone cheese (optional)
1/2 lb sliced pepperoni
1/2 cup sliced black olives
3/4 cup pompeian extra virgin olive oil
3/4 cup pompeian red wine vinegar (this brand is excellent in this dish)
1/4 cup sugar
1 tablespoon oregano
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix together dressing first and set aside until sugar is dissolved completely.
  • Cook pasta according to box directions and rinse under cold water until cool.
  • Slice the sliced pepperoni circles in half and separate slices.
  • Mix together with pasta and chopped items, except the provolone cheese.
  • Pour dressing over it all and mix well.
  • Chill well.
  • Add provolone cheese to salad before serving, otherwise it gets soggy.
  • You may have to add extra red wine vinegar or olive oil to get it to the desired consistency.
  • Some people like it moist, others on the drier side.
  • This is guaranteed not to last long before it is completely devoured!
  • Enjoy!

Top this with extra fresh chopped herbs if you like.

3 tablespoons Dijon mustard
¼ cup cider vinegar
¼ cup rice vinegar
1 teaspoon kosher salt
2 teaspoons white sugar
1 pinch cayenne pepper
1 cup olive oil
2 teaspoons chopped fresh tarragon
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh Italian parsley
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh thyme
1 pound rotini (corkscrew) pasta
1 cup sliced snow peas
1 cup thinly sliced carrots
½ cup shelled English peas
1 cup broccoli florets
½ cup diced bell peppers
1 cup sliced cherry tomatoes
¼ cup finely diced red onion
2 tablespoons sliced green onions
1 teaspoon kosher salt, or to taste

Steps:

  • Whisk Dijon mustard, cider vinegar, rice vinegar, salt, sugar, and cayenne together in a large bowl for about 30 seconds. Whisk in olive oil in 1-teaspoon increments until emulsified. Whisk in tarragon, dill, parsley, chives, and thyme. Remove and reserve 1/2 of the dressing in a separate small bowl.
  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Add snow peas, carrots, peas, and broccoli about 2 minutes before the pasta is done. Drain pasta and veggies well, but do not rinse.
  • Transfer hot pasta mixture to the vinaigrette in the large mixing bowl and toss well to combine. Let rest for 5 minutes and toss again. Toss occasionally until the mixture is almost room temperature, 15 to 20 minutes.
  • Add bell peppers, cherry tomatoes, red onion, green onions, salt, and the reserved dressing and toss well.
  • Wrap and chill in the refrigerator for 3 to 4 hours before serving. Toss and adjust seasoning before serving.

  • Orange-Honey Vinaigrette. I love this dressing because it’s so simple: just orange juice, honey, olive oil, mustard powder (or Dijon), vinegar, salt and pepper!
  • Pesto Dressing. Pesto is typically made out of fresh basil leaves, pine nuts (or walnuts), parmesan cheese, salt/pepper/olive oil/butter and garlic powder/onion powder—you get the idea!
  • Honey-Mustard Dressing. This dressing is a great way to add a little sweetness and spice to your salad. It’s also an excellent way to enjoy the flavors of honey and mustard, which are two of my favorite ingredients.
  • Avocado Ranch Dressing. If you’re looking for a creamy dressing for your meal, this is the one for you. Avocado Ranch Dressing contains all the good stuff: avocado, ranch, sour cream, lemon juice, garlic powder, onion powder and cilantro.
  • Raspberry Vinaigrette. This vinaigrette is perfect for adding a hint of sweetness and tartness to any dish! It works particularly well on salads because it has a nice balance between sweet and sour flavors that really complements the natural flavors in fruits like raspberries (or even stone fruits like peaches!).
